    Recipe:
    ------------------------
    Step 1: Indian Chicken 65
    Ingredients
    * 1 lb boneless skinless chicken thighs, cut into chunks
    * 1 ½ tsp kashmiri chili powder
    * 1 tsp coriander
    * ½ tsp ginger garlic
    * ½ tsp ground fennel
    * ½ tsp turmeric
    * ¼ tsp msg
    * ¼ tsp black pepper
    * 1 Tbsp lemon juice
    * Red food dye?
    * ¼ cup corn starch
    * 1 egg
    * ½ tsp salt
    * Veg oil
    * 1 sliced serrano chili
    * ½ sliced onion
    * 1 thin sliced garlic clove
    * 6 curry leaves
    * Thin sliced raw red onion & lime wedges for garnish
    1) Whisk all the marinade ingredients together then add chicken bits. Let sit for a few hours for best results.
    2) Heat 1 inch of vegetable oil to 350 degrees and fry chicken being careful not to overcrowd the pan for about 4 minutes, until crispy.
    3) Remove chicken and let drain.
    4) Fry garlic, onions, chilies, and curry leaves for about 1 minute until toasty, then pour on the chicken.
    5) Garnish with lime wedges and raw onion.
    Equipment
    * 1 large mixing bowl
    * Whisk
    * 1 cast iron pan
    * 1 sautee pan
    * Slotted spoon
    * Paper towels
    Step 2: West African Fried Chicken
    Ingredients
    * 2 wings
    * 2 thighs
    * 2 drumsticks
    * 2 tsp grated ginger
    * 3 cloves garlic
    * ¼ onion
    * 1 tsp thyme leaves
    * 1 tsp curry powder
    * 1 serrano pepper
    * 1 bouillon cube
    * Salt and pepper
    * Vegetable oil for frying
    1) Blend all the ingredients except for the chicken then pour into a medium stock pot. Add 1 cup of water and bring to a boil. Cover the chicken with a lid and let simmer for 15 minutes until cooked through.
    2) Remove chicken and allow it to cool. Heat 1 inch of vegetable oil on high until it reaches 400 degrees in a cast iron skillet, then add the chicken pieces in.
    3) Turn constantly until golden brown, then remove and drain.
    Equipment
    * Vitamix
    * 1 mixing bowl
    * Large sauce pot
    * Tongs
    * Cast iron skillet with veg oil
    * Draining rack
    Step 3: Honduran Pollo Chuco
    * 2 thigh
    * 2 leg
    * 2 wing
    * 2 Tbsp lemon juice
    * 1 Tbsp mustard
    * 1 tsp ground oregano
    * 1 tsp chicken bouillon
    * ½ tsp cumin
    * ¼ tsp black pepper
    * 2 cups flour (seasoned with chicken bouillon, oregano, black pepper, cumin, salt)
    * 3 unripe plantains
    * 1 squeeze bottle creamy sauce (mayo, crema, ketchup, mustard)
    * 1 squeeze bottle red sauce (any thin red hot sauce tbh. Canned Enchilada sauce?)
    * 1 jar pickled red onions w/ beet juice
    * 1 bowl pico de gallo + finely diced radish
    * 1 bowl coleslaw (vinegar, no mayo)
    1) Marinade the chicken in lemon juice, mustard, and spices. Dredge in flour and fry.
    2) Peel the plantains then fry in the same oil as the chicken.
    3) Add chicken to a base of fried plantains

      He makes a good point. I read the same article, and it makes a lot of sense. My experience with marinades is just burning a lot of marinade. It's not great, but it might be my technique. I prefer dry seasoning +pan sauce, generally.

Like the mentioned SMOSH trivia show, he not only knew all of the answers, but he knew everyone's names, the names of chemical compounds, the exact origin story for many foods, and a bunch of other facts about the food they were talking about.     OMG! I am so excited my country Honduras is featured! Pollo chuco is the best, and Josh did a wonderful job! It looked so good. I would say tho, this is commonly made with Guineo verde (green banana) instead of Plantain. Also, Pollo Chuco is originated from San Pedro Sula! There is actually a rivarly between San Pedro and Tegus on how do we call certain dishes or foods, and this is one of them. Us, Sampedranos, calling pollo con tajadas Pollo chuco, and capitalinos(tegus) critizicing us for calling it that way 🤣

      You right. From San Pedro Sula but I'm from tegus and I call it pollo chuco and so does some youtubers I've seen from tegus . And let's be real is not just tegus . San Pedro also don't like tegus. Is both. Not just one . And also is not all just some people who like to hate and blame others. But the truth is both tegus and San Pedro git people who hates the other. But not all them. I don't have a problem with sanpedranos. Pollo chucho is definitely 🔥 👌 💯

    One of my favourite things about the mythical kitchen is that it's inclusive of other culture's cuisine. If it tastes good it's on there. As a filipino, it's a joy hearing them talk about filipino food on the channel and on the podcast. Plus I get to learn about food in other places! Also they're always trying new stuff it never gets boring.

      Josh is an impressive foodie because no food out there is too weird for him to try. Making a salsa with some interesting bugs? He's totally down for that and will be sneaking some bugs to snack on during the process. It's rare to find people willing to try some of the less western palate appropriate foodstuffs like offal, blood, and insects. Andrew Zimmern is another fantastic travel foodie with a bunch of television series under his belt. It's always exciting to learn about other cultures' cuisine and see what people eat and learn what the flavors are and why its so enjoyable, even if you can't experience it first-hand. At least you'll walk away with some knowledge and maybe a fun recipe to try in the future.

      I wish I had known that years ago. I briefly lived outside of Louisville and struggled to find any locally owned restaurants. Everything in my area was corporate. The exceptions were a couple of Chinese restaurants and a German restaurant.

    As a south indian, who's lived in Chennai (and being a native of Kerala) , I can attest to the fact that Chicken 65 is one of the best kind of fried chicken you can have! And Josh you nailed it , esp emphasising on the ginger garlic paste, it's basically our secret sauce!

      Asian food in general, Indian food included, are basically food-based magic tricks. So many recipes defy western culinary norms and turn out amazingly because of it. Truly magical in my book.

    Chicken 65 has a lot of folk tales about its name, from that it takes 65 attempts to get it right to using 65 ingredients. From what I’ve heard though, the origin is that it’s the most popular item on the menu at the place Josh mentioned, and it happens to be the 65th item on the menu.

    Poland actually uses both Knorr and Maggi, we just divide it between dry bulion cubes (Knorr) and an extremely salty and dark bulion reduction, which is fully liquid btw (Maggi) and I used to eat both of those straight from the packaging because I had a potassium deficiency as a kid. Also polish people add Maggi to everything basically and it's delicious

    This is possibly my favorite episode of Mythical Kitchen of all time. This was extremely enjoyable and brought together my favorite parts of this show, with exploration, genuine understanding of food and it's culture, excitement for trying something new, and Josh being an absolute gem of a content creator.     One of my best food memories from India was sitting on a roof top terrace in Jaisalmer, looking at the 12th century fort, eating delicious curries and drinking Kingfisher beer. Heaven.

Thank you so much for bringing up the marinade controversy, it has been on my mind since hearing you say it and my world was rocked; here is Josh one of my favorite chef content creators dropping a bomb on my culinary universe and leaving my not knowing what to believe. I'm so glad you brought it up because now I can finally sleep again without having those recurring nightmares of being marinated in miso paste, rice, wine and then 4-24 hour later the lid being removed to reveal your face starring down at me with disdain before uttering the words "marinating doesn't do anything"

    It's wild to me that scotch bonnets aren't readily available in California. I live in a very very white suburb in England and my local small Tesco (Tesco Local or whatever they call their smallest shops) has them. They rarely have anything useful or good, but I can pretty reliably get scotch bonnets and at least a couple other varieties (typically birds eye and generic "red")
    On another note, how good is Josh that when he's apologising for saying ignorant crap, it's to do with marinating food.

      @@recoil53 "We" invaded in the 1600s (Spain got there before us, wiped out the indiginous population and stole people from Africa to work as slave labourers) and they gained independence in the 1960s.
      Other caribbean ingredients aren't typically available in small shops like that though. In some neighborhoods with large caribbean populations you can get all kinds of good stuff in independent family run places, but where I live people still think pizza is a touch too exotic.

    as a Honduran I was extremely pleased with your representation of our traditional dish we call "pollo chuco con tajadas". cant wait to try that sauce you made, never could figure out what it was they put in it. always that it was spicy crema lol. just make sure if you ever visit Honduras, stay with in the resorts. San Pedro Sula and Tegus is really dangerous.

    Another prevalent theory about Chicken 65 is that it was the 65th menu item of the hotel where it originated from and they were tired of naming each and every dish and just decided to name it Chicken 65 😂😂

    I’ve only tried Chicken 65 once and I wasn’t a huge fan, but I think I’ll try it again. Also, I ate almost exclusively fried chicken when I spent 3 months in Ghana. It was so good. I’d love to see Josh cook more West African cuisine!

    We use both Knorr and Maggi in Honduras. My family used cubitos maggi, and i grew up eating sopa maggi as well.

    I love Josh! One of the most genuine and knowledgeable people on RUclips. He makes himself out to be dumb but he's a real scholar of food and cuisine and that always shows. 2 things I would love to see : 1. Middle Eastern/ Arab cuisine. In my (very biased) opinion, it's the best food on earth. And 2: I would love to see him share the food he makes with others (and not the spork gag), you here people laughing and helping but usually he eats it alone. Why not sit and have a meal with friends, everybody can give their input. Keep making great videos. Much love from Israel
