- A simple homemade curry powder recipe you can make easily with readily available ingredients! It is the perfect blend to bring flavors of Indian to any curry recipe calling for simple curry powder.

THINGS YOU’LL NEED:
1 tablespoon coriander seeds (or use 1/4 tablespoon ground coriander)
2 teaspoons cumin seeds (or use 1-1/2 teaspoons ground cumin)
2 teaspoons fenugreek seeds (or use 1-1/2 teaspoons ground fenugreek)
1-1/2 teaspoons green cardamom pods (8-9 pods) (or use 1 teaspoon ground cardamom)
1 teaspoon black peppercorns (or use 1-1/2 teaspoons ground black pepper)
1 teaspoon mustard seeds (black or brown - or use 1-1/2 teaspoons ground mustard)
1 teaspoon turmeric
1 teaspoon paprika (or use 2-3 dried Kashmiri chilies if you can)
½ teaspoon ground ginger
FOR HOT CURRY POWDER
1 teaspoon cayenne powder (or use other hotter dried pods or powders to your preference)
1 teaspoon cinnamon

That is a Made-In pan I got recently. Great pan! I usually toast at medium to medium-high, but only for a bit.

Is it necessary to toast the seeds before or I can just grind them raw?
You can grind them without toasting, though toasting does bring out deeper flavor.
How many teaspoons u use if you have the Kashmiri in the powder
Depends on the dish. I say 2-3 for a good sized meal for 4. Maybe more.

I hope you like it! It's a great general curry mix for quick, everyday cooking.
How long will it keep?
This will keep pretty much indefinitely, but seasonings start to lose potency after 6 months, so best to use it up.
If you mix it with oil, put in a sterile jar, & refrigerate, it will stay fresh nearly indefinitely. Adding salt helps too.
