I've been trying to make BIR curries for over 20 (TWENTY!) years with varying degrees of success (ie not much!) starting with a jar of Pataks and an onion - and trying every other way since then! Discovered your channel, got the proper ingredients and an aluminium pan and made my first proper BIR Madras last night - and finally - FINALLY I did it. No question about it - the real thing. Absolutely amazing. Loyal subscriber here - you, sir, are a genius. Thank you so much.
Me too! tried tried and kinda failed. Saw Al's work and its straight forwards. Even developed my own base gravy too - getting cocky now!
Be careful with aluminium pans - you will end up with Alzheimers. Cast iron is the best. Heavy, but no leaching of vile aluminium which is proven v dangerous

Hat's off to all BIR chefs and yourself , without chaps like yourselves we'd still be cooking out of jars , so well done . Now then I really want that tandoor oven , but I don't do facebook , I'll give it a good home , and walk it everyday , clean up after it and make sure it gets plenty of exercise.
Make one, i did. And it's amazing, seriously. Plenty of tutorials here on youtube. And think about it, people have been using tandoor's for many hundreds of years and they all didn't have shiny stainless steel! Give it a go mate.

I've made a number of Al's currys now including this Madras which I made tonight.
it's fantastic, but if you are pre-cooking the chicken, it means that you are going to have a double helping of garlic/ginger in the end product. Some people may find this a bit too heany on the garlic, so perhaps it would be better to skip the garlic/ginger on the main cook, and just rely on the garlic and ginger that went in when you pre-cooked the Chicken.

Probably the simplest and quickest of curries to make but man its good.... very tasty and you make it easy to follow. Thanks.. only slight difference I added the lemon juice before the gravy.

Yet another mouth watering recipe to cook, as indeed has been all your previous I've had the pleasure of cooking, never been let down yet sir. One question that you might be able to answer, if I batch cook a number of dishes & freeze them, could this alter the taste when reheated? As for the tandoori oven, who wouldn't want it! so I'll make a claim, I really would love that tandoori oven!!

That Madras sauce of yours looked perfect Al. I like to be eat my Madras with a fork, so the sauce has to have the right (thick) consistency - the stippled effect, rather than looking like soup. Spot on!

Firstly I have to say that after living abroad for over thirty years your recipes are a life saver! Secondly, I'd love to know your true feelings when seeing a Chef dip his one and only ladle into every ingredient and spice he has? No question, Al's cleanly cooked recipes MUST be better than the bagutelle of spices on that chef's spoon?
