Good easy to use recipe but I found that 1 cup of flour was not quite enough. I needed a fuller crust especially on the bottom of the pie. 1.5 or 2 cups may be better and that is what I will have next time. Still, the pie did taste very good.
@@jhk5 some say toMAYto, some say toMAHto ~ to each his/her own ;) As for the cake/pie, while I found that 1 cup of flour was not enough, it may well be that this little problem was because I use gluten free rice flour. This does not get the same rise as does wheat flour. Does not have quite the same taste but am GF by necessity due to intestinal disorder.
@@TheCooknShare perhaps it was the chunks of fresh pineapple that kept the moisture throughout the cake. I left it in for much longer. It was not as “done” or stable as yours, but it tasted fine in the end. Maybe next time I will add a touch more flour. Thank you for responding. I appreciate it.

Wheat flour has a funny smell and taste. The texture of the cake is not that soft as with all-purpose flour.
