Growing up on a farm not only did we raise cattle but corn. Field corn as we call it has a harvest window of 3 days. Anything less than that the kernels are watery and after the 3 days the kernels become tough/hard. We would every day go in the field and shuck an ear or two and press our thumb into the kernels and test them. When they are ripe that is when we get busy. We would by hand drive the tractor down the rows and two people with butcher knives cut the corn and toss them into the trailer. This is the corn we would put in the freezer for human consumption. One thing we would do after shucking the green corn was to remove all the silk, cut both ends off and put 10 or so ears in boiling water to 'blanch' the corn. We put some ears up whole and we would cut the corn off the cob for loose corn. Those memories were the best in the world. Usually about 400 ears would be enough throughout the year.

Cream style corn is my favorite and I'll often open a can and just it it at room temperature. Don't tell anyone but the cream style is made from the lower grade corn that is not quite good enough to be canned as whole kernel corn.
At 8:30 you say the kernels are blanched at 158-167 degrees, then you talk about the kernels being submerged in boiling water. Water boils at 212, and you're running at 158 degrees.

I found a worm/caterpillar once in the corn on my plate when I was about 9 or 10 years old. Couldn't eat canned corn for many years after that. I think of it EVERY time I eat canned corn now, 50+ years later.

I pour the can into a bowl and melt margarine, add salt & pepper - microwave it and go to town on it! Tastes like corn on the cob without the hassle.
