BAKED PUMPKIN SPICE OATMEAL MUFFIN CUP RECIPE
3 cups rolled oats
1 teaspoon baking powder
1.5 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt
1/2 cup pumpkin puree
1/4 cup maple syrup
2 pastured eggs
1.25 cups milk (I used almond but you can use any you milk you prefer)
1/4 raisins
1/4 pecans
Pre-heat oven to 350 F and grease a 12-cup muffin tray (I used cooking spray to keep it easy but you can use butter or coconut oil as well).
In a large bowl combine all of the dry ingredients; rolled oats, baking powder, pumpkin pie spice, and kosher salt. Mix well and set a side.
In a medium bowl, combine pumpkin puree, maple syrup, eggs and milk. Whisk together and then pour the wet ingredients in to the dry and stir until well combined.
Gently mix in the pecan and the raisins and allow to sit for 5 minutes to allow the dry oats to absorb some of the liquid.
Evenly divide the mixture amongst the muffin cups and pop in the oven for 20-25 minutes or until cooked through and golden brown over the top.
Cool and enjoy!

Hi Dani. I love your recipes and would love to try this one too. Unfortunately, there is no pumpkin pure in my country available, so with what could I substitute it? Maybe apple sauce, but would the same amount work do I need more or less? Your answer is very well appreciated.
Sweet potatoes or butternut squash - pureed would work!

Same problem here. I see so many great pumpkim recipes but canned puree is totally uncommon in Germany. If I have to make my puree first from scratch, the whole recipe is not as fast and easy anymore but I will finally make it this fall.

I have started eating healthy wholesome food, and drinking a lot of water, and exercising. I watch your channel for inspiration and recipes, I just wish that maybe you would INCLUDE A ESTIMATED AMOUNT OF CALORIES PER SERVING FOR YOUR DISHES. These muffins are so good! I added 1/4 cup swerve for more sweetness. I also added walnuts and cranberries. Then my husband wanted something else beside pumpkin so I made apple and pecan ones. Cooked the apples and added cinnamon then mashed them up and added to your recipe instead of pumpkin. This can made changes up so many ways!

These are delicious! I baked these up and they turned out great. Now they're a regular item on the menu. I love how you always note possible substitutions for fitting one's particular diet.
Here are my changes:
- Ground up the oats beforehand to make the batter a little smoother
- Subbed out the maple syrup for 1/2 c of xylitol for lower sugar
(and added 2 more Tbsp of pumpkin to make up for the lost moisture)
- Subbed out the raisins for coconut chips - also for lower sugar
- Added a tsp of vanilla extract
One time I was out of pumpkin, but subbed some steamed, mashed butternut squash and I couldn't even tell much of a difference.
I also froze one and it was fine, but no need to freeze 'em cause they go pretty fast :-).
This is basically the best thing ever. I’ve been looking for oatmeal based recipes (oatmeal is the best)
Never saw this channel until the other day, watched this one, grabbed the ingredients from the store the other day, and put them together this evening. The full portion fit into a 6x cup tray I have, the big muffin size, perfectly. THEY ARE SOOO GOOD! Smear some butter on top when they are still warm.
I used whole milk (unpasteurized). Also Grade B maple syrup.

I made these and they were delicious! I had to forgo the nuts and raisins as I had none on hand. I added chocolate chips as I did have some left overs. The only changes I made was, I added a full cup of pumpkin purée and baked in a loaf pan. I baked it longer also. It came out so delicious and moist! Thanks Dani!

Just made these with the cranberry version. Presoaked the dried cranberries first and they stayed plump and moist. Used Yacon syrup instead of maple for an even lower glycemic index. Came out Clean and Delicious!!
Coming across your channel has been a Blessing for me. I was looking for some recipes with healthier ingredients for my family. Recently learned my husband is diabetic.. Dr told him to stop the carbs. After we viewed some of your recipes he was pretty stoked he doesn’t have to give up on all the food he enjoys. Yes! More on-the-go meal ideas in general, please! I am a pet sitter and dog walker and own a very successful business, but that means I reach for fast food way too often. I was just diagnosed as pre-diabetic with an A1C of 5.8, so I have to figure out how to pack healthy meal options to go!
These are yummy! I did use quick oats, added a couple tablespoons of real 100% peanut butter and an extra tablespoon of raisins. I cooked them for 30 minutes.

How did they turn out?
I tried this recipe and loved the muffins! Instead of raisins I used dried cranberries. Also used almond, pumpkin seeds, and walnuts along with pecans. I also added a bit of stevia. The muffins were delicious! I also tried your banana oatmeal muffins and enjoyed them. I like your recipes as they normally require the ingredients I have at home, and they are healthy and delicious.
Tried this today. No maple syrup so I used agave nectar. Worked out fine. Honey would likely work also. Lightly sweet. Nice breakfast food. Wrote down the banana/apple variations also. Thanks!

Looks like a wonderful recipe! Definitely gonna try them this weekend 😋😋 I wonder if I blend half of the oats into a flour, then mix them back in with the rest of the recipe, they’ll absorb more of the liquid faster and it won’t be as soupy pouring them into the muffin tins 🤔

I haven't tried it yet, but my guess is that a flax seed or chia egg would work OR maybe even some applesauce.
I just made these using unsweetened applesauce! It worked!

Can you make a healthy muffin without using rolled oats? Maybe a whole wheat flour or almond flour?
Of course you can just look up muffins made with almond flour etc.. never forget always use baking powder. Any brand of baking powder is good. It doesn't contain aluminum. Baking soda on the other hand some do.
Baking powder does indeed have aluminum in it, unless it states that it is aluminum free. It's baking soda that does not have aluminum in it.

Hi Dani... I made your muffin recipe yesterday....they were a big hit!! I must say I was a little skeptical because the mixture was a little too runny for my liking, however, you were right, they turned out perfectly and not too sweet which is great because you can add sweetness by way of icecream, jam, butter or more maple syrup.....
