@chopsocky2309 yea, there is virtually zero egg flavor. If you use mozzarella cheese it results un a very neutral flavor and great for a sweet keto treat such as throwing a little dark chocolate on them. Alternatively you could make them with a cheddar or pepper jack cheese and use them for taste burger buns. In any case you'll have virtually no eggy taste and a consistency very similar to an actual waffle.

A basic chaffle is just egg & cheese.
Definitely don't need almond flour, which is high in oxalates, which can build up in the body, causing everything from kidney stones to joint pain, etc. They build up over time, so you don't know if it's a problem until it's too late. Then it can take years for the body to get rid of them. Under a microscope they look like shards of glass. I found out the hard way about all this so always try to warn people.
If you think about it, people never used to eat so many nuts. They were hard to find and harvest, and then used in moderation.

If that's a concern of yours there'd a whole lot of veggies, fruits and nut that contain oxalate, although a more animal based diet will significantly reduce intake of oxalate.
As far as how this relates to making some chaffles as a versatile low-carb/keto bread alternative... well for one the basic egg & cheese chaffle is not a bread alternative, it's just cheesy eggs.
In the recipe I use for 2 chaffles it called for 1tbsp of almond flour which is equivalent to about 12 or 13 almonds. Now people that have issues with oxalate and run the risk of kidney stones would need to eat (Disclaimer: I'm not a doctor but I know how to research) about 70-140+ almonds per day to really run a risk oxalate overload and kidney stone development. So if oxalate intake is a concern for you, unless you plan to eat 6-12 or more chaffles per day you should be just fine.
By the way the most common form of oxalate is calcium oxalate, and a vitamin h2 deficiency in the body can result in calcium buildup where it shouldn't be. K2, which is plentiful in particularly grass fed beef, helps in getting the calcium where it needs to go like the bones, teeth, etc
