okay, we just cooked this mutton delicacy. it is amazing. i must say this as a telugu person that we can never ever imagine putting sugar in our non-veg curries. but i believed in it. and we put sugar in the curry. it turned out of this world. the sugar complemented the spices. the balance in the taste was something i have never tasted. it is lipsmacking, fingerlicking good. thank you for sharing the recipe in such detail.
Thank you, Pranitha. So happy to hear that you enjoyed the result! We feel that little bit of sugar does make the saltiness and the sourness more balanced. In most cases, people won't even realise that there's any sugar unless they are told.
@@BongEats Love your videos. Bongs are all about delicately sneaking in a little mishti in everything, making it an exhilarating effect in the flavors. My Mom does it and I so love the outcome. Bengal (East or West) The sweetest experience in its essence.
Hi, not sure if you'll read this comment but I wanted to share a personal experience. I married into a Bengali family and I knew very little about Bengali food. It is been three years and I always come back to this recipe and the love that goes into making this. My husband absolutely loves this recipe and swears by it too! On top of it all, his family was visiting from the US earlier this year and I made this for them and they told me it's the best mutton curry they've had! All the love and patience that goes into making Kosha is soself-rewarding. I cannot thank you enough for this lovely recipe!
Being a tamilian I never had the opportunity to taste authentic bengali cuisine, that was until last December when one of my bengali friends introduced me to this mutton kosha... it was easily one of the best dishes I've ever had. To this day I eat this everytime I get an opportunity!!!
This still remains one of the most BEAUTIFUL cooking videos ever made. They got just one thing wrong- that's not six servings, it's one. I'm eating the entire thing.
After such a long time without nekami ingredients..eto simple r technically correct mutton dekhlam.. Nekami ingredients include shah jeera...kajubata..javetri...golap jol...

i have never seen a cooking video so beautifully choreographed and presented with so much details. Love the graphics and the way of filming. And of course it's looks damn delicious. Kudos.
I prepared this dish today and the results were outstanding. It really is a Labour of love but then I had a 5 hour conference call, so cooking alongside was a no-brainer 😀. I followed the recipe faithfully without any modifications other than using my own garam masala instead of the shahi garam masala. As is the case with other BE recipes, the quantities were really accurate and because everything is in grams and ml, scaling up was really easy. During the slow, controlled browning phase, I did increase the cook time in each iteration from 1 min to between 3 and 5 mins and achieved the same result. The salt felt too much after the browning phrase but I kept the faith and it evened our nicely after I added the water for the gravy. I will definitely make this again although I will likely use the pressure cooker to get to reduce the cooking time. I know it won’t be the same so here’s hoping for another long conference call in the near future. Thanks for the meticulous documentation of the recipe and the very helpful graphics in the video. I am a fan and I usually have something I prepared following your recipe in fridge almost all the time. Cheers!

The recipe is really simple! What brings out the flavor is slow cooking the mutton! I made this yesterday and omg! IT WAS INCREDIBLE! If I could only post pictures here! I felt like I went to a restaurant and had this dish! I didn’t have mustard oil so I made this with vegetable oil. But I’m just imagining how this would taste with mustard oil! Love from a desi who loves to cook in Texas 🇺🇸
This is a brilliant recipe. I once cooked for over 12 members. My in laws. They were super happy with the result. The taste was amazing. Now, today, again I am using the same recipe for my brother in laws Aiburobhat. Thank you so much for this recipe. 🙏
Hi Insia & Saptarshi, I tried cooking Kosha Mangsho, following your instructions and recipe for the fist time in life yesterday. Our guests as well as I myself are unbelievably happy with the result. As we rarely consume read meat at home, cooking mutton properly , when required, has always been a challenge for me. Your lucid explanations about the browning process was sort of an eye-opener, which no one has been able to clarify and convince me about until date. Your measurements , indicating everything with grams is a bit tricky to follow; I had to rely on some simple math as well as my instinct to decide on the proportions for some of the ingredients. I finally managed to cook perfectly tender and juicy 1.5 kg of meat in 3.5 hours ( prep time excluded). Though I had initially decided to hasten the process by changing to pressure cooking midway, but later I discarded the idea and continued following the path shown by Confucius. Thank you for the wonderfully simple recipe . Also, your website and the videos are a pleasure to watch :) . I have become an ardent follower.
This channel has saved my life I started from the fulkopir torkari and today will try this recipe. I have grown so much as a human being through this channel. God bless them.
I made it today, it took me around 3hrs for the full cook but omg it was soo yum, i paired it w a sweet pulao recipe from my grandma and it was a perfect together
Yesterday was my mom's birthday and I cooked mutton for the very first time in my life..I followed your recipe exactly and trust me it came out to be lip smacking goooood!!! Mom and dad both were so very happy tasting this..they said they've never tasted any mutton which is this much delicious... Loved your recipe.Thank you❤️
The recipe was mindblowing! The way you guided throughout made it even easier.I cooked it for a family get-together today and people just loved it😊😊Thank you😊😊😊
Made this for Christmas dinner and it was INCREDIBLE! 😍👌🏼 The meat was succulent, melt-in-your-mouth delicious. It has officially been added to the Christmas/Easter dinner roster. Thanks for sharing, Bong Eats! 👏🏼
I made this for my parent's anniversary. Tested superb. However when I added the yogurt it released so much water that by the time that evaporated the caramelization was done. I didn't need to add the water during stirring at all, only at the end. After it was totally black I put it in the pressure cooker with large potatoes to finish it up. Highly recommend adding potatoes
I made this recipe yesterday...and to say...made my husband smile and we ate as much as our tummies desired...it was worth the hours...patience pays!!...thank u bong eats!

I made this on my mother's birthday and she was so happy. Thank you Bong Eats for this wonderful recipe😍😍😍. I followed all your points and suggestions and the colour was so rich and awesome. As a 12 year old, this was the first mutton recipe which I cooked. It tasted like heaven. Thank you so much😊😊😊
I cooked it today for my family, on the occasion of Bhaifota...my mom loved it. She is super critical of my cooking skills. Thank you Bong Eats...for helping people like us to make delicious dishes ...My mom approved of it ..super happy and grateful 😊
I tried this today but after about 50 minutes when the color was almost similar to the video I put it in the pressure cooker as my dad was hungry and impatient. He was super happy after tasting this. It tasted even better than mutton golbari. Will definitely make it again. Thank you for sharing this beautiful recipe😋😋👍👍

I tried this recipe today in 3 kg mutton. Following your guidance completely. And it turned out awesome. Everyone love that mutton.😊thank you so much❤you are my cooking teacher.
Tried this recipe today. My husband is a big fan of mutton. So I decided to prepare it for him. It took me almost 4 hours to prepare this dish. End Result: My husband loved it 😍 and so did I. It was better than expected !!! Thank you for the recipe!
I did try it out, with all minute details and it turned out so good my brother was praising it ..thanks!!! Shall follow you guys... amazing work, with specific details it makes it easy and simple.
Videos are top notch...very classy ..no irritating and tasteless music in the background....just very tasty food.....finally an indian food cooking videos which exuberates class
This dish is a showstopper. Marvellous! Absolute star! I consider it the pinnacle Indian non vegetarian dish. Finger licking good. Slow cooking at its best. The meat changing colour is so satisfying. Thank you Bong eats!
The recipe is fantastic! Loved the way it is explained with spices and cook times at the bottom - and all this without narration! Will try it tonight! Update: spent 3 hours cooking the dish and the whole house was filled with the fragrance of the spices! My wife, doesn't prefer the taste of mutton in USA, but decided to dig in! It was a win! Thanks again for the recipe!
This is tremendous... awesome ... amazing ... I have never seen this kind of food video ever .. where you havent speak a single word and yet everything got explained so beautifully ... im in love with the presentation animation and thr way of video editing .. the way u capture the cutting moments and then herbs everything was so perfect ... Bengalis are always creative with their fine arts ....
Had to watch it again as in the first attempt the creativity ,the direction and especially the sounds took me away on another ride . Its a pleasure to watch and a symphony to hear throughout .
Amazing recipe!!! Tried it with beef but it took longer to get tender because beef is tougher. So I had to pressure cook it eventually and it wasn't as dark as wanted it to be. BUT, no regrets whatsoever.. it was amazing hopefully next time I'll make it perfectly 😋😋😋😋😋
I've made this recipe many times so far and this is my review: May God bless you, this recipe and this platform for making this available to us all. Thank you so much. This is my favourite lamb curry, my younger sister doesn't like red meat because she has dental issues but this. Even she can't resist. If any one reading this is second guessing if the time to make this is worth it or not. It is. Make it. Make it, feed it to your loved ones and be loved even more. You won't be looking for any other Meat Curry ever. It's insanely good 👍❤
I am a big fan of Bong Eats not only because of the recipes but the way you present them is amazing and I love the fact you start everything from the trivial preparatory stages like how to cut the onions etc, almost every recipe is saved in my library. I have actually learnt how to cook certain dishes and apart from phuchka, each one of them came out really well. Even my little brother follows your channel ardently and tries to cook something who does not like anything but video games and sports. Now, I made mutton kosha yesterday on his birthday and it was sensational I must say and he told me to thank you people. I am a bit shy and do not like to pos anything on social media but this I had to do and it was long pending. Bong Eats, I sincerely thank you people for making thousands of people out there happy just with the beauties you create and inspiring so many to cook authentic Bengali dishes with utter perfection. More power and love to you both, keep going!
Absolutely delicious! With my very little cooking skills, I was very cautious to not spoil it after hours of cooking. It turned out great with the help of this detailed out recipe. Thank you so much ❤️✨
I loved the way it was browned. Tried today since only lock down could give me that much of time. The result was good. After browning it in high flame cooked in cooker to tender the bones though. Thanks bong eats for sharing
This is one of the most amazing recipe I ever found on RUclips. So informative. Tried out twice and it was sumptous. Thanks to you guys. Much love from Assam❤️🙏
its so soothing yet explanatory and broken down into simple instructions. love u guys and miss u lots. plz come back. i know there is some problem since u guys returned to kolkata. but plz come back to youtube like before.

Hi! This was my first time cooking mutton. I followed your recipe to the letter and it turned out great. I had never been able to get that authentic brown color in curry before- I was so happy! Thank you for sharing such wonderful recipes 💗Barir jonno mon kharap hole egulo dekhte bhalo lage☺️
The best Cooking channel I've ever viewed so far! The details of all the ingredients and the cuts without any changes to the actual footage shows ur integrity at its best❤ Congratulations, that you've earned a loyal fan to follow your page 😍
I love eating but rarely cook nowadays as I got older I became lazy but I watched this and I cooked it......I got so tempted couldnt wait for the colour to be that dark yet it was delicious.....Thank you!!!!!
No, medium flame except where we specifically mention high flame (that is, when you are adding cold mutton from the fridge and cold yoghurt to the pan).
Should you add cold mutton? What I know from cooking classes and my personal experience, meat should always be added at room temperature for even cooking.
That would be for meat that you don't want overcooked, e.g. a steak (even that theory is contested nowadays, Kenji Lopej for example says that it makes little difference). For a braised slow cooked dish like this one, the meat is cooked for nearly two hours and it doesn't matter. To bring a kilo of marinated meat to room temperature you would need to leave it out for several hours, leading to food safety issues.
Hey guys this is most favourite recipe... and have watched it a million times and made it too quite a few times.. congratulations for 1.3 million views on this..!! This recipe definitely deserves it..!! All hearts to you..!!❤️❤️❤️❤️❤️
I'm sorry to tell you about the fact that here must be a correction. Lemme tell you about this: You have watched the video a million times. Ok this video is of 7:19 minutes. This means total length will be of 7:19 * 1000000 = 7190000 minutes Now 7190000 minutes = 119833.33 hours = 4993.05 days= 13.68 years Now you should know that the video had been posted in 2018 So Technically, YOU ARE LYING :)
I did this last Sunday and it came out real good on the first go. Thank you for the detailed video ☺️ I would love to learn purono diner dida thakuma der ranna, if you guys could come up with such recipes in future I would be grateful.

Exactly! And the best part is they also told us how to avoid that bitterness in the gravy that golbari's mangsho has developed in recent years!
The sound of boiling of mutton at 6:28 was heart wrenching...
Love how you make an attempt to educate the viewer. Nobody else is doing recipes like these in India, and only a few come close. THANKS.
I’m Punjabi and have never made any meat without tomatoes lol. This looks damn amazing tho so will definitely have to try! Love your channel.

Life e 1st mutton ranna korlam...tomar recipe tei...sobai boleche restaurant er thekew valo hoyeche....thank you so much bong eats 😘😘
Try with pork too
I have prepared my mutton curry 5 times through this recipes n guess what every time it turns delicious
I've made this recipe many times so far and this is my review:
May God bless you, this recipe and this platform for making this available to us all.

Kosha Mangsho is one of my favorites.Thank you for sharing.
If I cook in a non stick Kadai, will it give same color and consistency of the gravy?
An absolute treat for the eyes, ears, tongue and olfactory glands. Salivating! 😍🤤🤩🎶!
This ain't a dish it's "Dedication". Maa behen biwi beti sabko Salute.
The best Cooking channel I've ever viewed so far!
The details of all the ingredients and the cuts without any changes to the actual footage shows ur integrity at its best❤

Cinematography and sound is excellent !! It's hard work ,jot just the cooking but also the recording aspect
দেখেই মনে হচ্ছে করাইটাতে ঝাঁপ দিতে 😋😋😋😋😋😘😘😘👌
Windcheater r goggles chhara jaben na
Then,that would be *_"Kallol Kosha"_*
Cooking process very nicely explained with pictures of how the colour changes with tome
Looks tempting.. however all this is done on high flame??
Bong Eats what is the marinate which you given for the meat ..can you please tell me that.
+AJITHKUMAR All instructions are in the video.
I’ve tried your recipe once and it turned out yummy , making it for dinner right now .😋 thank you for the yummy recipe 🦄😍
We tried this (with ever so slight variations) and we were in love. Our guests still talk about this particular mutton...❤️ Bong eats all the eay
Lemme tell you about this:
You have watched the video a million times. Ok this video is of 7:19 minutes.
This means total length will be of 7:19 * 1000000 = 7190000 minutes
Now 7190000 minutes = 119833.33 hours = 4993.05 days= 13.68 years
Now you should know that the video had been posted in 2018
So Technically, YOU ARE LYING :)
I did this last Sunday and it came out real good on the first go. Thank you for the detailed video ☺️
I would love to learn purono diner dida thakuma der ranna, if you guys could come up with such recipes in future I would be grateful.
The production quality of this video is bar none. I have subscribed to more than 100 food related channels and this is the best.
Baniye phellam, bujhli? The controlled browning tip was super-helpful. Also, slow cooked mutton for the first time. Er aage kadaai-e koshiye tar por pressure cooker transfer kore kortam. Jhonjhat kom, kintu rong-ta emon apurbo hoto na. Bangalore-er mangsher quality leaves a lot to be desired, that's the only bummer. Wondering what's up next.
