🔥🥩 This is the REAL and TRADITIONAL Mexican barbacoa made in an UNDERGROUND PIT!
Welcome to the Oaxacan countryside, where we will be meeting a local family that makes barbacoa (Mexican BBQ) in an underground pit. It took us about 2 hours to drive into the mountains of Oaxaca to the village of Villa Sola de Vega. We are showing you how it is made from scratch with 100KG of marinated beef! Watch the process from start to finish, and see how the entire barbacoa is sold out within minutes. The end result is mind-blowing!
The family was kind enough to also have us for breakfast. Our breakfast appetizer was homemade Mezcal and chapulines. After some snacking and drinking, we joined the whole family in the dinning room to have tamales (made with Oaxacan mole), concha and Mexican hot chocolate. Absolutely delicious!
We also visited a real Mezcal producer in another rural village. We were shown how they produce pure Mezcal from the agave plant, how the pulp is fermented and then double distilled. Their Mezcal is purely organic and WOW super strong! The Mezcal has a distinct smokiness that makes it so unique.

As a former butcher and professional cooker of things, I have never come close to this level of awesome. I’ve made my cooked my share of large meat, but this is awesome.

Underground BBQ originated in, and has been done in Hawaii and the Pacific Island for thousands of years. It's nothing new. Mexico has just recently started using the underground BBQ method recently.
@@MaPee1982 Actually these methods have been around and used in Mexico since the Pre-classic period around 1800 B.C. The Mayans in the Yucatan would do it and actually called it, "Pibil." It is believed that Taino people from the Caribbean also introduced "Barbacoa" to central Mexico which means fire pit way before the Europeans arrived. So recent it is not.

I live literally 10 miles (16km) from the border of Mexico in Arizona and I've never had barbacoa that looks sooo delicious like that!! I've been invited to "bodas" (weddings) and "quinceañeras" (sort of like a sweet 16 party for a girl) but the barbacoa was more stew like and not pitted like that one...I'm soooo jealous! PS...my location is the reason why I pressed on the Mexican Coke...just so much better than anywhere else.

I seen about 200 goats cooked this way in Lubbock, Texas in about 1989. It was an annual goat roast that some guy did every year and it fed 2000-3000 people. It was some of the best meat I have ever eaten. The ground is the best oven!

Smoked beef carnitas? Never heard of that lol, but you want real beef carnitas, we call it Suadero, aka beef brisket, cooked in lard, aka confeit , just like carnitas is cooked in pork fat n oranges , cloves etc.

Tamales are so good but remember just because a Mexican makes it doesn’t mean it’s good , same goes with all cultures, some people think they can cook and some are natural, I know I’m Mexican

Since you are both in Mexico, you HAVE to go to Taxco. It is designated as a Pueblo Magico, it's one of the most beautiful cities I have ever seen. It is an old silver mining town clinging to the side of a mountain. A must see while in Mexico.
