You can make an empty bottle from three glass (same way you make a bucket) fill it with water then right click dirt with the water bottle and boom mud
Also the biome you're looking for is a mangrove swamp.
And another tip: placing a stalactite under mud makes clay

It's fun watching someone that isn't used to playing survival play it, this was nice to watch, glad to see I'm not the only one that likes to build a firewatch tower too, mine is pretty different, wish I could post a picture of it here, I'm quite proud of it, I took a lot of inspiration from the game Firewatch, so it's pretty reminiscent of that.

Heads up though your lightning rod being next to wood blocks means the lightning will strike there and may ignite what's next to it. Be sure to put it on a pole or just take it off until you're finished with the roof!

Yup, by right clicking with a bottle of water on dirt. Or you could also find a mangrove swamp, that's a new biome, and the ground is made of mud @@Alpine1

This brings me back to the old days of minecraft and i love it
You can make mud yourself by just right clicking dirt with water bottles. But I guess finding a Mangrove is much more efficient given how slow and annoying making mud is. 😅

at 23:37 you shuld put that stair thatre as a suport for the horizontal support it would make it more sound to things like thunderstorms
I think terraforged would be an interesting idea with its realistic terrain generation
remember lightning rods attract lightning, so dont place them on wood or it will burn when hit
