This worked very well. I only used about 19g of gelatin and no sweetener so I can have this with sweet or savoury toppings. Made 10 waffles on a mini waffle maker.
I just made this for lunch and I really like it. I accidentally used allulose and the waffles did over brown a bit but it didn’t hurt the flavor. I did get confused over the measurements because I was converting the tablespoons into grams and I noticed that nothing matched up so what I did was I just relied on the gram system and measured out the collagen powder and the gelatin powder. I will say that possibly the measurements are off because my waffles were soft and not really similiar to a waffle on texturally. It was still really good with butter and I will be making these every day. Thank you so much for this recipe.
So glad you like them. Sorry, you got confused about the measurements. Just in case this helps: 4 tbsp collagen powder = 20 grams, 2 tbsp tbsp gelatin = 24 grams.

Unless using clarified butter, the smoke point of regular butter is about 250° - likely to burn on the waffle iron. I like them crisp, so I wait for the steam to almost stop. One concern here is the amount of collagen being consumed; daily recommendation being 5-15 grams. Since gelatin is also mostly collagen, we're looking at almost 45 grams of collagen in a sitting! In my case, it slowly dawned on me that I was feeling less than optimal in the hours following consumption - bloating, some abdominal discomfort. I've tried cutting the collagen and gelatin in half and adding a thickener (konjac, or xanthan, or Instant Clearjel) and it's a bit better. Some sources say that excess collagen can induce formation of kidney stones, especially on an already high-protein diet, and several other potential negative outcomes. YMMV.

Indeed, if you ate the whole batch in one day, your collagen intake would be about 45 grams. However, with the serving size being only 1 waffle, that would only be 9 grams of collagen, which is well within the recommended service size of collagen. If you feel bloating after eating the waffles, you definitely would want to reduce your intake. Having said that, I'm not sure if collagen causes kidney stones. As far as I know, there is no research showing that. I think it comes from research indicating that high protein intake is related to kidney stones, so some experts assume that collagen would also cause kidney stones. Of course, I'm no expert, so if you have heard of studies showing a link, I would be very interested. I have a large, four-square waffle iron, so I just eat all four waffles to get my egg intake. I miss the crispiness of most keto-style waffles, so your recipe is very much appreciated. Almond flour is an allergen for me, and coconut flour is okay, but the texture isn't great, is it? If I can find a waffle recipe that allows me to eat four eggs, and be crispy, without consuming an excess of any of the other ingredients, I'll be happy indeed! The quest continues.
I just found you and absolutely love watching your videos and seeing your ingredients. You are a rare low carb cook in that you use natural ingredients. Mostly, all I can find are recipes using products like bamboo fiber, which is sold in TBSP servings but used in cup quantities for bread (that quantity can’t be good). I can’t wait to try your bread and waffles first. The ingredients are what most people already have on hand and not outrageously priced. You make low carb affordable, healthy and it looks like they are absolutely delicious. Please keep making healthy recipes. I so appreciate your channel and YOU! I am using the same gelatin brand, and find that 24g is almost three tablespoons. Should I follow the weight instead of the volume measurement (assuming weight is typically preferable for accuracy)? Thanks!
Another waffle recipe, and another bust. Flavor wise they were fine. But in my belgian waffle maker, they got way too brown, and were limp and flat. I don't understand how you're getting fluffy, crispy waffles using this, or any other carnivore batter. When I open the lid, it's flopping out and thin as a crepe, just like every other recipe I've tried.

Have you tried this recipe on a Dash mini waffle or chaffle maker? I was wondering about measurements. I think I will give it a try.
I haven't. It's about 1/4 cup of batter for a standard size waffle. So maybe half of that? Just guessing.
If you whip in a tbl or two of melted butter into the mix, it won't stick nearly as much.
With all these great recipes with collagen and gelatin, I’ll stop adding collagen to my coffee!
