    Ingredients
    Fruit Base
    ¼ cup (60 g) unsalted butter
    ⅔ cup (140 g) packed dark brown sugar
    2 tsp (10 ml) lemon juice
    5-6 slices tinned, or 4-5 fresh pineapple rings
    Cake
    ¾ cup (175 ml) buttermilk
    ⅓ cup (80 ml) vegetable oil
    3 large eggs
    1 tsp (5 ml) vanilla extract
    1 ½ cup (225 g) all-purpose flour
    ¾ cup (150 g) sugar
    1 tsp (3 g) baking powder
    ½ tsp (2 g) salt
    ¼ tsp (1 g) baking soda
    ⅒ tsp (less than 1 g) ground nutmeg
    ½ cup (50 g) sweetened flaked coconut
    Fruit Base Cake Assembly
    1. Preheat the oven to 350 F (175 C).
    2. Place a 9-inch ovenproof skillet on a burner on medium heat. Melt the butter and brown sugar, stirring until melted and bubbling. Stir in the lemon juice, then remove the pan from the heat. Arrange the pineapple slices in this syrup so they are close together but not overlapping. Set aside.
    3. In a large bowl, whisk the buttermilk, oil, eggs and vanilla. In a separate bowl, sift the flour, sugar, baking powder, salt, baking soda and nutmeg. Add this to the buttermilk mixture and whisk until just blended. Stir in coconut. Pour the batter over the pineapple slowly (so as not to shift the fruit). Bake the cake for 30-35 minutes, until a tester inserted in the centre of the cake comes out clean. If using fresh pineapple, the cake may need an extra 5-10 minutes baking time. Let the cake cool for 30 minutes in the pan. Place a serving plate over the cake and invert the pan, lifting it to reveal the pineapple now on top. Serve warm or at room temperature.

    My Dad grew up in the 1930's and 1940's and this was his favorite cake. My grandmother used to make this cake in an old black cast iron pan and she taught me how to make the cake. I am wondering why there isn't a cherry in the middle of each pineapple ring as this was everyone's favorite part of the cake?

    I made this tonight but substituted 3 fresh sliced pears for the pineapple. (Almost any fruit would be yummy.) It's the best upside-down cake recipe ever. Using oil instead of butter in the batter really makes a difference. I also tossed some pecans on top of the pears because my family likes a little crunch in their desserts. BTW, if you don't have buttermilk on hand you can make your own by stirring in about a tablespoon of lemon juice per 1 cup milk. Let it sit for about 10 minutes and you have buttermilk.

      This is an old way of baking cakes & cornbreads (biscuits too I think) from colonial times. Probably before then.

    Try adding a generous amount of lemon zest to the batter and you will never go back.. I always make this cake and I if I don't have lemons, I won't make it.. the zest will diminish the sweetness of the crust and goes well with the taste of pinapples

      Good tip. I like to add a little lemon or orange zest to cake batter. I don't know how much difference it makes but doing so makes me happy.

      @@aishak1199 One small lemon should do it. I wouldn't add more than a teaspoon or so of zest for a cake this size.

      Wow! Do you sell them on your own or for a shop, if you don't mind me asking? I'm just curious. I've always had a fantasy of baking and selling desserts. That sounds silly because that's what bake shops do but I've never been to a bakery that sold anything really, really good. I'm sure it's more economical to use the same base for a lot of different desserts or something like that.

    Hi Anna,
    Thanks for such an amazing recipe! The cake turned out amazingly good!
    I have a question though and need your help. I tried this recipe and since I didn't have ready to use butter milk, I substituted it with 3/4th cup room temperature milk and 3/4th tbsp vinegar mix, after it curdled. I did not have sweetened coconut flakes too, so skipped them. The cake batter was not as thick as yours and it was quite liquidy. It took about 60 mins to bake and the top part while baking still required more baking.. I feel all this was because the batter wasn't as thick as yours.
    Could you plz correct me whr I cud be wrong..plz help.

    Hi Ana, Happy New Year 2024. So many variations of this cake. I’m making it tomorrow for my daughter’s birthday but not in a cast iron skillet but in a spring form pan. I don’t get it with the amount of eggs to use. Some bakers use 2 eggs and you use 3. The flour amount is the same with most of these recipes. Only thing different is coconut flakes. The scary part is flipping it over without sticking. Some chefs say cool it 10-15 minutes and not to let it sit too long as caramelized brown sugar will harden. You say 1/2 hour. If I follow your method which I will, resting for 1/2 hour before flipping over will it come out easily? Thank you.

    This has become a go to recipe and so easy to change up, I've already done an apple and cinnamon variation and just this morning I did a chocolate banana variation...simply swapped the pineapple for banana and the coconut for cocoa

    I put brown sugar in a nonstick pan one time. It ruined the nonstick. Scratched it badly. It does however polish my stainless steel pans nicely. I've never seen anyone measure flour that way. lol

    You DO NOT need sweetened flaked coconut. Unsweetened flaked coconut works fine.

    Just tasted the cake! Another success from oh yum...... I replaced the pineapple with half clémentines, (with Covid, we can’t go out much....)
    we had it warm, and now it’s cooled down, I just tasted a tiny weenie big bit again.....how lovely..... 😋 when we have another bit later, I will make a cognac syrup to go with it! ( being french).....

    So many issues with this recipe. I used a 12" cast iron skillet and the measurements for the sauce were not enough to even cover the bottom of the skillet. I doubled the recipe and it was enough to cover the skillet. I removed it from heat and let it sit while I made the cake batter. Somehow, even away from heat, the sauce burned. And since it's basically glue, my cast iron skillet is garbage because I can't get the sauce out. THANKS FOR NOTHING.

      For every cup (250 mL) of milk add 1 tablespoon of lemon juice. Let it sit for a few minutes then stir it up. It may curdle a bit but that's okay

    Ooo and ours is also just good ol sponge, for ever two oz flour, sugar, butter, one egg. So say you wanted a Vicky sponge, 8oz flour, 8oz sugar, 8oz butter, 4 eggs. Beat the sugar and butter until light creamy and pale, beet in the eggs one at a time and fold in the flour. 30mins 160c voila. The time does depend on the shape and size of the cake tho. If you want it upside down butter a glass/ ceramic dish add golden syrup lots and lots! Then pineapple, then the cake mix. But that’s how we do in the UK 😂

    I made this last night with a pineapple that was looking a little too ripe. 🤣
    I blended a few pieces of pineapple down then added sugar & cooked on stove on med/low for bout 30 min. it till it made a thick sauces. When I flipped the cake I poured it over it.
    This dessert was amazing. Served it with vanilla ice cream. The cast iron I didn't think would work so well- but surprise. Everyone loved it- a real keeper!

    It's in the oven now. And now I am facing the longest hour in a long time (baking + cooling). Will add a note on how it turned out. By the way, I replaced 1/2 cup of all purpose flour with 1/2 cup of wholegrain spelt flour. Wonder how it will work.

    This is one of my favorites though.
    May I know,..why do you use oil instead of butter?
    I just can compare the taste of butter with any other kind of oil.
    Can I use butter?

    This looks amazing. In Germany we only know this cake from American Sitcoms like Desperate Housewives, you can also find this on Baking Websites, but it is not often done here. So I was watching your video and I am impressed be the easy way it is made and it looks so delicious 😋

      sorry about that, its been updated with recipe ingredients and baking guide. Every new upload has them but some of the older videos need updating.

    Try to do only half a batter.
    Otherwise, it's too much bread.
    I did it with half a recipe.
    Plus, it's extra sweet. I used 45 grams of sugar.

    My daughter-in-law is gluten free and she cannot eat chicken eggs, but she can eat duck eggs so I made a gluten-free pineapple upside down cake with your recipe and instead of using buttermilk I used full fat coconut milk, omitted the oil and I used a dairy, free, gluten, free, margarine and rice flour. It turned out beautifully.
