I have been rocking a UDS smoker for years along with weber performer and mini WSM. The pellet stuff didn't really do it for me so the fact that they came out with something that is convenient like a pellet cooker with the flavor of charcoal is amazing. Also ya I lucked out extremely hard I placed an online order with Lowes and it says they have one in stock so I am waiting for them to tell me to come pick it up. For sure man keep up the great content and ill keep you posted how things go!

I'm glad you showed the changing of the charcoal like that. I just ordered my 980 today and I was wondering if this was posible. Now I know that I can fill the hopper and cook and later change the fuel easily to ge different flavor fuel in for the next cook. Always learning something new!

@@ramtuff111 I have had my #gravity980 for a few weeks now. I am learning a lot with fine-tuning. Question: I put a Boston Butt on the 980 and the temperature was locked in perfectly at 300 degrees for over six hours. At hour seven, I went out to check the Butt and for some reason the temp. had spiked to 420 degrees. My oversite and trust in the 980 almost ruined dinner. You know so much about the 980; is there anything that would lead to this?
@@MrBaltimoreJoe sorry to hear that bro! What charcoal were you using? Lump? Briquettes? Did you add wood chunks to the hopper? Ash pan? Damper all the way open? It actually could be lots of things Thomas... but we'll do our best to help you narrow it down!

@@ramtuff111 Thank you so much for getting back to me. My charcoal was Kingsford Original and after a layer in the hopper I put 2 hickory chunks, and 1 apple chunk. In the ash pan, I placed 1 hickory and one apple chunk. Damper open, fan flap working etc.. The fact that the temps were spot on for 6 plus hours, and then spiked is weird. I might try to replicate this cook weather permitting using my meater block and the two onboard probes to see if this was an anomaly. Any tips? Once again, thanks for your help. Next up is your brisket recipe.
Anytime Thomas! We are #bbqfam As far as the wood chunks in the hopper.... that's was the one reason I always stayed away from that and just use the ash pan. I figure if the wood catches fire, it would spike the temp and ignite more charcoal than it needs. That was just my thought personally. I use the ash pan and just add one or two chunks towards the back and to the left. I hope that helps. Cheers my friend🍻🍻
Awesome job on the brisket!! My charcoal box will not come out of the shute anymore because it warped. Makes removing my ash and small coal pieces a real pain.
Really?? Even like twisting side to side and pulling up? Even with it in you can still pop out the little grate from underneath to let it fall in the ash pan
@@ramtuff111 Ya, I have tried everything to get it out. It seems like it swelled in at the bottom, in the middle where the the bolts are. I have been using my rubber mallet to tap on the little grate to get the ashes to fall out. Definitely takes longer to clean out now. I do like the flavor that this grill adds to my cooks compared to my pellet grill! And it holds temps rock solid! Cheers! :)

Brisket looks great! I just bought my Char-Griller Gravity 980 last week and smoked my first brisket on Sunday. It was really good, but I think it could've been more tender. I might have smoked it too long or too hot.
You said it was 1:30am when you put your brisket on the cooker. About what time was it when you wrapped it the next morning? Also, did you leave the rear vent fully open for the entire cook?

Thanks for stopping by Corey... we appreciate it! It was probably smoking at 200⁰f for a little over 8 hours. The bark looked good and set, so that's when I actually wrapped it. I believe it was sitting at about 158⁰f when I put it in the pan and wrapped. It was on average of about 207⁰f when I pulled it.
And yes...I run this Grill with the damper wide open the entire cook. I feel it'll give too much smoke if closed down. That's just my opinion tho.i love smoke flavor but at the same time, I don't want my food to taste like wood😉😉

I've seen you cook a few items in the 980, but I also see you have other cookers/smokers from Pit-Boss. How the the Char-Griller 980 stack up to your other cookers and smokers?
Hello Mike! That's a question we get a lot but, hard to answer. With the 980 being charcoal and my Pit Boss Grills bring pellets...I can't really compare them like I'd want. I will say that both styles will always have a place in my LAB! 😉😉 Cheers Mike🍻🍻
Really great video. Im a pellet guy at the moment, but it really think it lacks in smoke flavor even though it cooks well. With the handful of chunks of wood you added in the ash pit, did it add more flavor than if you did the same cook on a pellet smoker?
Thanks Christopher! I also own pellet grills and when I need extra smoke flavor, I use a smoke tube. This Gravity 980 is a whole new beast. Charcoal and wood flavor all the way through.

Congratulations on getting the Gravity 980!! I'm excited for you! You're gonna love it. Just make sure after you assemble it to make sure you get a good burn off and good seasoning before you cook anything.
As far as the coals go, basically right then and there it was time to add more. You want to try to get in the habit of not filling up the hopper all the time but only using the amount of coal you think you will need for the cook. So, of course an overnight cook it's going to be full. But say like a 3-4 hour cook... that's where we try to gauge so you don't waste lots of charcoal 👍🏾👍🏾

Thanks for asking David! I've never experienced anything drying out on this pit. She a must have beauty IMO. I absolutely love mine. Of course I've seen some problems some were having but knock on wood...I have not experienced any of them. I use mine like 3 times a week

What I like to know is how the charcoal hopper on your 980 starts out being on the left side and the controller on the right side and then later in the video the charcoal hopper is on the right side and the controller is on the left side and then they revert back to the positions they were in at the beginning of the video????? Thanks for checking it out Marcus! Usually when I do the overnight brisket, I start at 200⁰f until I get the bark I like and then wrap. After wrap I usually go 250⁰ until probe tender. Also, that depends on the brisket feel and or temp at the time of wrap😉 Cheers bud🍻🍻

Thinking seriously about getting this grill. Call Char Grill customer service today asking about how close it can be placed to a building. They said 12 FEET to a wall and 12 FEET to a ceiling. Seems awfully far. What do you know about this question. I want to cook with charcoal.

So I bought this grille Monday and got it put together and noticed the charcoal crate was missingis there any way you could give me the dimensions so I can make one myself called chargriller and they are currently not selling parts for this grille yet

Not in this one Denise! This is a Char-Griller Gravity 980 charcoal grill. The ones you are thinking of are pellet grills
No way I'm using one of those it's like using an oven I'd rather keep using wood & barbecue the Texas style low & slow.
They aren't for everyone Fabian. I have a Yoder offset that I love cooking on but sometimes having the time to man the fire isn't there. These Gravity fed smokers will get you close to that flavor. Cheers🍻
Brother you need to upgrade to the B&B lump charcoal. It will boost the wood flavor ....

Nothing wrong with that. We use what we can or choose. I'd highly recommend trying another brand tho if possible. That could be your bitter flavor. I use #TheGoodCharcoal which can be found at Sam's Club or online at The Home Depot
