  • Chhana'r polao: A Tagore family recipe from the book Amish o Niramish Ahar by Pragyasundari Debi on the occasion of Rabindranath Tagore's birthday on 9 May. This exquisite polao, prepared with freshly made chhana or paneer, is hands down one of the best polaos we have tasted. This vegetarian polao, laden with pistachio, almonds, raisins, ghee, spices, saffron and rose water, seems to be influenced by Persian cooking in not just the ingredients it uses, but also in the technique it follows in achieving the delicate balance between decadence and subtlety.
    Every year we commemorate Rabindra Jayanti (birth anniversary of the Bengali poet laureate, Rabindranath Tagore) on our channel, by cooking one of the recipes from cookbooks authored by members of the illustrious Tagore family. In nineteenth and early-twentieth century Bengal, the Tagores held a prominent position in social, cultural and political life. Although Rabindra Jayanti is the birth anniversary of Rabindranath Tagore, well known for his contribution to Bengali poetry, music, education and publishing, we take this opportunity every year to celebrate the work of some of the women of this family, especially that related to the culture surrounding food. The Tagores were steadfastly modern in their outlook, and the recipes cooked in their household-some of them extremely quirky-reflect their sense of being part of a larger world beyond Bengal.

    Readers do note that bay leaves were used in cooking in ancient times to preserve the food (when refrigerators didn't exist). It helped food stay eatable with just reheating every 5-6 hrs.
    Garam masala spoils food faster, but just bay leaf doesn't.
    And Bong Eats!! Darun hoyeche recipe. Puro puri authentic ranna. Lots of love guys.

      Spices in general is used to preserve food items. Garam masala doesn't spoil food. Food is spoiled by bacteria. If you can pasteurize and kill all bacteria and hermetically seal it, food can also last very very long. Depends on bacteria, the composition of food and how much moisture is in that food. Dry items tend to last longer than gravy or curries in same environment due to low moisture.

      @@avijitsadhukhan8371 the thing you're talking about is scientific and obviously true. But, fact still stays that garam masala spoils food. That was the headline. Reasons: garam masala translates to hot spice, different communities have their own combinations, but majority of the ingredients that make up garam masala are naturally heat imparting. They create a great environment for the bacteria to grow. Try making foods with just bay leaf in it. And try making the same food with garam masala and see which one spoils first.

      @@QueensCurryKitchen I actually learned it from my mom. Growing up she never knew what a fridge was until she got married. When we were in Mumbai and had rented an apartment during her treatments, she taught me several things re how to keep veggies, fruits and cooked food fresh for longer periods. I was amazed on how many different things re food preservation she knew.

      Avijit Sadhukhan yes. Historically, spices and salt have been used to keep food fresh longer. This is also partly the reason why hot and humid places also generally have spicy food. But that has got nothing to do with spices altering “heat” (energy) of food - it is because they generally have anti-fungal properties.

    Didn’t know they used stock for making pulao in India. What an ingenious way to get rich flavors in a veg pulao by making a stock with cholar dal. Thanks for digging out this old recipe, it’s like finding the fried pieces of paneer in a heap of pulao rice. Like a delicious treasure :-)

    How to kill your entire day for 3 servings of rice. Though the best rice ever, I suppose. I love watching your recipes, but I cheat a lot when I try to cook based on them (skipping some steps and ingredients) 😅
