  • Back to some good ol’ British Indian Restaurant (BIR) recipes with this high end Prawn Madras. Speaking of BIR, I'm pleased to announce the upcoming release of my new BIR recipe book, a sequel to my 2016 edition. Over the past seven years, I've immersed myself in curry cooking, and I’m so lucky have so many contacts within the Indian restaurant industry that have contributed greatly to the book with their recipes, cooking techniques and never revealed before tricks!
    This new book promises to deliver the most extensive and accurate book ever written on BIR by far. I too often hear from people that no matter what BIR recipe they follow, their curries are always lacking something and doesn’t taste quite like the curries they eat at Indian restaurants and takeaways. Well, this book will fill in this gap, and get all the real cooking techniques and recipes that will give you that real BIR taste in your recipes.     ½ tsp Turmeric

    Amazing recipe and instructions. A bit longer cooking time for the prawns for my taste. I like to take them out quicker. They overcook easily.

    how are you pre cooking the onions steven? And what base gravy are you using for this madras, is this the same gravy as in your book or your liquid gold video?

      I fry them in oil, turmeric and salt with enough water to stop them browning. About 20 minutes on a medium heat. I add a touch of vinegar to mimic the effect of leaving them to ferment, like the most of the restaurants do. Yep, liquid gold but you could use any recipe, base taste is pretty subtle 😉

    What’s the book called, and will it be available on Amazon? Great curries. I’ve learned a lot watching the RUclips channel, but I find it easier with a book.

    Wow that's so nice I love Currys . But I've just found out I have Colitis . And can't have spicy foods .(No Currys ) and madras is my favourite I'm gutted 😢😢😢😭

      The videos I make are actually food I eat at home. I don't just make these videos for show. So, I guess it varies depending what I want to eat 😋

      Define "real" lndian food....? There are styles of food from North, S, E&W. What about Pakistani, etc....? All use ingredients local to their geography? There is no such identifiable "real".

      well I've been watching Stevens channel for a while and been looking for a better/more experienced REAL Indian food channel so i will get rid of this channel and happily subscribe to your channel as you know what REAL indian food is.
