Ingredients:-
1 cup Coriander Seeds
½ cup Cumin Seeds
¼ cup Mustard Seeds
1 tbsp. Turmeric Powder
1 tsp. Black Pepper Corns
1 tsp. Cloves
8 Green Cardamoms
2-inch stick of Cinnamon
3 Bay Leaves
½ cup Fried Onion Slices
¼ cup Fried Garlic Slices
6 Red Chillies
⅛ tsp. Fenugreek Seeds
1 tsp. Ginger Powder
3 sprigs Curry Leaves
Method:-
Roast the coriander seeds, cumin seeds, mustard seeds, black peppercorns, fenugreek seeds, cloves, curry leaves, cinnamon, green cardamoms and bay leaves on a low flame for 10-12 minutes. Transfer to a bowl.
In the same pan roast dried red chillies by adding few drops of oil.
Add fried onions, deep fried garlic, roasted dry red chillies, turmeric powder, asafoetida to the roasted spices and let it cool down to room temperature.
Once cool, grind to a powder in a mixer/grinder.
Transfer to an air tight container.
Madras Curry Powder is ready!

Thanks for the recipe! I wonder, what kind of red chillies are commonly used for this? Something like typical Capsicum Annuum chillies (with weak heat) or Ghost pepper (Bhut Jolokia) would be better?

Actually Dried onion and garlic are not necessary if you're already cooking your dish with onion.

It is called " begadi " chillies - common in Karnataka they are less spicy than the usual Guntur chillies

how necesary are the curry leaves??? :(( i don't know where to find them, i live in Venezuela, and no one knows the magic of indian cuisine here ♥ it took me like a million years to find most of the spices to make the garam masala haha, i really want to do this the authentic way but... ye, there is no such thing as "my local Indian grocery store". does anyone wants to send me some curry leaves or seeds and make me happy, and i'll send you a postcard written with love :))
Hi curry leaves can easily be grown in your country due to the tropical climate. It's easily grown in Brisbane, but Melbourne a bit difficult. Email me your address and I'll see how if I'm able to send a cutting to you. No South Indian food is complete without Curry Leaves.
