I’ve made this cake for years and it’s a VERY forgiving recipe! Sometimes (not very often, but sometimes!) I separate the eggs, add the egg yolks and then whips the egg whites to soft peaks and work them into the at the end - it makes for a very light, delicious crumb and the cake rises so beautifully! Sometimes I use a little pineapple juice from the can instead milk/water - a couple tablespoonfuls do the trick! - and the cake has a lovely pineapple’y taste to it. Sometimes if I don’t have maraschino cherries, I’ll put pecan halves in the pineapple ring, and it comes out so pretty! Sometimes I serve with with whipped cream, sometimes with ice cream, but either way, it’s fabulous! Don’t forget to make a pot of coffee and everyone will love coming to YOUR house for cake and coffee after you’ve all been out for an event! You just can’t go wrong adding pineapple upside down cake to your “dessert repertoire” - it’s easy, quick, makes a pretty presentation, and like I said.... so many lovely options!

Some notes from my mom: Add melted butter to pan and wait for it to partly cool, this allows you to evenly coat the sides with brown sugar as well; for maraschino cherries always cut them in half; for every half pineapple ring on the sides, add another half ring upside-down directly next to it; only place cherry halves in the center of pineapple rings; replace the milk with 1/2 Half 'n Half and 1/2 pineapple juice.

@@jonathanstrait58 so we always used boxed mix growing up. So just replaced the water in the recipe directions for the pineapple juice. Same amount. I think it definitely gives it more flavor 😊

I have never baked a cake in my life and this came out perfect! I was nervous about the melted sugar ruining the cake like some of the comments stated but then I remembered that the sugar will harden. I let the cake cool for 15 minutes as instructed and guess what no melted sugar issue when I flipped the cake! It was perfect. So for those of you who are new to baking like myself jus' follow his instructions and you will be fine. And remember, the sugar on the "top" of the cake will melt while it's baking but it will harden after you take it out of the oven, jus' leave it to sit for about 15 minutes but don't let it sit too long in the pan or it may stick to the pan. Oh and I did include a little of the pineapple juice like some of the comments suggested, about 3 tablespoons.
Cream enough brown sugar and butter to spread about 1/8" thick on 8 slices of white bread. Butter an 8" pie plate if you wish. Cut pie-shaped wedges from each slice of bread. Crumb the edges into the pie plate. Cover with small can of drained crushed pineapple. Put pie-shaped bread on top, buttered side up. BAke in a 359 F oven until topping bubbles. Cool and serve with ice cream or whipped cream. Mom did this one evening when she needed an unexpected dessert. Really good.
I made it tonight. My husband was so impressed. A crowd pleaser for sure. I used ripe pineapple. Took 55 minutes to bake but it is heavenly good!!!!! I can’t stop eating it and that is the bad part about it. Thank you 🙏

I made this and I saved the juice back so I could use it in place of the milk but Zzthe measuring cup was knocked over accidently because I'm clumsy so I ended using milk. That won't happen next time.

Hohn love the content made this recipe didnt have sour creme but i substituted pineaple juice and it came out great! Also bought some oversized tweezers i think you would like them(super useful for decorating) they come in copper color too !

It's always interesting so see that you (and all the American cooking channels I follow) mix up the wet and the dry ingredients separately. Over here, we would mix the butter until it's fluffy, then add sugar and vanilla sugar (no such thing as vanilla essence over here) - mix - then the eggs - mix and then the flour, baking soda and salt.
That was my Dad’s favorite cake, my Aunt makes it every year on his birthday in his memory. He would say the exact same thing “it melts in your mouth”, 😢💕
@@wynn8591 You're absolutely correct, butter is dairy. My recipe actually calls for vegetable oil, but I've always used melted butter instead. The mix itself isn't dairy free, either, it simply doesn't require that you have it on hand.

Made this cake for the first time today. I’ve never made upside pineapple cake before (never even tried it before), and gotta say it was incredible. First time tried maraschino cherries too and while they were a bit too sweet, it matched with the pineapples perfectly. Everyone loved it and it was gone in minutes. My pineapple juice goes into the cake! I use a type of cake that requires melted butter and water, no dairy. Overall it's a very pineapple cake!

@@wynn8591 You're absolutely correct, butter is dairy. My recipe actually calls for vegetable oil, but I've always used melted butter instead. The mix itself isn't dairy free, either, it simply doesn't require that you have it on hand.
I have made this twice and both time it came out fantastic really good I am about to make it again today this time I have fresh pineapple it truly is an outstanding recipe my wife really loves it

Made this cake for the first time today. I’ve never made upside pineapple cake before (never even tried it before), and gotta say it was incredible. First time tried maraschino cherries too and while they were a bit too sweet, it matched with the pineapples perfectly.
Everyone loved it and it was gone in minutes. Definitely will be making it again ❤️
