BTW, if you don't have buttermilk on hand you can make your own by stirring in about a tablespoon of lemon juice per 1 cup milk. Let it sit for about 10 minutes and you have buttermilk.

This has become a go to recipe and so easy to change up, I've already done an apple and cinnamon variation and just this morning I did a chocolate banana variation...simply swapped the pineapple for banana and the coconut for cocoa

Try adding a generous amount of lemon zest to the batter and you will never go back.. I always make this cake and I if I don't have lemons, I won't make it.. the zest will diminish the sweetness of the crust and goes well with the taste of pinapples
I made this last night with a pineapple that was looking a little too ripe. 🤣 I blended a few pieces of pineapple down then added sugar & cooked on stove on med/low for bout 30 min. it till it made a thick sauces. When I flipped the cake I poured it over it. This dessert was amazing. Served it with vanilla ice cream. The cast iron I didn't think would work so well- but surprise. Everyone loved it- a real keeper! Thank you for this one.

Wow! Do you sell them on your own or for a shop, if you don't mind me asking? I'm just curious. I've always had a fantasy of baking and selling desserts. That sounds silly because that's what bake shops do but I've never been to a bakery that sold anything really, really good. I'm sure it's more economical to use the same base for a lot of different desserts or something like that.

What a nice way to make pineapple upside down cake. I like the fact that you used fresh pineapple instead of canned. I also like that you added coconut to the cake batter. Actually if you put a little rum flavoring or even rum itself in the cake batter or the caramel sauce, you could call it a piña colada upside down cake! My husband is requesting one of his favorites cakes so I think I will try your recipe. Thank you very much.
Hi Ana, Happy New Year 2024. So many variations of this cake. I’m making it tomorrow for my daughter’s birthday but not in a cast iron skillet but in a spring form pan. I don’t get it with the amount of eggs to use. Some bakers use 2 eggs and you use 3. The flour amount is the same with most of these recipes. Only thing different is coconut flakes. The scary part is flipping it over without sticking. Some chefs say cool it 10-15 minutes and not to let it sit too long as caramelized brown sugar will harden. You say 1/2 hour. If I follow your method which I will, resting for 1/2 hour before flipping over will it come out easily? Thank you.

Hi Anna, Thanks for such an amazing recipe! The cake turned out amazingly good! I have a question though and need your help. I tried this recipe and since I didn't have ready to use butter milk, I substituted it with 3/4th cup room temperature milk and 3/4th tbsp vinegar mix, after it curdled. I did not have sweetened coconut flakes too, so skipped them. The cake batter was not as thick as yours and it was quite liquidy. It took about 60 mins to bake and the top part while baking still required more baking.. I feel all this was because the batter wasn't as thick as yours. Could you plz correct me whr I cud be wrong..plz help. Thanks Kriti

I made this for the first time today and let me tell you something. I don't like eating pineapple by itself, it makes my throat scratchy but this cake is the best fruit cake I've ever had. The pineapple was juicy and sweet, the caramel😍 omg, and the cake itself was soft, fluffy and delicious. I like pineapple on pizza, if you like pineapple on pizza, you'll LOVE pineapple on cake. Man, this recipe was quite easy to follow as a first timer. If you're still thinking about making it, just do it... Do it now. Tomorrow morning I'm definitely going to the supermarket to buy more pineapples. Enjoy your upside down pineapple cake😘

Just tasted the cake! Another success from oh yum...... I replaced the pineapple with half clémentines, (with Covid, we can’t go out much....) we had it warm, and now it’s cooled down, I just tasted a tiny weenie big bit again.....how lovely..... 😋 when we have another bit later, I will make a cognac syrup to go with it! ( being french).....
My daughter-in-law is gluten free and she cannot eat chicken eggs, but she can eat duck eggs so I made a gluten-free pineapple upside down cake with your recipe and instead of using buttermilk I used full fat coconut milk, omitted the oil and I used a dairy, free, gluten, free, margarine and rice flour. It turned out beautifully.
I would've never thought of the lemon juice juice or the ladle! Great to know. Thank you. One of my favorite cakes to eat but I've been baking it for 20+ years and it never, not once, has turned out as good as my mothers and I'm not being picky. I have hopes for this recipe, though. 👍🏼

Good tip. I like to add a little lemon or orange zest to cake batter. I don't know how much difference it makes but doing so makes me happy.
