However, achieving the perfect texture with fresh live shrimp and incredibly tender eggs requires some skill. Marinating the shrimp in egg whites creates an alkaline environment that enhances the shrimp's texture. When making scrambled eggs, it's essential to control the cooking time precisely, avoiding undercooking or overcooking. Although this is a straightforward recipe using basic ingredients, it results in an extraordinary taste. Additionally, you can use the sautéed shrimp heads to make a flavorful "shrimp stock," which adds an extra layer of deliciousness to the dish.

      加蛋黄一般是要拍粉油炸的,可以提升酥化口感😊

    如果是冷凍蝦仁,不用加蛋液/小蘇打,還是所有醃料都不用加呢請問阿李師傅

      这要看买的虾仁有没有底味,可以灼熟一只尝尝,没有底味用盐糖腌一下,有腥味就放点胡椒粉和绍酒。
