  • Typical late summer morning on the homestead. The pigs have all gone to market and the garden is winding down, so the main focus is on the cow and all of the milk. Lots of cheesemaking happening in the kitchen as I’m working on perfecting hard cheeses while still rotating in old tried and true soft cheeses like mozzarella.
    Here’s my blog post on making a sourdough starter.
    I don’t have my sourdough bread recipe on my blog yet but I use 1.5 C water, .5 cup starter, 1T salt, and flour until it's shaggy - sorry I don’t measure! I like working off of the feel of the dough that way my loaf turns out even when I use different flours. You want a shaggy dough at first, don’t worry it will get more workable throughout the ferment.

    Can you adopt me please 😅 All jokes aside, I'm 54 years old with two adult children and my little one is 16 😊 I asked them if they are all interested in the homestead life, and asked are they ready to leave the city life. So my little one replied NO very quickly 😅 My 29 and 23 year old said they would love to live the peaceful farm life with me ☺️ I definitely need a change in my life. You are an amazing mom and you have a beautiful family. God bless ☺️

    My husband and have an organic farm here in Ohio. A few years back I grew some purple Cherokee tomatoes. Also some Indigo Rose tomatoes. Indigo are usually smaller but just as sweet. Beautiful. I enjoy watching the cheese making. Maybe after harvest I’ll give it a try. Here’s hoping!!

      It takes some practice working with sourdough but it’s so fun once you get the hang of it!

      @hopewellheights I followed your einkorn starter its day 9! I did make sourdough pancakes on day 7 and they were delicious! Question! Can I now use unbleached flour? Also i have had fruit flys attacking it. Found one or 2 in it! Should throw all away and restart? Thanks!

      Don’t throw away! I get fruit flys occasionally! Just make sure you get them out and cover your sourdough starter! I use a mason jar with a twist top. I don’t screw the cap on though! It works great though!

    You can also drop an ice cube iunder the parchment paper to help not get a super hard bottom and it steams it really well

    If a black beauty doesn't get a lot of sun, it can be mostly red. The more sun, the darker it gets. My black beauties are a purplish black on top and red on bottom. They're my granddaughter's favorite.

    Your breakfast pizza crust looked interesting. I have yet to get into sourdough but it's on my list. Lol.
    I liked the idea of using the trivet in the bottom of the Dutch oven.
    Cow's do give a lot of milk! It's nice having a pig in case you just can't use all the milk every day. Since we have no refrigeration it's a challenge in the warmer months. I'm looking forward to the cool weather so I can save enough cream for butter. Most of it I turn into ghee. Hoping to freeze some this winter though for baking.
    Growing up my mom had a gas stove. I do miss it at times. We now have a wood cook stove. Definitely a learning curve for me. For some reason I really dislike cleaning it though 🤔

      Yes pigs definitely make it easier putting all of the milk and whey to use!! The dog is at least happy when the pigs go to market because he gets extra whey and sour milk! I need to venture into ghee, that’s one thing I haven’t done yet

      @@HopewellHeights ghee is easy to make, needs no refrigeration, and taste so good. I love it on potatoes. It still solidifies if cold too.

    Can I just say how much of an inspiration you are.
    I didn’t realise how relatively simple mozzarella is. It’s so expensive to buy (in New Zealand anyway). I will have to try it!!!!

    Oh my goodness!!!! THANK YOU for mentioning the trivet trick! I’ve been wondering how to get the bottom crust softer lol this is gonna be a game changer lol 😂 I’m remineralizing my teeth but they’re pretty weak right now and I chipped a tooth and I had bread that day so I think that had something to do with that. 😂

    You should try to make a "queso fresco" I know its a more hispanic cheese but it is really good. You heat up a gallon of milk just before it boils, add lime juice. I would do about 2 or 3 big ones. Turn it off and wait. Then after maybe 10-15 mins you also score and cloth drain make sure you really squeeze all that water out. I rinse it too but thats just me. Then salt it, queso fresco is salty 🧂 so be careful but not afraid to add some. Leave ptessed in a container in fridge overnight and then use it in the morning. I love it with breakfast. Like eggs and salsa with the cheese🤤🤤🤤🤤

    I’ve been following your videos for about a week or so now and along with 1 other RUclipsr, you’re my favourite way to get motivated for the day. In one of your videos you’d made a quick comment about gluten intolerances and I’d love to hear your thoughts on that as my family can be sensitive to it if we have too much, but gluten flour is so much easier to work with and much…MUCH cheaper so anything that could possibly help, we’re willing to try. I’m not asking medical advice or anything, just a friendly, mother to mother suggestion 🙂I too am trying to stay down the path of home remedies and the like, so we avoid the dr unless it’s necessary

    I like to add an inch or so of water under the parchment paper, it adds moisture in the baking process and I’ve never had a bottom crust that is hard. Just a thought.

      I learned to add 3 ice cubes between the parchment and the Dutch oven. I’ve never had a hard bottom crust. Works great!

    I just found your channel. I can't wait to binge your videos. I want to know about your skin care routine. Do you use any supplements or is your gorgeous skin primarily just from healthy eating? I ask because I've cleaned up so much of what I eat, but my face is still uneven and dull. I've experienced other benefits from cleaner eating, like less sicknesses, more energy and mental clarity, but my skin has yet to improve. Please share if you have resources.

    Is there a trick to making raw milk yogurt? I have tried it twice and the good bacteria in the milk made it so the bacteria in my starter didn't work. Even with the gelatin added it was still like milk in the end... 🤷‍♀️

    Our curd stretches at 170°
    I use 2 spoons to do my streches.
    You only get 1 gal of milk?
    One of our jersey girls gives 10 gallons day..

      I’ve seen the spoon method, I know a lot of people love that! Mine usually stretches really well at 140 🤷🏻‍♀️ the particular cow I’m milking now is about 6 months pregnant so I’m only getting 2 gallons a day. It’s a lot more when we wean prior to pregnancy!

      @@schuttepartyof3 the hot coffee “cooks” the yolk so no need to worry about raw eggs if that’s a concern 😊
