Whenever you get killed by Sans and come back to fight him later, he makes a comment about your total deaths up until a certain point
There are two pieces of dialogue that I missed, which you get when you defeat him, reset the game and then fight him again:
"..."
"that expression that you're wearing..."
"..."
"well, i won't grace it with a description."
Doing this twice:

I think the interesting part is how at first player character wants to fight, provoking Sans by stepping closer, but every fight after that Sans is the one initiating combat.
They're getting tired of his shit XD. He's doing his job.
He's initiating combat on the first one too, but he just gives you the choice of fighting him or not
he can tell by their face that they've already been fighting. so he doesnt bother giving them an option.
Yeah I really like the first cutscene and then the whole fight without deaths, or else it just turns goofy.

I loved the quote sans makes when you spare him and get back to the middle of the fight

Taylor Gilliam Yea I may not be perfectly correct but it's either when you meet him again to fight or when the middle of the fight starts after you spare him that he says that. That quote had me dying of laughter.

Hard mode sans
Sans’ roasts get progressively more devastating, and are designed to break the player’s will to play the game.
Thats kinda the goal
Sans knows the resets and how much times you have played the game
So he trys to kill you to reset the game and go on a peace run where you spare every one thats why he says "guess i am pretty good at my job"
@@inksans9700 Yes exactly! Well except for Sans doesn't really care if you kill people (well he does morally) but his main concern is the world being erased. "everything just stops." He doesn't really understand why or how, but he's got a pretty good hunch it could occur sometime after the human completes their eradication campaign, so he steps in.
I find it really interesting. Sans is implied to be a scientist, so differing from Flowey, all his knowledge of resets, saves, timelines, and the world being erased is built on scientific guesses/hypotheses instead of absolute certainty.
Well thats the in game lore anyway, really toby was probably like, "I need a character that kind of calls you out" but he can't be as antagonistic as flowey. Also hi I'm a dog." Or something like that
It filled me with the will to close and restart to win the first time to undercut the speech😎
I don’t think anyone got his will to play the game "broken" by that.
Also on another note this idiot could have tried to reach to your humanity since he knows more or less who you are. Also if he did let you spare him he would have literally saved the world

yeah I even decided to get it on my own run by killing sans and close the game without saving. therefore I would be confronted with sans again who would remember his own death. he says a different thing until the second time you do it.

so back then i kept beating sans, but before killing him i quit and come back.

Sans is such a cocky bastard I love him! seems likes he's again speaking more to the player to make you feel bad about being a horrible person and going through with this
I just think he knows how rage-inducing battles like his can be. He gets the feeling you're mad at him and he decides to mock you and your rage at every opportunity.
Seen asriel's fight in the pacifist route? That would be classed as cocky to me...with the rainbows and the trippy background

I like that it's a neat meta quirk about the game but it also doubles as an anti frustration feature, essentially skipping Sans' monologue more and more so you can get back to the fight quicker

I’ts funny that after you die 12 times, he says “let’s just get the point”. I just love that he doesn’t want to talk to you anymore and just wants to make you suffer even more. And it also shows that Sans and Chara/Frisk remember different timelines.

maybe the reason why sans doesn't say anything after 12 is because he's starting to lose hope, prefering not to know how close you are to learn his atacks or how far you're starting to get. After all, imagine knowing how many times the person you've killed has come back, eventually it would just be depressing because you know that your dead will soon be close too

So what does the face of someone who dies 11 times in a row look like? And how could you see that in Frisk? I've never seen his face move.
His face moves while he has the shadow in the judgement hall.
Well, Sans was always an enigma wrapped in a riddle. I'm willing to bet he came from the surface and was taken in as a monster by... someone. Maybe Papyrus, maybe not.
TheSpadeace4 The Game Theorists compiled a theory that he is actually Ness. I'm not really inclined to believe it, though. My theory is too complicated to explain, so I'm just gonna say he's older than he looks.

sans taunting you for 3 minutes and 54 seconds straight
It's interesting that this timeline is the only one where Sans will actually push back against you. Sure, he threatens you, even in the pacifist run --- and he says he's sparing you for Toriel's sake. But I think it's more than that. I think it's also an indicator of just how depressed Sans really is. It's not just laziness. He even mentions to the player during this fight that they can't understand what it's like for him, knowing that everything will just be reset one day.
Sans is burdened by the knowledge he has. He knows you're much more powerful than him and can just reset everything, and there's literally nothing he can do about it. I think that's why, even in timelines where you kill his brother and friends but leave some monsters alive, he doesn't act against you. Because he figures it won't make a difference.
The no mercy route is different though. Sans knows the stakes are higher here and I think he realizes, as he puts it, that he "can't afford not to care anymore." Whether he knows it for certain or just has a hunch, I think he sees the end of everything looming in this fight. He's waited and given you so many chances to turn things around. Now it's the point of no return, and the only hope is to give you such a bad time that you rage quit.
Some will certainly argue that it isn't about trying to stop you --- that this is judgment. But I think it can be both. Yes, this is Sans fulfilling his function as judge of your sins and punishing you. But he IS also trying to force you to quit. I like how Sans doesn't just notice that you've already died to him, but takes the advantage by stopping his speech early
