- I absolutely love Balti dhal fry. Whether you call it dhal, dal or daal, you have to make this one. Once you cook the dhal, which can be done a couple of days ahead of serving, the balti dhal fry can be made in less than 10 minutes. INGREDIENTS
2 tablespoons coconut oil
2 cloves
1 2.5cm (1") cinnamon stick
1/2 onion - very finely chopped
2 green chillies - finely chopped
1 large tomoto - diced
2 teaspoons chopped coriander stocks
3 - 4 clove chopped garlic
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1 cup cooked dhal
2 tablespoons ghee
3 dried Kashmiri chillies
1 teaspoon cumin seeds
A pinch of asafoetida
Salt and pepper to taste
Fresh coriander to garnish Хобби

Hi Dan, I've watched all your latest videos in the new Kitchen set and I'm loving these Balti variations. I've made the authentic Balti twice now and the second was even better with practice. I love your book but these are a great addition. I just wish that I had a gas hob so I could cook at higher temperatures and use one of those Balti pans. Keep them coming, Andrew
Hi Andrew. Thank you so much. Don't worry to much about the high temps. I teach classes regularly using electric hobs. The food always turns out just fine even without the gas. I'm really glad you are enjoying my book. Much appreciated! Dan
Hello Andrew, have you considered buying a single induction hob. One of those balti pans would work fine on it. I use a cast iron wok on mine and it is comparable to using a gas stove. Please ask if you would like to know any more. Take care.

That's going to be an excellent use of leftover dhal - well, as soon as I make a big enough vat to have "leftovers", seems to be a bit of an alien concept here.

1 part chana: 1/2 masoor daal
You could use masoor daal with this too. I have used chana and toor daal. :-)
Good authentic techiques, but the amount of oils/fats makes my chest hurt.
