- Chelo kabab, to any Calcuttan, is a dish served at Peter Cat-the 70’s restaurant on Park Street that doesn’t accept reservations, and always has a crowd of people waiting outside for a table. When they manage to get that coveted table, chances are, half of them are going to order a Chelo Kabab. Peter Cat may call the Chelo kabab “THE PROTECTED REGIONAL PRODUCT OF WEST BENGAL”, but Chelo Kabab happens to be an Iranian dish comprising chelo (fragrant rice) and kabab (barbecued meats). Our recipe shows two types of kababs-jujeh or chicken kabab and koobideh or minced lamb kabab served with buttered saffron rice (chelo), roasted tomatoes, onions, capsicum, a fried egg and last but not the least the crunchy delicious rice crust or tehdig/tah-dig.
For this festive video we wanted to recreate Calcutta Peter Cat's famous chelo kabab. But when researching this recipe, we fell down the rabbithole that is the world of Persian cuisine-so we figured why not make chelo kabab, Iran’s “national dish”, the way it would be made Iran. The main source for these recipes is Najmeih Batmanglij tome on Iranian cooking-Food of Life: Ancient Persian and Modern Iranian Cooking and Ceremonies. The spices used are more subtle than what we associate with kababs in Mughlai cuisine.

By far the best Indian food recipe channel . Iv come across on RUclips and I can’t believe I’m witnessing this particular recipe of Chelo kebab.. this dish is my all time fav. This channel deserve more than a million subscribers, I don't know why this channel is underated. There explanation, there way of presenting the process is wonderful. I really don't know how to make a compliment, the moment I think that this video is ultimate,...you come up with something even better! So, for the time being this is the best video bong eats has come up with according to me. The research, the details, the mastering of technique (making that ribbed surface is no mean task), apart from the usual brilliant camera work and even better editing makes it a treat to watch the videos.....again and again! Iranian recipes are hard. And this isn't exactly a traditional ones you saw. So this is some restaurants food and home made food some times is harder to do. And because of that the best recipes still are in iranian women mind and there is an advice for tourists that if you want to eat very nice iranian food you have to go to Iranians home.

bongeats, wanted to share the recipe of classic iranian spice mix, advieh, which I make at home, and use it as the generic garam masala.
dried limes(limoo amoni- blanch limes in boiling salt water for a minute and quickly remove it. Dry them under the sun. You can also keep some of them as whole since they are used in flavouring persian stews. It is also powdered for enriching the flavour of advieh)
coriander seeds
cumin seeds
peppercorns
nutmeg
mace
cloves
cardamom
cinnamon
ginger powder
turmeric powder
Dry roast all the spices, excluding the lime, ginger powder and turmeric powder. Grind all of them in a blender, and store in an air tight jar. Use it up within a month. Aged spice loses its flavour and aroma.
@green grasshopper use whole limes, not cut.
Put give proportion of spices. Can this be used as general garam masala. Thnx

Jujeh kabab is pure Iranian food. Here, in Iran for ceremonies and parties or outgoings we make it. So delicious but our recipe is different.

@@thedrilldoctor. for jujeh kabab (murgi) what we do is that we cut the chicken in 2 types. If we wanna eat it with rice then boneless cuts, otherwise with bones. Then we marinate 500 gr chicken pieces with:
4-5 tsp olive oil or sunflower
2-3 big onions (sliced thinly)
A bit salt
2-3 spoons of saffron water
2-3 spoons of lemon juice
Some ppl add 2-3 spoons of yogurt (tak doi) which is optional
We marinate the chicken for 10-12 hours then we make them ready on chaarkol not oven. The smell will not allow you to finish cooking. Khuuuub bhalo gondho

Btw we use coal to cook these kinda kababs. Iranians take coal (charkol) everywhere, even in the road when they're going to a trip they stop somewhere and make their kababs and have fun.

@@maryamhatami9369 no no,charcoal is easily available in Kolkata bcoz there r so many small food shops beside the streets,, they depend on Charcoal(aka KOYLA)for their cooking...But a common man doesn't use charcoal these days in kolkata
