Garam masala is a blend of ground spices common in North India, South India, Pakistan, and other South Asian cuisines. It is one of the most important masalas used in most Indian food dishes. So, with chef Smita learn how to make Garam Masala at home, only on Rajshri Food.
Ingredients
½ cup coriander seeds or sukha dhaiya
¼ cup cumin seeds or jeera
8 green cardamom
4 black cardamom
15 cloves
20 peppercorns
4” cinnamon sticks
4 bay leaves
1 small nutmeg
2 star anise
3 strands of mace
1 tbsp fennel seeds
Method
- Roast each and every spice on a low flame for a minute or two or till it leaves its fragrance and then allow it to cool and then grind to a fine powder
- Store in an dry airtight jar and use as required

I enjoyedmit immensly and I was unaware of all of the varied and tantalizing cacophony of spices that comprise this delicious Masala. Could you please explain the difference between Garam Masala and Curry Powder? Is it just a different name or perhaps a different spice combination or is there something more significant in the difference? I have read somewhere that Curry Powder is just an Anglisization - I hope that I spelled that correctly - of the words Garam Masala. Is this true or is there a different explanation? Wow....mesmerising to watch it being made. Smita you used 12 different spices in your Garam masala, is there any masala which can be made with 5 to 8 spices and is not as spicy as the Garam Masala? Basically a lesser spicy masala which is lesser on 'heat'. Thanks once again.

Great Vid. But personally I always discard the shells of the cardamoms (green and black, both) and if I am out of star anees, I put a little bit more of aniseed, at the end they smell almost the same

I appreciate how you taught us how to look for impurities! I had no idea how to clean spices either or what to look for. It is much appreciated! Measurements please. Making it for the first time I need a guide line as to the quantities of each. It is hard to judge the quantity of the items based upon the containers they are in - because I really don't know the size of the containers containing the ingredients. I realize I can tweak and adjust the spices, but that's only once I know what it is suppose to taste like. I'm new to Indian cooking and have only eaten Indian food in a restaurant once. Thank-you!

it takes a lot of time to fry all individual spices. Of course, cumin and coriander should be fried separately, but others can be fried altogether, I think.
cup you used is 250 ml or 160 ml please mention it or mention In grams
