Gemma, it's not the correct to say in this recipe but I will say! I was waiting to tell for 4 days to tell this amazing news! I did your brownie recipe. It turned out so amazing, fudgy, caramel taste and of course the crinkly top!!! Instead of egg, I used meringue slurry. In comments we can't show the image but I'd love to show. Thank you so much Gemma, the 'Gem'💎!
I don’t know how I missed the milk🙄, I went over that recipe 3 times, you are absolutely correct, my mistake And my apologies to you.. I’ve tried a few other recipes of yours and they were delicious 😋. I will definitely give it another go
Absolutely delicious. I took a run at it for myself first. Before serving this deliciousness to my house full of company Christmas Day. It's a definite GO! Thank you for sharing. Happy Holidays y'all 👋🤶
I've been making this for 40 years. I also put some of the pineapple juice in the cake batter too. I also sprinkle a bit of ground ginger on top of the pineapples before topping with the cake batter.
I made these and we annihilated the whole thing in one day. Soooo good and addicting. The extra caramel sauce made the edges all gooey and crispy like a sticky bun. This is exactly the “next-level” pineapple cake that I’ve been looking for. Will make this again and again. Yum.
It's lovely! I have a sister (my late sister) who was always the one to bake this classic. God rest her soul, our dear Connie. Lovely cake, lovey memories. Thanks, Gemma!
I’m sorry to hear that, Maria. I hope you’ll give my recipe a go and enjoy the memory of her. Here’s the recipe, www.biggerbolderbaking.com/pineapple-upside-down-cake/
I’ve recently done this in my microwave for an emergency dessert it was done in 6 mins, it was given the thumbs up by family but must try this for comparison. Brings back memories of distant domestic science lessons when we all arrived at school with our ingredients in a biscuit tin and I got mugged by my brother on returning home! Great memories 🥰
I made your recipes for my brother in laws birthday right after you first posted this video. Now he is retiring and my sister in law requested this for his party.😬😳 When I made it for his birthday it was hot, yes it gets hot in Alaska! Now it’s freezing with storm warning! My issue is I made it on my treager grill outside so I wouldn’t heat up my house. No way I am I doing that this Saturday.😅I made so many mistakes, I send a round cast iron pie pan that was a bit too small. It made the topping seep over the edge, caramelize and get crunchy edges. Everyone raved about this cake. Hoping I can recreate the mistakes I made the first time! Great recipe, even for someone that doesn’t follow directions completely!!
This is a recipe I will have to make with my granddaughter. She's 15 and has been baking for about 4 years. She loves pineapple too!!! Cooking & baking is so much fun when it's a shared experience! I have so many wonderful memories of cooking with my sisters over the years & I know we will make many more.
I don’t know why this came up today (5-10-24), but my granddaughter I mentioned above, graduated from HS last week & will be 18 in Aug. For several years I’ve been making Oreo Truffles, a super easy treat. I asked Nya what she would like me to make for her graduation party this coming Saturday. She asked for the Oreo Truffles, which I’m more than happy to make for her. I’ve got the first batch done, except for dipping them in melted chocolate. The second batch I’m making with the Golden Oreos & will make those tomorrow. The party will be lots of fun, the weather is supposed to be really nice Saturday & they have a pool, so it will be a great time!! Happy Summer everyone!

I was looking for this recipe for quite a few days, so upsetted by the fact that you hadn't tried this out on your channel (since you're my baking Guru, and I blindly trust your recipes) and now I'd have to look up other channels. BUT TRALALA, HERE IT IS!!! THANKS A BUNCH, GEMMA!! YOU'RE SUCH A QUEEN, and your page is a total Baking Bible! LOVE ALL OF YOUR RECIPES, LIKE 'ALLL'. Will try this one out too, THOUGH I'M ALREADY DEAD SURE IT'S GOING TO BE UNDENIABLY THE BEST!!! I'm kind of envious of baby George. He gets to try so much heavenly goodness throughout his life, and that too, from the BEST of THE BEST bakers in the world, not to mention FREE OF COST, because that baker IS HIS MOM!! Hell yes. Sending all the love I can contain, love to you and your family!!
Looks delicious. One of my favorite cakes. Here's another way to make this next level, add crushed pineapple to the bottom with the rings. More pineapple for pineapple fans.
It's been many a year since I've tasted this wonderful desert, like the 80's or maybe late 70's. The last time I ate pineapple upside down cake was when my coworker of Irish descent baked a delicious sheet. RIP Carolyn D. 🌹🙏🏽
OMGosh 😂😂 I've just put the cake in oven, I forgot to buy the essence, so no essence. I didn't have enough pineapple for three across, but got a cup of juice. Didn't buy cherries, the one's in a jar looked anemic. Put cake in oven, went to set timer when I noticed the cup of pineapple juice sitting on the bench. Took cake out if oven poured over around half cup of juice and used a spoon to mix it in. I just had to share this. So I'll let you know how it tastes 😂😂 I brought french vanilla ice cream to go with it for pudding. One of my boys will be having a bit of a late night. His bed time is in 15 minutes 😊
When you make it in the rectangular pan as you have done, each person gets an entire slice of pineapple. In the round pans, you just get fragments. I'm glad you remembered to include the cherries.
Hands down best recipe and is now my go to for an easy delicious pineapple upsidown cake. However, one day I didnt have pineapple on hand, and used this exact recipe with apples - it was delicious! Core the apples n arrange as u would with pineapples but stack the slices to be less than an inch thick. Pop a blueberry in each hole. Used orange juice to sub the pineapple juice and vanilla extract for the almond.
I remember my mother making this cake for my birthday once because she thought it was my favorite. It was not. In fact, I didn’t like pineapple upside down cake. I told her it was my older sisters favorite who had recently passed away. She felt bad. I told her it was okay. Now I like it. Tastes change over time. Yum.
Yum, bringing retro back! Why not? I'm a bit over food trends. Classic is classic for a reason and younger people should be able to experience the yummy goodness we grew up with too. In my opinion. Very colourful contrast too!
It's making a resurgence? No no no, it's a staple in my house and growing up a family favorite. I do make mine from scratch as well but I use a cast-iron skillet. Now watching you bake yours, I have to make one now lol! By the way, I have that cookbook and it's getting a lot of good use!
Yes! Me and mum/grandma would bake cakes on the weekend. Usually this cake, poundcake (lemon or orange), chocolate cake, or pandan cake (when we have the leaves). Just something you could have throughout the week with tea. Never knew it ever went away 😁

Ok I know I say this all the time but thank you so much for this video my mom and I absolutely love Pineapple Upside Down Cake. So I will definitely give this a go and once again, THANK YOU!!!! I hope you and your family stay well, Gemma. Anyways, have a lovely day everyone.
This was one of the most popular desserts I've made for my family. My dad loves it so much, he always digs his fork while it's cooling down i.e. BEFORE I flip it right side up LOL! I prefer to cream the butter and brown sugar rather than simmering it (that was the instruction when I first learnt of this dish from Food & Tech) and I don't use almond extract (not easy to find here unless you go online), but it's one of those cakes that make the end of your meal a bit fancy IMO. :)
@@reginaleonard4581 I skip it and just use the listed amount of vanilla extract. Almond extract is expensive where I live so I use it only when it's necessary.
Were you in my head, I was craving. But we have double chocolate cake left I made for my daughters beat. I make pineapple upside down pancakes, soooooo good.
I cook my pancakes with butter and a twist . Drain pineapple an save juice. Make batter using juice. Melt butter put drained crushed pineapple, chopped cherries an brown sugar in a pan in circles the size you want. Top with batter. Cook, flip. Top with whipcream.
Woooooow Gemma!!!! This next level upside-down pineapple cake looks so yuuuuumy!!!! Will do, for sure! Thank you! Love to baby Georgie 👶 P.S. Thank so much for your family stories. They are so heart warming 💓
I don't know that my mom ever made this when I was growing up. I may have had it at a church supper or something. The dessert that takes my back is chocolate cake with peanut butter- cream cheese icing. 😀
Yes, you can do that, Natalie. But I think if you get the proportion of the butter and sugar right, plus bake it within the right baking time, it should not be a problem releasing the cake from the pan. Check my recipe here, www.biggerbolderbaking.com/pineapple-upside-down-cake/
Thank you! This is exactly what I needed. Made pineapple upside down cake last year, and I’ve been wanting to make it again but with more ooomph! Thank you! Will try this next week.

Then this would be perfect for you, James. Check the recipe here, www.biggerbolderbaking.com/pineapple-upside-down-cake/
Looks scrumptious
This was one of the most popular desserts I've made for my family. My dad loves it so much, he always digs his fork while it's cooling down i.e. BEFORE I flip it right side up LOL! I prefer to cream the butter and brown sugar rather than simmering it (that was the instruction when I first learnt of this dish from Food & Tech) and I don't use almond extract (not easy to find here unless you go online), but it's one of those cakes that make the end of your meal a bit fancy IMO. :)
Thanks for sharing. Yes, this is a traditional dessert that somehow gives a perfect ending to a meal.
what did you use instead of almond extract?
@@reginaleonard4581 I skip it and just use the listed amount of vanilla extract. Almond extract is expensive where I live so I use it only when it's necessary.
@@제정은-f7j ohh ok I see, thanks for the help. Almond extract is expensive here too so i was hoping I didn't have to use it. Thanks!
Were you in my head, I was craving. But we have double chocolate cake left I made for my daughters beat. I make pineapple upside down pancakes, soooooo good.
Pancakes! Interesting, Joy.
Thank you!
Love to baby Georgie 👶
P.S. Thank so much for your family stories. They are so heart warming 💓

I don't know that my mom ever made this when I was growing up. I may have had it at a church supper or something. The dessert that takes my back is chocolate cake with peanut butter- cream cheese icing. 😀
Thank you for sharing. Yes, this brings back memories of childhood from the 60s well into the 90s .
This looks AMAZING!! Would it be fine to spray your pan with non-stick coconut oil to ensure that it comes out when you flip it?
Yes, you can do that, Natalie. But I think if you get the proportion of the butter and sugar right, plus bake it within the right baking time, it should not be a problem releasing the cake from the pan. Check my recipe here, www.biggerbolderbaking.com/pineapple-upside-down-cake/
