박력분 50g
말차 파우더 5g
베이킹 파우더 2g
옥수수전분 5g
물엿 15g
물 10g
녹인 무염 버터 60g (버터를 중탕 또는 전자레인지로 녹인다)
녹인 버터 적당량(틀에 바를 때)
1. 볼에 달걀을 넣고 거품기로 저어 푼 다음, 박력분, 슈가 파우더, 말차 파우더, 베이킹 파우더, 전분을 체 쳐 넣고 섞는다.
2. 물엿과 물을 더해 섞는다.
3. 녹인 버터를 2번 나누어 넣으며, 넣을 때마다 40회 정도 저으며 골고루 섞은 뒤, 주걱으로 한 번 더 섞는다.
4. 14인치 짤주머니에 반죽을 넣고, 냉장실에 1시간 정도 넣어둔다.
5. 녹인 버터를 솔에 묻혀 틀에 얇게 바른 뒤, 짤주머니 앞을 살짝 잘라내고, 반죽을 틀의 80% 까지 채운다.
6. 220°로 예열한 오븐에서 3분 굽고, 다음 180°에서 3분, 다음 160°에서 6분 정도 굽는다.(굽는시간 총 12분)
7. 다 구워진 마들렌은 한 김 나간 다음, 이쑤시개로 살짝 빼내 옆으로 세운 뒤, 틀에서 완전히 식힌다.

Ingredients:
60g egg
45g sugar powder
50g cake flour
5g matcha powder
2g baking powder
5g cornstarch
15g starch syrup
10g water
60g melted unsalted butter (melt the butter in the microwave or in a bowl placed over a pan of hot water)
a suitable amount of melted butter(coat the pan)
1. In a bowl, beat the egg with a wire whisk until smooth. Then, sift cake flour, powder sugar, matcha powder, baking powder and cornstarch and mix well.
2. Add starch syrup and water, and mix well.
3. Add melted unsalted butter in 2 additions, stir 40 times after each addition. Then mix once more with a rubber spatula.
4. Place dough into a 14-inch pastry bag and place in the fridge for 1 hour.
5. Brush pan lightly with melted butter and slightly cut out the front of the pastry bag, and fill the dough up to 80% of the pan.
6. Preheat the oven to 220°C, and bake for 3 minutes, then bake at 180°C for 3 minutes, then bake at 160°C for 6 minutes. (Total baking time: 12 minutes)
7. When madeleine is done, let cool in the pan 10 minutes. Then carefully take out with a toothpick and set up sideways and cool completely in the pan.
