- Hey Kale Sandwichers! Here's a veganized version of one of our favourite street foods from our pre-vegan days. Hong Kong curry fish balls. This very popular food on a stick is typically sold in stalls & stands all over Asia and local Chinatowns around the world. We were at Pacific Mall (our local Asian mega mall) the other day and saw them selling these and we just knew we had to figure out how to replicate those delicious balls on a stick! So here it is... our vegan version of Hong Kong curry fish balls, hope you like it!
Ingredients
Vegan Fish Balls
325gr firm tofu*
1 tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
25 gr roasted seaweed (we used 2 individual serving packs)
½ cup potato starch
½ cup wheat gluten
*Tofu must be firm so it forms a stiff yet bouncy dough. If you use soft/medium tofu there will be too much water content for the amount of wheat gluten written in the recipe for the correct texture
In a blender or food processor, blend tofu until smooth. Transfer to a mixing bowl and add salt, pepper, garlic & onion powder. Add cut seaweed and mix well. Next add potato starch and mix throughly until combined. Add wheat gluten last, it will bind together very quickly once you start kneading it. Knead for 1-2 minutes until a ball forms and roll into smaller pieces. You could make any shape you want at this point, just make sure they are all uniform in shape and size so they cook evenly. We roll them to about the size of a large marble, 1 inch diameter.
Heat up 1/2 inch of oil on medium heat (350 degrees F) and carefully add fish balls. Do not overcrowd the pot/pan because they will expand slightly. Cook for 5 minutes until light, golden and crispy. Remove with a slotted spoon and drain on paper towel or rack.
Easy Curry Sauce
3 tbsp minced shallots
1 tsp curry powder (use your favourite, we like Madras curry powder)
¼ tsp chili pepper flakes (optional)
½ tsp sugar
¼ tsp ground white pepper
2 tsp soy sauce
1 cup water
½ tbsp cornstarch
Salt to taste
Mix curry powder, chili pepper powder, pepper & sugar with soy sauce and 1 tbsp of water to form a paste. Mix cornstarch into water and set aside. In a pan on medium heat, add 1 tbsp of oil and shallots and fry for 2-3 minutes until lightly browned. Add curry paste and fry for 30 seconds until fragrant. Add cornstarch water and stir. Bring sauce to a boil to thicken. Reduce to low heat and add about 15-20 fried vegan fish balls. Simmer for 10 minutes stirring occasionally. Serve with rice or noodles or on skewers as an appetizer. Enjoy!

We don't see why not. We don't have one of those but it will probably work just as well as frying! 👍🏽

I just binge-watched 10+ of your videos after seeing the one on Veg Food Fest. It's so great to see vegan resource from Toronto! Now I must try Tenon as well. Question for the fish balls: Do they freeze well? And do they stay put if I were to add them to in a noodle soup dish?

Hello! Great question... Yes, we have frozen these "fish" balls with success! We like to make a large batch and freeze them after they have cooled from the frying. They are wonderful added to soups and other dishes that call for a fish substitute. Hope you enjoy them!

Vegan beef balls recipe please
Looks awesome! I wonder if you could boil them like matzo balls to save the oil. Might need to add some binder though...
They are pretty dense in texture so the balls will probably hold up well to boiling. Not sure how much water they will absorb though, as wheat gluten in seitan recipes expand quite a bit during the boiling process. It's a good idea though, let us know if you try it. You may also have to flavour the stock you boil them in as they may be plain boiled in just water.

What would happen if you blended everything up at the same time in the blender? (Besides having green fish Balls?) would the taste be the same?
patty 8873 They would probably end up a bit tough from the gluten getting overworked if it was everything at once, but you could blend everything except the gluten in a food processor, then maybe add the gluten & pulse a bit to incorporate it (or mix the gluten in with your hands)
Yes, you can blend everything except the wheat gluten together. As +Zim M said, it may get overworked if you mix in the gluten at the same time.

you'd probably be pressed to find a decent substitute as the gluten flour is what gives the texture a 'meaty' bite to it

Love your recipes! Don't currently have wheat gluten at home. What do you think about substituting with bread flour?

Do you think boiling the balls to cook, rather than frying would work? Also what oil do you use to fry?
We use sunflower oil for deep frying foods. You could probably boil them in some well flavoured stock. They may be softer in texture as they will soak in some liquid.

That is actually a very good question because we have seen it labelled as both vital wheat gluten and wheat gluten so sometimes it may be confusing. It is the same!

We hope you enjoy them. These vegan "fishballs" go well with many typical seafood type recipes you would usually use regular fishballs in.

Yes, rice starch may work. Cornstarch may be too gooey. Let us know how it goes if you use either.

I wonder if i could use quinoa okara instead of tofu?
Quinoa may work because it does become a paste when blended so it will help bind. You may have to play around with the proportions for the wheat gluten though.

I did try the quinoa okara variation. Made a half batch. Interesting and yummy result.
I fried them in a pan with a little coconut iil. Forgive my bluntness : Shit was on point !!!
The okara gave it a breaded texture, taste and appearance. Fishsticks, it was like fishstix. Taste was on point.
Had i changed the seasoning it would have been mock chicken fingers or fried steak.

Roughly, i might have added a tad more of gluten and starch, but i liked the moderate chew.

That recipe just keep giving. I just made a Falafel variation, simply replaced the tofu with blitzed chickpeas, adjusted the moisture with vegetal stock and voila. Texture was on point.
I like it more than the okara variation that can be hard to digest at times. I do all kind of test, all kindz.
