I scaled this down and made this almost exactly as specified (forgot to scale down the chilies, oopsie). Probably one of the most delicious chicken curries out there! Thanks for your thoughtful and accurate recipes!
You guys, i went back to the kitchen after almost 4 months and immediately felt why didn't I do this earlier. And all the credit goes to you for inspiring with such a wonderful rendition of what is a household classic. The only editing I did was to reduced a bit of turmeric and adding kashmiri lal mirch cause i have grown up to our kosha mangsho looking red and not yellow.. The taste was so so nostalgic and wonderful. Had I not put in a little extra salt, I d go on to say it was better then ma'er version..but it's not a similar game as she makes it in half the time that this took, what with the marination and browning the onions etc.. I think there might be a simpler version of this recipe for a long day at office sort of day.. Great work on the videos and ur perhaps the only guys to do measurements in units and please never ever change that.
Well, I just cooked this dish today and my husband, daughter (who is vegan, she tasted the sauce) said that it was delicious. This isn't just a cooking video, this is art. This was the first chicken curry I made. I followed everything to a T, and it turned out to be so good! One smol tip: No need to seperately cook the potatoes in the microwave; it gets cooked with the curry itself

I tried this recipe for today's lunch. Like some of the subscribers, I too felt that too much turmeric is used, however, while cooking I felt it is essential and not too much. I kept the chicken just for two hours and did not refrigerate. The chicken was soft juicy and tasty as needed. I am trying out most of your recipes in the lockdown days. Since I get fewer opportunities to cook, I am learning a lot from your videos and my family is enjoying the food. Thank you for the wonderful recipe. You made our day. :D
Tried your recipe. It's awesome. But I left the marination overnight in fridge. Chickens were tender, soft and succulent. Thanks for sharing the recipe.
This was my first curry that I have ever made and I loved it. I used all the ingredients except the yogurt and coriander leaves. Also I didn’t have green chili so I used a small amount of jalapeño pepper on Stage 1. I let it marinated the whole night and it was delicious! I had estimated everything that was in grams because I dont have a scale and it came out perfectly too and since I saw all the comments on this video I reduced the amount of turmeric too. I look forward to watching more of your videos.
I am a punjabi. I ate this at one of my bengali friend's house in 2003. It was served with rice. Ate with my bare hands without spoon. It was delicious. I guess this recipe is slightly different but close. Thanks for reminding those days.

One small suggestion. Please mention the measurements in ml or spoons (tablespoons/teaspoons), not only grams. Makes it a bit easier to measure. Thanks for the wonderful recipes :D
Nabanita Kundu Anyone who actually does keenly cook and bake has a measuring scale which is always more accurate than spoons and cups and hence more appropriate. But I do understand that most people don’t have one in their kitchen (I really think all should, it’s quite inexpensive) and it would be easier for them if the measurements are in spoons as well.
@@Balladhoe when you are weighing wont the weight of the container in which you have put the powder , Dry grains etc also gets weighed ...unless you are weighing in paper bag and liquids in gm not in ml .....there are many chefs and cooks who with or without measuring cups cook great not measuring each and every granules in grams
@@devivinod A weighing machine actually has a setting to record the weight of the container as 0. It's called Tare on mine (not sure if it's universally know that) and what that does is makes the display 0 grams even if there's a container already on the machine. I'm pretty sure all machines have that because I own a pretty substandard machine which is nothing fancy whatsoever 😅
Hi @Bongeats - one recommendation: instead of adding the chicken pieces into the caramelized onions in the wok, I do it the other way. I empty the onions in the chicken marination, mix it up, get the empty wok screaming hot and then add the chicken pieces one by one to the wok. This way I can get the wok to be way hotter than it would ever be with all the food in it. It sears the meat quickly on the outside and adds a depth of flavor that is really delicious for meats. You can turn down the heat later and cook the rest the way you do.
Luckily I have mustard oil, so will try this. The beauty of Indian cooking is that it is so varied across the country. There are 1000s of versions of a chicken curry. Thanks for this lovely recipe.

I am a fan of your cooking; I like the way the videos are shot: the food is so palpable, despite being virtual! The recipes are to the point, authentic and I am impressed that there is no pretentious mix of everything under the sun, producing some bizarre hybrid in the name of innovation. ;) However, while watching this video, I was wondering whether the parboiled potatoes would taste better if those were sauteed or fried along with the spices and onions. I am a huge admirer of mangsher jhol er alu, and would appreciate if you told me whether frying the potatoes would ensure better taste.
We've tried both methods and found that we rather prefer the texture of the perfectly tender, jhol-infused boiled potatoes. You can, of course, fry the potatoes before adding them to the curry, but do give the parboiled method a try and see if you like it better that way. Thanks for your lovely comment. :-)

It is dependent on the household. In my household, there will be war if that much turmeric was used. People with right pallette can tell the difference.
Its not that bengalis generally use a lot of turmeric in their recipes but yes, turmeric does play an essential role in giving colour along with red chilli powder. In this recipe the amount of turmeric is a bit extreme but the texture of the gravy at end looks sumptuous. I can guarantee that it will taste great but obviously amount of turmeric could have been reduced.
Guys your recipes are unique but please consider giving the measurements in tbsp/tsp/cup (for the spices atleast)... Can't follow your recipes for that gram measurements... Please i request you n i told you multiple times

I bought a weighing scale and made this. I just cut the amount of turmeric to half. It turned out just PERFECT. Thank you Bong eats for feeding us.

No, it depends on the potato variant. With the hard variants, the potato needs to be diced smaller to get cooked in the curry.

I will tell you 1 gram of water is 1 mL. So the 400 g hot water here is 400 mL

Your recipe is good but you are using much more turmeric powder in every dish. Looks yellow colour in every recipes.

Omg I made this today and wow the taste and thickness of the curry is just mouth watering such simple spices with lovely natural flavours, with a rich smooth creamy texture. I will be making it again. I marinated the chicken overnight. Best videos here I learn so much 👍.

I am a fan of your cooking; I like the way the videos are shot: the food is so palpable, despite being virtual! The recipes are to the point, authentic and I am impressed that there is no pretentious mix of everything under the sun, producing some bizarre hybrid in the name of innovation. ;) However, while watching this video, I was wondering whether the parboiled potatoes would taste better if those were sauteed or fried along with the spices and onions. I am a huge admirer of mangsher jhol er alu, and would appreciate if you told me whether frying the potatoes would ensure better taste.
We've tried both methods and found that we rather prefer the texture of the perfectly tender, jhol-infused boiled potatoes. You can, of course, fry the potatoes before adding them to the curry, but do give the parboiled method a try and see if you like it better that way. Thanks for your lovely comment. :-)

That's a lot of turmeric...does bengalis use more turmeric than chilli powder?
When you use only salt you taste only salt, similarly there are no colouring ingredients like tomato or coconut milk to change the colour
I can guarantee you there will be no smell of turmeric in the final gravy. Turmeric will add a earthly taste to the gravy.

It is dependent on the household. In my household, there will be war if that much turmeric was used. People with right pallette can tell the difference.
Its not that bengalis generally use a lot of turmeric in their recipes but yes, turmeric does play an essential role in giving colour along with red chilli powder. In this recipe the amount of turmeric is a bit extreme but the texture of the gravy at end looks sumptuous. I can guarantee that it will taste great but obviously amount of turmeric could have been reduced.
