The Unusual Process of Barrel-Squeezed Bourbon | Jim Beam Devil's Cut

  • We're here in the Brewzle labs doing an honest review of Jim Beam Devil's Cut. Is this better than the normal Jim Beam? Let's see how it ranks up to our previous reviews.
    From Jim Beam's Website:
    We take the liquid we extract from our barrels, blend it with extra-aged Kentucky straight bourbon whiskey and bottle it at 90 proof to create a premium bourbon with extra depth and complexity. Designed to be enjoyed neat or on the rocks, Jim Beam Devil’s Cut has a robust flavor with deep color, aroma and character.
    When bourbon ages, a portion of the liquid evaporates through the barrel and up toward the heavens. Believed to be angels claiming their dues, this has been dubbed the “angel’s share.” Jim Beam Devil’s Cut is not that portion. Instead, it’s made from the liquid that gets trapped deep inside the wood of the barrel-the devil’s share. And through our proprietary process, we’ve found a way to extract it.

    I actually come back to this whiskey a lot. I just think everyone is different and it’s not about the whiskey everyone likes it’s about what you like and how you like to drink it.. I’m usually sipping this after a couple decent pours of some Eagle Rare or simply some Buffalo Trace.. And that’s only because I tend to hoard the hell outta that stuff because it’s hard to find even in southern Ohio.. So unless it’s a Irish whiskey night for me Devils cut is definitely in the rotation on a regular for me.. 👍🏻

    This is my favorite Bourbon right now... though Michter's Bourbon has been edging in. Micter's is a nice, bright contrast to the darker, nuttier, oakier, charred barrel flavours in Devil's Cut. Personally, I think Devil's Cut easily beats Wild Turkey 101, Maker's Mark, Buffalo Trace, & Sill Austin Cask Strength.
    I believe by "extra aged" they are referring to the Black Label Jim Beam.

  • @mikebakerjr.6539
    @mikebakerjr.6539 Год назад +9

    RE: "Extra Aged" - regular Jim Beam while label is aged 4 years. The old Jim Beam Black used to be aged 8 years (had it front and center on the label) and they referred to it as "Double Aged". To increase production, they reduced the aging from 8 to 6 years. They re-labelled Jim Beam Black as "Extra Aged" since 6 years is longer than 4 years but not double of 4 years. So maybe they're blending this with Jim Beam Black.

      I am absolutely new to whiskey and bourbon, but I really enjoy the devils cut. I bought a bottle of black aged beam and it tastes JUST like a slightly milder version of devils cut so I would agree 100% with you that they cut it with black aged.

    I've just kinda started into the world of whiskey and bourbon. I've watched several of your videos and so far devils cut is my favorite of the very few whiskeys I've tried. For you to grade it so low kind of gives hope that I'll find something I enjoy even more. I love the harshness this one has compared to Jack or the white label or the black aged beam. It's a very strong flavor I agree, but I actually enjoy it.

    Maker’s Mark does the same thing with their barrels. Empty barrels filled with water and left in a warm warehouse for a month. The water imbued with the whiskey that was trapped in the wood is used to dilute the barrel-strength whiskey before bottling.

    When this first was released, I was on a tour at Jim Beams Distillery, while in our group, 2 older gentlemen were talking about when there worked there they would put some water in a just dumped barrel and roll it out into the sun for the day. Then they would pour it out and drink it. The tour guide never told us how the Bourbon is extracted from the barrel, it's proprietary. I have drank a couple of these bottles, it's good, but not great. I put it as more of a novelty bourbon.

    • @hammer911tube
      @hammer911tube Год назад +1

      Actually, the method of pouring water in a used cask and keeping it there for some time is an old way of making cheap low-quality booze in poor neighborhoods:) It is called swish. And swish can be unhealthy and even dangerous because it may contain methanol)))

    They use water, agitation and heat to basically sweat the liquid out of the walls of the wood. Then blend it back to what was dumped. They blend it because if you taste it extracted it's very extremely woody and almost too bitter.

    That'd be a sight to see. A HUGE press machine trying to wring out all that the barrel has soaked up. I think that there could be a couple of methods of extracting. First, it could be as simple as reusing a barrel, which would be unlikely, but my theory is the spirit that isn't to whatever standard they have for bottling is repurposed or re-aged back into the barrel. Or, as the empty barrels dry out the alcohol that saturated the barrel will evaporate and condense. So I guess that is the condensate that is kept then blended with that not up to standard spirit and aged.

    As a mixer with a 5% bigger kick than a regular Beam or Evan Williams that gives me a nice bourbon kick, it feels like a bargain. Especially when it goes on sale because folks don't appreciate it and it ends up less money than either of those. Not as sweet as Evan, more kick than regular Jim Beam at a lower price. Makes me stock up on a few bottles for a decent proof mixer with some flavour.
    Cheers.
