I grew up on a dairy farm and you are 100% correct. We took the calf away after the mom cleaned the calf. We gave it the colostrum milk from the mother for a bit. The mother started milking into the tank within about a week or less. Land o Lakes uses grade b milk for butter. We were grade A, which went to bottling plants for milk for drinking.

    The King's Breakfast by A.A.Milne
    The King's Breakfast
    The King asked
    The Queen, and
    The Queen asked
    The Dairymaid:
"Could we have some butter for
    The Royal slice of bread?"
    The Queen asked the Dairymaid,
    The Dairymaid
    Said, "Certainly,
I'll go and tell the cow
    Now
    Before she goes to bed."
    The Dairymaid
    She curtsied,
    And went and told
    The Alderney:
    "Don't forget the butter for
    The Royal slice of bread."
    The Alderney
    Said sleepily:
    "You'd better tell
    His Majesty
    That many people nowadays
    Like marmalade
    Instead."
    The Dairymaid
    Said, "Fancy!"
    And went to
    Her Majesty.
She curtsied to the Queen, and
    She turned a little red:
    "Excuse me,
    Your Majesty,
    For taking of
    The liberty,
    But marmalade is tasty, if
    It's very
    Thickly
    Spread."
    The Queen said
    "Oh!:
    And went to
    His Majesty:
    "Talking of the butter for
    The royal slice of bread,
    Many people
    Think that
    Marmalade
    Is nicer.
Would you like to try a little
    Marmalade
    Instead?"
    The King said,
    "Bother!"
    And then he said,
    "Oh, deary me!"
The King sobbed, "Oh, deary me!"
    And went back to bed.
    "Nobody,"
    He whimpered,
    "Could call me
    A fussy man;
    I only want
    A little bit
    Of butter for
    My bread!"
    The Queen said,
    "There, there!"
    And went to
    The Dairymaid.
    The Dairymaid
    Said, "There, there!"
    And went to the shed.
    The cow said,
    "There, there!
    I didn't really
    Mean it;
    Here's milk for his porringer,
    And butter for his bread."
    The Queen took
    The butter
    And brought it to
    His Majesty;
    The King said,
    "Butter, eh?"
    And bounced out of bed.
    "Nobody," he said,
    As he kissed her
    Tenderly,
    "Nobody," he said,
As he slid down the banisters,
    "Nobody,
    My darling,
    Could call me
    A fussy man -
    BUT
I do like a little bit of butter to my bread!"

Because most commercial cows are kept in stalls 24/7 sometimes 365 days a year and never see natural grasses etc. Only farms that are family run and are much smaller concerns have cows grazing naturally. That is why it is better to buy milk products at farmers markets and I assure you that you will never look at commercially made products the same way ever again. Yes, they are as expensive and sometimes more so but at least you are getting the quality you pay for. Commercially made cheeses pale in comparison to the same style of cheese made by hand using traditional methods. Personally, a lot of commercially made cheeses taste like flavoured cardboard in comparison to a hand made cheese of the same variety.

@@t.n.-js6ei Not saying that is impossible but highly unlikely if they had been a dairy farmer since birth. Do the taste test yourself. I have never encountered anyone that said commercial milk was better than fresh milk straight from the cow. Technically it is an impossibility as fresh milk has cream whereas commercial milk has none due to the processes it undergoes to end up in cartons etc. I would suggest your farmer has no taste buds left if he honestly stated commercial milk was better tasting than cows milk. But, hey anything is possible.

The tanks of the trucks aren't cooled. but isolated where the milk stays cool.

It depends, its the homogenization process - basically mixing the milk from 2 different cows together that makes the biggest difference. Pasteurization - heating the milk to destroy the natural pathogens - that together make the other difference. It depends on what the cattle are fed that make the real difference in the taste of the milk.

I always use unsalted butter when baking, because the amount of salt in a stick of butter varies. In cooking the variation doesn't matter as much as extra salt can always be added or even reduced.

Indeed, some do but in general not.
Fresh grass isn't available in the winter so cows eat fermented hay. In the Netherlands cheese made in the spring from milk from cows released after the winter outside eating new fresh grass is special and tastier than the regular cheese. And yes , there are farms with free cows who can eat and go to get milked whenever they want. Have nice big rubber beds filled with water to rest on while they listen to classic music (the cows prefer classic music)

If you were a dairy farmer you would soon learn why this is the practice. If you allow the calf to nurse from the cow for any time length, you run the possibility of the udder becoming infected, which means the cow would have to be medicated, and that would be a loss of the milk for several weeks depending on what medication was used. The calf will become used to the bottle quickly, but will resist the rubber nipple if it has been allowed to use the soft flexible teat on the udder. There is a lot goes into dairy farming and animal husbandry, and means to protect both the cow and calf are paramount, because any loss of milk or calves impacts the bottom line of the operation. Good husbandry usually does not involve a lot of human heart attachment, it just doesn't work in the farming industry!
