I found that a sharper pickle works best. I used a Trader Joe's refrigerated dill the first time (that was the "stolen" pickle), and it was great! The second time, I used Trader Joe's kosher dills in a jar from the shelf. Not as good...too "sweet", not stringent enough. Go for the best pickles with no sugar in them or even stronger dills because some of the shelf dills are not sour enough.

At first I was skeptical, but I made it exactly with one small addition which was 2 tablespoons of nutritional yeast and I was pleasantly surprised how delicious it was. I taste very much like the typical Caesar salad dressing. Hats off to you! I served it to my dance class peers and I did receive compliments on both my salad and the dressing. I even recommended your channel.

I just made this and after many attempts at making various vegan Caesar dressing I finally found a winner. This is so delish that I wanted to drink it. The only changes I made were leaving out the oil (I’m oil free vegan) and adding about a half teaspoon of seaweed flakes (Dulse) to replace that anchovy hit in Caesar dressings. Just yumm!!!!! I was craving caesar dressing but had few ingredients and had to improvise. The Dijon mustard really helped make the caesar smell like caesar. Very good. Thank you!

I make a dressing very similar to this but use capers instead of pickles. Whichever you use, it’s an important ingredient for that salty, briny bite. I also like to add a couple dashes of a vegan Worcestershire sauce for additional umami, if I have it on hand (not critical, but a yummy addition). This dressing is wonderfully savory and my Caesar salad loving SO says my salad is his favorite!

As a non-vegan I'm often the first person to call bullshit on vegan recipes claiming to replicate the flavors of non-vegan stuff...but I'll be damned if this isn't a really good faux-Caesar dressing. Admittedly, it's been years since I made authentic, from-scratch, creamy Caesar dressing, so maybe my memory is off, but still, this hits a surprising number of key flavors I'd want in a creamy Caesar dressing. Even if you don't want to call it a Caesar dressing, you can just call it a delicious creamy cashew dressing. Whatever you call it, this IS really good. Thanks for the recipe - I'll absolutely be making this again.
OMG. 👍👍 I made this straight away. I didn't have capers, so substituted sliced Kalamata olives in brine. Then added a sprinkle of Nutritional Yeast. It's amazing. Will definitely keep this on the favourites list. TFS
