I made this for Dec 23, when our family begins our Christmas feast😀. It is delicious as it is but, since it was for the holidays, I made a vegan ricotta, added some beyond beef (Dr Greger says an occasional indulgence is ok😉). Also added some red pepper and black olives in the mix! My son’s 36 lbs lasagna is our tradition that night, but some family members want d to try mine! They loved it!!! They loved the “cheese sauce” But all the rest of the year, I’ll only make it exactly the way Jill does: healthy and delicious!!! Happy New Year to All! And a huge thank you to Jill! ❤️
Here’s a fun tip! When you soak nuts for anything (almond milk, cashew cheese, etc.) give the soaking water to your outdoor plants. They love it and you don’t waste all those nutrients down the drain.
I watch plenty of vegan cooks but you are sincerely the most genuine, ego-less cooks on RUclips. You’re not a performer, you’re real, and a pleasure to watch. Rock on, t x
Thank you so much for your cooking show. I love the physical cook book and not an ebook. And, to top it off, there are the demonstrations. This is doing more to encourage a plant base eating style.
Had this for dinner tonight, man was it good! Our first lasagna since going plant based 4 years ago. I think we’re gonna wear your guyses cookbook out::) you’re a culinary magician! Thanks!
Just found you and I have to say---LOVE YOUR STYLE!! No beating music & super high flicking overwhelming graphics--just wonderful healthy cooking in a calm voice with calm understated background music. Wow! I subscribed! I'm in! (Most of the video was out of focus, but content was worth it--thanks soooo much.) Hope you stayed dry & safe during the hurricane. Hugs from SC.
Wow, I've only watched three of your videos, each one so good. In the past week i had to make a renewed commentment to my health, cleared the frig, the cabinets and began my journey to a whole food based lifestyle. I only had a few ideas most!y beans, rice, but finding your channel and website has actually put a smile on my face, i am excited to try some of your recipes. Thank you. I am eating to live, but it can taste good too! I think this will one of first meals i'll try. Again, thank you! New subbie!
I just made it last night and went back for 2nd and 3rds, let me share my experience... I'm really happy with it as a starting point and will definitely be making it again to perfect the flavors... I ended up adding just a sprinkle of sea salt and red pepper flakes on top to really make the flavor pop, I think I might try mixing in some dulse flakes to the sauce next time since it came out. I will also make a bit more cheese mix to pour in between the layers, which isn't in the directions. For me the mushroom mix is the first thing to start, it took so long for all the liquid to be released next time I will use a bigger pot to help with this. Also cook time at 350F was more like an hour+, the cheese was turning uniformly brown but wasn't getting those crispy spots until I put the broiler on, and the kale stems were just barely cooked enough, next time I will use our Italian family's favorite veggie Broccoli Rabe / Raab / Rapini b/c it's more tender and I think the flavor will be better, alternatively I will test out the power greens baby kale, baby chard & spinach mix I get from Costco...the zucchini was slightly rubbery though so I might play around with pre-cooking that less... I may have over-cooked it trying to get the cheese to this state... even with my mistakes it came out really solid and even my dad liked it... it's as light and energizing as our traditional recipe is heavy and food-coma-inducing. Thanks!
This recipe was totally worth the 3 hrs of work lol, jk. It does take time to make , but anything delicious takes time. The recipe was so easy to follow. It’s so flavorful and satisfying. I’ve made several of ur recipes n they come out perfect. Your channel is definitely my favorite! Thanks for the recipes.
I've been looking to make versions of all my family's favorites for those in the family that are now eating more health-consciously, the goal is to make it taste as good or better as the family recipe so we don't need two versions! So glad I found your channel! What I do when condiment is low in the container: mix the next liquid in your recipe into the condiment container (lemon juice in your case) and shake it up, hold it by the end and swing it like a bat so centrifugal force brings it all to the cap.
I was vegan for a year and I’m on my way back, so I’m gradually reintroducing more plant based options in my diet. I will certainly give this a try this week. I honestly decided to subscribe after hearing the intro music .. so cute😊
I've just gotta say this may be the most amazing base recipe for lasagna I've ever had! I made the full recipe of cheese sauce (minus ½ cup cashews) for half the recipe of lasagna so I had a super thick and delicious cheese layer; it set up very firmly so it was no problem to slice and serve. I also added red wine to the marinara per your old lasagna recipe which really took it over the edge. It was SO GOOD I will be saving the cheese sauce and marinara recipes to use in other dishes (like eggplant parm)! Definitely my favorite recipe of yours so far!
This is outstanding! I thought it would turn out soupy. I followed directions to wick out water and cooked down mushrooms. I’m so happy to add this to my repertoire of recipes. My husband loved it! The flavors blended so well I’m loving this community. Thank you!
My family and I have been loving your recipes. I can’t wait to try this one! Thanks so much for your hard work! My family went plant based 2 months ago and at first I didn’t know how to ditch the oil. You’ve made it so easy! Also, we love your theme song. My 4-year old daughter sings along with it :)
I made this yesterday. It turned out great. I put a roasted bell pepper in the cheese sauce and skipped the nutritional yeast (hate that stuff). Will be making this again. Thank you for posting.
looks great! i would have liked to see you go through a whole layer before you fast forward to the end but i guess any way you layer it will taste good :)
That came out so good. I've never made a lasagna before, even when I wasn't a vegan. Unfortunately, I can't do/have anything with almond, cashews, or coconut milk. My stomach is too sensitive. I can do/have Follow Your Heart vegan cheese. Anyway. Thanks for sharing that beautiful vegan recipe!
Patreon! Yay i am sooo happy that you started a Patreon account! I hope you get all the financial support you need, you deserve it. Thank you for all you do. I recommend you look into patreon in another video, and i am super happy for you that you started an account!
Yw hon thank you so much for show us this Recipe coming and thank you for the time you put making the Video I appreciate it so much keep them coming be blessed
Did you really not show the rest of the layering process with the kale and onions? I've never bake lasagna and I wanted to see you at least make one complete layer. Lol. No problem. I'm a fan. I don't think I want lasagna. Have a great day!
from the inside out Try pureed lentils and carrots. I just blend up steamed lentils with a pack of baby carrots. It has a ground meat-like texture. You can sautee it with onions and leeks and season with cumin and coriander and a dash of liquid smoke.
What can I use other than zucchini. Dont care for the taste in this recipe. May try mandolin sliced mashed potato hybrid winter squash. Bake till mostly firm.. kinda like a fried potato chip.. Any other suggestions?

There is No LifeStyle more POWERFUL than the whole-food plant-based lifestyle.

Teri Saccone
Thank you so much 😊
I’m a man who likes to eat meat😅 but I made this and it was sooooo good! I’ve become more open to plant based😋 thanks for the recipe
The satisfaction face of this lady at the end is the best part of her recipes
I love that you don't use oil to cook delicious recipes.
Precisely. Me too. And that you don’t add coconut milk or coconut cream in your recipes, at least that I have seen yet.
The best channel cooking vegan the healthiest way

I just made this morning....absolutely rich and delicious. It feel like I am cheating! Thanks again for another terrific recipe, Jill!
I tried it and it is delicious, just a perfect blend of flavors.
This is outstanding! I thought it would turn out soupy. I followed directions to wick out water and cooked down mushrooms. I’m so happy to add this to my repertoire of recipes. My husband loved it! The flavors blended so well I’m loving this community. Thank you!

Looks incredible!!
Looks amazing, hope it tastes as good as it looks!
It tastes better
Thank you looks so yummy, iam going to buy the ingredients now🌈😋
Great video, that looks soooooo good, have got to try that!
Is it wrong to want this lasagna for breakfast. Looks so great.
The Vegan Hippie
Go for it 👍👏👏👏👏
Not at all, veggies for brekky is highly recommended!
Ty I made it and I love it
Yw hon thank you so much for show us this Recipe coming and thank you for the time you put making the Video I appreciate it so much keep them coming be blessed
That looks amazing!! Did you put some of the cheese sauce in the layers or just on top?
Wendy Bracken
I put just a little in the layers to help it bind together 🤗
Yummy!
Thank you 👍👍👍👍👍
There are alot of lasagna noodles that are store bought that are also vegan. The problem I find with vegan lasagna is finding a good cheese that melts
When you use a creamy cheese like she did, you get the ooey gooey without having to melt it.
Yum! Really want to try this. Can you pre cook the zucchini the night before or is it important to do it right at the moment?
Stephani Hunter
You could probably precook them 👍
Thanks! 🌷
Thanks
Did you really not show the rest of the layering process with the kale and onions? I've never bake lasagna and I wanted to see you at least make one complete layer. Lol. No problem. I'm a fan. I don't think I want lasagna. Have a great day!
Looks amazing! What would you recommend to someone like me who doesn't like mushrooms?
from the inside out try diced eggplant. that should get you about where you want to be texture wise.
Joshua Mckiernan Thank you! Should I cook it first, or just add it in raw?
oh, sauteed like the mushrooms. brown the daylights out of em!
Joshua Mckiernan ok, great! Thank you so much for this tip! 😊
from the inside out Try pureed lentils and carrots. I just blend up steamed lentils with a pack of baby carrots. It has a ground meat-like texture. You can sautee it with onions and leeks and season with cumin and coriander and a dash of liquid smoke.
OMG that looks so good 😋😋😋
I really want to make this, but is there any substation for the cashew nuts? one of my kids has a tree nut allergy.
You could use 1/2 sunflower seeds 1/2 rolled oats 👍
What can I use other than zucchini. Dont care for the taste in this recipe. May try mandolin sliced mashed potato hybrid winter squash. Bake till mostly firm.. kinda like a fried potato chip..
Any other suggestions?
Can you please do a vegan
Moussaka.😁
Amanda Rossouw
Great idea!!!!!
just did one
I have exactly the same blender as yours. Please let me know which option did you press to puree your cheese. Thank you.
The whisk
Thank you
Thank you for sharing. How did you cook the onion .you did it boild
Water sauté
GIVE ME LASANGA
YUM! Gonna make it soon! How many calories is one serving, about?
i was looking for vegan recipes for my bday and i just noticed the upload date it was on my bday LOL
is it meant to be or what?
I love your recipes. But in place of amino acids can o use something else
Is that "cheese" fattening??? I am intrigued!
I'm a Jain and not supposed to eat Mushroom. Can we substitute it with something else?
Yes, honestly, any cooked veggie that you want
😉
How does this reheat? I want to make it ahead and reheat it for a church dinner. Or can I layer it together and bake it tomorrow?
Heidi Minett
I think it would do better if you layered it and baked it the next day. Reheating it brings out more of the water🤗
Will you please come to our house and cook this for us????
Chris Hatch
So cute🤗
Wouldn’t that be great if someone would come to your house every week and cook for you? That would be dreamy👍
I would really like to try this but unfortunately I cannot have mushrooms. Is there anything else I can use?
You could do red pepper or chunks of zucchini
Is the crushed tomatoes with seeds? Or at least seeds really crushed? For a person with diverticulitis
Little Blessings
Not sure. They’re canned🤗
What if I don’t like and am so tired of Zucchini noodles, my family won’t eat another Zucchini. So what else can I use for noodles?
Kathy Fann
Eggplant 👍
Can you dehydrate the zucchini noodles instead of baking them?
Yes
Hi Jll where do you buy the unsalted raw cashews?
Christine Peters
I get them from my local grocery or sometimes tierrafarmstore.com/
🤗
you can also try Costco....I'm not sure if they are organic though
Christine Peters I get mine at Trader Joe’s.
Sprouts
Christine Peters @ indian stores
Alternative to mushrooms please !!!!
Red peppers
I don't eat mushrooms as when I do I am ill. What could I substitute for them please?
I would just use more of the other vegetables like red pepper and onions. =)
To make the cheese can I use anything else besides cashews because they don't agree with me
Almonds
So each layer had "noodles", sauce, kale, mushrooms and cheese? How many layers did it make?
Fatts McGee
It made 4 layers, 2 of kale, 2 of the mushroom mixture. I just added cheese to one of those and a little sauce to each layers
Did you put the "cheese" in the middle of the layers? Or just on top?
Teresa Pacelli
I Put just a little in one of the layers so that it would meld together better
I am allergic to nutritional yeast. Is there any way to make a cheese sauce without it? There are just so many recipes that use it. makes me sad!
Zoey Loves Bts
You could make this without it and it would be Ok. It just adds some depth and a cheesy flavor.
I am not a fan of kale. Can I use fresh steamed spinach instead?
Belinda B
Yes
Can you make freezer meal out of that?
I haven’t tried freezing it but I think it would be watery
This looks so good, but I have a question. Didn't you use oil in the cheese sauce?
Susan Robinson
No oil. 🤗
Here is the recipe :
