I think after trying this, I'm going to try to wrap the large patty in bean curd skin and deep fry it to see how well it resembles the Vietnamese dish Tau Hu Ky (shrimp puree wrapped in bean curd skin and deep fried) since I haven't been able to eat it since going vegan.
We have access to a vegan kombu dashi here in the Philippines. It tastes like bonito or shrimp powder. I think it'll work great here to give it a more fishy flavor. I can't wait to try this, thank you Mary!

My husband and I used to love ordering tofu ball hot pot from a Sichuan restaurant near us, but we moved states away a couple years ago. I haven't been able to find a recipe for tofu balls, but I have been making okara croquetes with nori. I will have to try these out, or add wheat gluten instead of flour to my okara mixture!

It was so good. I will try your version w/ gluten too. I will let you know how it is different from my concoction.

Trying to think of what I can use instead of the gluten (I'm allergic). I wonder if a combination of psyllium husk powder and xanthan gum would work. I worry that it would be too dense and gummy though.

If I could make one thing vegan that isn't it would just be plain fish. Just that naturally flaky stuff like salmon, not breaded, not fried just like off the grill. I don't like any other meat plain. My mom used to make me eat plain undressed salad bar chicken I never enjoyed it. Never a steak fan either. I'm the Least picky eater I know if taste was everything to food I'd eat just about anything. But back to the point I'm not sure if the tofish thing would work for a regular fish fillet.

If being vegan is so important to you and you can't bear seeing animals and living beings being consumed , then why do you want to call the food you eat as "Fish" Tofu. Just call it vegan tofu. I will never understand vegans and their obsession with calling the food as (meat name + vegan).

try konjac flour? I use it as a binder for my GF buckwheat pancakes, and it's not gummy at all (it's from the plant root).
