    I tried this recipe as well. My husband is always talking about good cornbread and nothing I tried lived up to what he'd had...until this. He loved it. He did want it plain though so I dropped the cheese and jalapeno and added 1 tsp salt rather than half. Thanks again.

    My southern family made this when we had fresh corn from the garden, it was called “ gritty bread”. Wonderful memories!

    This recipe is similar to one I have been making for many years. It's called Mexican Cornbread or Tex-Mex Cornbread. I have used the food processor to make a creamy style corn, but usually opt for a canned cream corn. It has been a while since I made it, and your finished cornbread made my mouth water. Yum!!

    Looks Good! I've been making cornbread using creamed corn for over 40 years. I like bacon grease in the heated skillet instead of butter. It's also good using real maple syrup.

    I made your cornbread today and I can tell, fantastic. I did my modification and I think even better! I put some fennel seeds, dry rosemary, kefir instead of milk and cherry tomatoes instead of jalapenos. I love them but my mother is not used to spicy food! Instead of all-purpose flour I used tapioca starch I also baked on a loaf tin! Omg lots of modifications but one thing I guaranty. The best ever cornbread that I had! Thank you for this gorgeous recipe.

    I'll give your recipe a try. I've made many. Primarily in the southern US we make it without sugar 1/2 ratio of flour and corn meal, but I like honey in the batter when I want it sweet. Its a tradition to eat leftovers broken up in a glass of milk/or buttermilk. My grandmother ate it every night as a snack. I think you might love spoon bread for a sweet pudding style bread.

    I love a sweet cornbread. I love that you made it in a cast iron skillet; it really makes it the best! I've never had it with mix-ins. Very interesting. I look forward to trying it!

    Good day Gemma, Once again I made this "now famous" cornbread. It was for a party at my friend's house and we were about 50 people. I made 5 of them, three with jalapeno and two without. I turned out it was a success, I had a lot of good comments about it and everyone loved it. Thanks again for this great recipe, it is to me the Best-Ever cornbread.     Hi Gemma, I've been looking around for a good moist and tasty corn bread and I think I found it. I made this corn bread last weekend and it came out delicious. I love the texture and the taste. I cut a bit on jalapenos and this will become my new recipe, my wife loved it too. Thank you for putting out those good recipes.

    Hi Gemma,
    Greetings from Mumbai, India. I made it with a lot of change in the ingredients (No Eggs, No Honey, Bhavnagri Peppers for Jalapeno, Wheat Flour for All purpose flour, Corn Flour for Corn Meal) based on stuff available to me. Trust me I nailed it and it turned out to be amazing. The mashed corn turned out to be the secret. Keep sharing such amazing recipes. Cheers.

    I’ve never had cornbread but always been curious...today I had to buy cornmeal for another recipe and thought let’s give this a go...of course I searched for My queen Gemmas recipes ❣️ and I was so happy when I saw I had all the ingredients! 😚
    I added spring onions as you suggested and oh wow it was sooooo good!! 😋😋
    I don’t have a skillet but baked it in a normal cake tin, doing the butter thing first to preheat before I added the actual batter.
    Just too good!!! Truly is a “best ever recipe!”
    We need more in this series! I’ve almost made all of them now! 😘

    Love the recipe Gemma! Never thought about adding blended corn in cornbread! But do you have any substitution for he cornmeal (like maybe regular flour and adding more real corn) or else I cant make this awesomeness! Thanks

      Unfortunately, no sub for cornmeal. But you can give it a go with plain flour and let me know how that goes. Cornmeal is the foundation of this recipe really.

    Grew up in Nashville and this recipe is similar to the one my family uses! :-D We use salted butter for the skillet and it makes the BEST crust!

    I'm really looking forward to your new healthy recipes. You are so creative and have a special talent for finding a way to make manufactured food from scratch using just ordinary ingredients without the artificial colors, chemicals or preservatives. I can't wait to see what you do next. Thanks for listening to us and going more "natural" with the ingredients.     I'm from the deep south and we have never been a fan of sweet cornbread. We call this recipe Mexican cornbread but there is no honey in ours. I think I will try it - sounds delicious.

      Bigger Bolder Baking it is a buttermilk cornbread with cornmeal, flour, egg and oil. We also make the Mexican cornbread (my hubby's fav). My mom use to make a savory cornbread with zucchini but unfortunately I cannot find her recipe nor have I seen one online. They are mostly sweet - hers was savory. Can you create one?

    I like cornbread and the sweetness of the honey. I would like to try adding green onion and bacon as well. However, it's either gonna be sweet or savory, but I don't see onion and bacon paired up with honey. NO WAY. Trying the sweet version tonight.

    Good afternoon Gemma here in Brazil, I make corn with a crushed stone mill, it gets so foppy and it grows, delicious to eat with cold and butter, it has another broa with common faba but mitura the cassava made of cassava, also good I love corn I love everything tamales, tamales, everything dumplings, I'm going to make this cake sorry for writing a lot. I make a lot of your recipes.

    I had corn bread this morning but not as yummy looking as this😄 I liked the trick you did with the corn kernels👍. Really haven't seen anyone do it like that before😋😍

    Use buttermilk always. Leave out the flour. Add smoking hot oil to the mix. Leave some oil in the skillet and pour mixture back in hot skillet . Bake at 400 until edges are brown then turn on broil to Brown top.. so very good.

    I never made cornbread because it's always dry when other people make it but this recipe looks like I can do this and it looks delicious too. The eggs I will substitute with flax but have you made it with the flax water? Does it taste okay or does it change the taste completely?

      It should not change the taste completely, but, of course, it will be different from using real eggs.

    Gemma,Your best ever cornbread looks so good and tasty,I am going to attempt to make it at home soon but without the green chillies in it because I don't like spiciness only very mild spice.Can I leave our the green chillies and put something in your recipe?

    corn bread was the first thing I ever baked/cooked.
    they were called corn pies but were basically meant to be just corn bread in muffin tin
    I made them when I was about 7 hehe and the result wasn't right at all, mostly because I used canned sweet corn hah but 7 year old me actually liked them
    I can't wait to make corn bread again! This time following my favorite pastry chef's recipe and not one from Baby TV channel 😁

    Hi🤗I like to try the cornbread but can we bake it in a microwave or on a stove?? I think it's very good, Gemma!

      I haven't tried on the stove but if I'm experimenting, I would cover it with foil halfway though the cooking time. Yes, you can cook this in a microwave. I suggest you use a ceramic dish.
