- CBS News Colorado Mountain Newsroom reporter Spencer Wilson received an exclusive inside look at Casa Bonita and evaluated its plan to make improvements, while keeping everything the same.
I lived in Denver in the late 80s and ate at CB on the regular. As a SP fan, I love Cartman’s devotion of this restaurant. I’m so happy that Matt and Trey brought it back to its glory.
I'm excited to see it full of people! The last couple times we went before it switched owners, it was almost completely empty. It deserves a new life.🥰

I once worked at Hacienda Colorado and they removed the window into the kitchen because it was easier than keeping the kitchen clean. 8 industiral microwaves and the area around the dish pit was unfathomable. As a server I would have to wash the "clean" dishes again to remove chunks of food from the previous diners (only when family or friends came to my table, I just couldn't serve clean dishes to everyone). So long story short, windows into the kitchen are awesome!
Can't believe this was/is a real place. Watching the South Park episode I always assumed it was a take off of Disneyland or Vegas or something. Kind of a cool idea for a restaurant. Bet it's expensive to maintain, though.

It existed well before South Park, that’s why they put it in the show. The business fell apart over the years and Trey and Matt brought it back to life. 🙏
It was a Joslins before 1973.
It was in such bad shape when they took it over that by the time they realized how much money they had put into the repairs, they felt like they couldn't get out of it and had to keep going. Sometimes biting the bullet is your only option; let's hope the people come out in droves to help make it a popular and profitable place for them since they put so much into making it what they remembered it being.
@@mr.osclasses5054 Have heard people say the food was always pretty bad. But would assume Matt and Trey have the money to do something great with it. So hopefully they updated the menu. Would be cool if they could add an arcade or fair games or something.

Not a uniquely Colorado experience. I grew up going to the Casa Bonita in Little Rock. It is gone now, but it was opened 5 years before the Lakewood CO location. There were 4 of them. Maybe if Colorado does well, they could expand and reopen the other three as well?
With how much they sunk into restoring it and rebuilding certain section basically from the ground up, I’d say this is probably the last Casa Bonita the world may ever know.

Considering this is the only one open, it actually is a uniquely Colorado experience.

Are they open yet? Can't get a definite answer online. I'll be there the end of June and would love to experience it. I heard the waiting list is well over 100,000 though.

First time there in 1975, critics are too harsh on the food, I prefer the American concept of Mexican food over authentic Mexican food. I nwent to real Mexican restaurants in California when i lived there, I prefer Taco Bell food and I loved the original Casa Bonita food, everything tastes good when you wash it down with Tequila.

if it wasn't logistically, economically, and strategically impossible, most of real america wouldn't hesitate to disinvite them from our union.

It's a soft opening, so to work out any kinks, and put it into muscle memory. Cause you know they will be slammed for weeks at their regrand opening.
We have Casa Olé Mexican Restaurant down in Texas. However, there are no F’n cliff divers!!!

We tried staying until the opening but couldn’t hang pass June so we left and never looked back. Will I miss Denver, no. Am I a bit sad that we couldn’t see this gimmick, sure. We have a very nice home in our new state for the price of a crappy studio is the worst part of town and the roads don’t have pot holes or insane drivers. No more homeless or trash in the streets. Casa Bonita would have been a nice gimmick attraction….but I don’t miss being there. We even left before the crazy hail storm, so no car damage anymore and my kids can attend school and just learn without the politics or the pronouns deals. No more weed smell. Actually clean neighborhoods. Y’all have fun! 😂
