    Growing up on a farm not only did we raise cattle but corn. Field corn as we call it has a harvest window of 3 days. Anything less than that the kernels are watery and after the 3 days the kernels become tough/hard.
    We would every day go in the field and shuck an ear or two and press our thumb into the kernels and test them. When they are ripe that is when we get busy. We would by hand drive the tractor down the rows and two people with butcher knives cut the corn and toss them into the trailer. This is the corn we would put in the freezer for human consumption. One thing we would do after shucking the green corn was to remove all the silk, cut both ends off and put 10 or so ears in boiling water to 'blanch' the corn. We put some ears up whole and we would cut the corn off the cob for loose corn. Those memories were the best in the world.
    Usually about 400 ears would be enough throughout the year.

      @@alexturner8104 Hard corn is good for feeding chickens, cattle, horses, pigs and grinding up to make home made corn meal. The "3-day" corn window is what we would put in the freezer or cut off the cob and put it in plastic zip bags and put in the freezer. Fresh corn is really tasty.

    I worked in a cannery and our process was quite different. We made our cans on-site, the "sterilization process" were linear non-stop steam cookers, finished cans were warehoused without labels. Over 200 brands' labels were printed throughout the year as orders were received. We'd halt production for a couple days and rig for making cream-style corn. The facility smelled very sweet a couple weeks and but that disappeared for the final week as we prepared product for Japan; they have high import tariffs on sugar, so they add Japanese sugar in their kitchens.like Americans add salt & pepper.

More properly used it is a plant you eat such as; broccoli, lettuce, cabbage, asparagus. Tomatoes and squash are fruit (fleshy seed bearing bodies) yet most people think these are vegetables. What I call vegetables would not fit into your "tuber, seed, fruit" grouping.

    Seeing all this makes you wonder how it is sold so cheap in the store. While driving the back roads of Georgia I saw a huge field with a Green Giant factory sitting right at the edge of a huge corn field. Just picked and canning immediately is the key to any canned product. Thanks for this great video.

      Cream style corn is my favorite and I'll often open a can and just it it at room temperature.
      Don't tell anyone but the cream style is made from the lower grade corn that is not quite good enough to be canned as whole kernel corn.

    At 8:30 you say the kernels are blanched at 158-167 degrees, then you talk about the kernels being submerged in boiling water. Water boils at 212, and you're running at 158 degrees.

    9:39, I think NOT. The tin cans are not made of stainless steel. This fact is exactly why they need a liner inside of them. That inner layer is plastic not tin.

      I found a worm/caterpillar once in the corn on my plate when I was about 9 or 10 years old. Couldn't eat canned corn for many years after that. I think of it EVERY time I eat canned corn now, 50+ years later.

    Corn is great in all forms. You can eat it fresh or canned as sweet corn, you can use field corn for cattle feed, corn syrup, or ethanol. Very sustainable crop

    Prefer on the ear. Lol.
    Butter and salt with a spoon. And with soup. I worked in a canning factory. Many of the operations are similar but a whole lot faster. I worked the retort room with cages of cans. And also loading cans on the tracks for cleaning and filling. Continental Can I believe. I operated the long sweeper arm to load the tracks. Thanks for the video. Maybe one on cherry pie mix ? I’d love to see how that changed.

      Yes, sweet corn starts to lose sugars as soon as it is picked or if it is picked too late. As in any processed food sodium and sugars are added.

    We keep a small self opening can of corn in the tackle box when we go fishing. Makes great bait. The salty brine in the corn drives those fish into a feeding frenzy.

      They're NOT stainless. They're lacquer-coated on the inside. They'll STILL rust.
