So happy to see so many Asian traditions represented in this quintessential dish. This is probably one of my favorite chefs try each other's food videos.
As a Malaysian, nothing brings me more joy than to hear them say and recognise our beloved Mamak culture. Hearing them say Mamak was truly music to my ears. Thank you Jacob for advocating and sharing the wonder of Mamak food to the world.

This is awesome 😍 I love the Buzzfeed Oz videos with you guys, I am the UK and its really cool to see the differences ie US buzzfeed fried chicken would lend itself more to Southern Fried, buttermilk, crisco. I love the influence and appreciation here in all your videos due to proximity to SE Asia. I saw this one last night, and showed my partner today. We have all the ingredients in the house for the Taiwanese Fried chicken (well not for the sauce, no plum jam, and none of that branded BBQ). So thatll be our lunch today :) gonna try them all eventually. Also this Buzzfeed is considerably less annoying :D Enjoyed every one of these chef videos. Got so many to try

Here is my Mamak Fried Chicken recipe: Blend: 1 lemongrass stalk 1 knob ginger 3 small eshallots 2 cloves garlic 1 kaffir lime leaf 2 tsp fish sauce 1 tsp cumin 1 tsp curry powder Sat and pepper 1 Tbls brown sugar 1/4 cup shrimp paste 400ml coconut milk Blend until smooth Marinade in chicken thigh and drumsticks (skin on) for 1hr minimum. Then coat in 1 cup of plain, rice and corn flour. 1 Tbls curry powder Salt and pepper 1 tsp cayenne pepper Fry in vegetable oil for 10 -12 minutes.
How the sinigang fried chicken was cooked was weird for me. I actually cooked a different version of that before. I soaked the chicken in a mixture of fish sauce and sinigang mix, after which proceeded with the usual breading and coating. It still tastes sour, but it is quite flavorful due the fish sauce.

Dry chicken is dry chicken, but the authenticity makes it .5 better, so it's 6.5. I just hated how he boiled it.. if he did the same thing, but in a brine it would have been way more juicier
You know where I get my fried chicken? The black guy down the road and he's amazing at it and loves making it. Buzz Feed is that scared of being called racist, because people associate fried chicken with black culture, ( quite rightly as well because so many of the best fired chicken places are made by beautiful black people) that Buzz Feed are almost doing a reverse racist. Ha.

The drumettes are definitely white meat but the flats and tips are considered dark when it comes to cooking time like drumsticks or thighs.
