To help prevent aliums like garlic burning, add salt, this also works for onions when you want them to sweat and not brown, makes making aglio e olio even easier and more fool proof

I have heard from other places that it's advantageous to use less water to cook because the water Will have a higher starch concentration which will be beneficial when added to the pan to finish the cook. Thank you! Either way I plan to try this very soon.

She sautéed them in the oil along with the garlic and chili for extra aroma and took the stems out before tossing the pasta in with the rest; parsley and pasta water. She also added some finely grated Pecorino Romano and mixed in with the pasta water for extra creaminess ❤
There are techniques to make it super creamy: my suggestion is to add the parsley only at the end if you want to use it, and cook the pasta only for 4 minutes in the boiling water, the rest of the cooking process in the sauce adding pasta water as needed. The starch will be released in the sauce making it super creamy and the pasta will absorb more flavors

Its actually a lot easier to do this in a saucepan. You don't need that much water. Just fill the water up until it barely covers the pasta. You save so much water and clean less things.

I don't know how much a gallon is, but u should use 1 liter of water per 100 g of pasta
