- Welcome to my channel. I want to share my Korean food recipes with all Korean food lovers.
Please note that I'm using international measurements. My cup is 250ml and tablespoon 15ml and teaspoon 5ml. Check your measurements (you can download the converter app easily in the app store).
And I'm not promoting any products. The reason why I show you the products I'm using is... I want to point out if you use other brands you might adjust the ratio a little bit. And also the reason why I made the recipe a very small amount is... when you try a new recipe, please make it a very small amount and then make an adjustment then you decide your final recipe. That's what I do too.

*Original Dasida recipe
water 550ml
chili powder (finely grounded) 2 teaspoons = 10ml
Dasida (Korean beef powder) 2 teaspoons = 10ml
soy sauce 2 teaspoons = 10ml
black pepper 4 shakes (finely grounded recommended)
vegetables (chopped green onion and shredded carrots are recommended)
*Chicken powder recipe
water 550ml

chicken powder 2 teaspoons = 10ml
(knorr is recommended, I didn't test other brands)
soy sauce 3 teaspoons = 15ml
black pepper 4 shakes (finely grounded recommended)
vegetables (chopped green onion and shredded carrots are recommended)

Fine chili powder 1T
Korean Soy sauce 2T
Black pepper 4 shakes

Dasima(konbu) 5 grams
Pyogo(shitake) 10 grams
Onion 10 grams
Garlic 5 grams
Ginger 1 gram

I made my first homemade ramen powder last summer and it has been loved by so many. People love that recipe for many different reasons. Some people like it because they want to reduce chemical ingredients. And some like it because they can’t buy Korean ramen from where they live. For me, I like my recipe because I can make it a little bit different each time. And also I can treat my own ramen to my friend saying “This is the My own private ramen. You cannot have it anyplace else in the world” and that is my favorite part of this recipe.
So today I gave you the idea of how you can make your own ramen. I gave you 4 ingredients, now it’s your time to expand it. Let’s say you don’t have gochugaru, Korean chili powder, you can skip it! Then it will become clear black pepper ramen soup.

This is amazing totally underrated, we were all amazed at the taste! Tip for everyone you can substitute dasida with chicken stock and add garlic powder and a pinch of sugar for the extra flavour. It’s sooooo gooooooddddd 💗

I added 1 tbs of gochujang and oh my god it was exactly the same! Shin is kinda overpriced in my country so this recipe will really help with my spending habits 😍

I'm honestly amazed at this recipie. I had some leftover spaghetti noodles from dinner and got hungry at night so I just made the chicken stock version of this. It may not taste exactly like shin ramyun but I've been trying to reduce my plastic waste recently and this is honestly delicious enough that I'd eat this everyday instead of shin ramyun - unless it's a special occassion. I'm going to have to find some dasida to make it properly now.
So happy to hear that you love this recipe. Sometimes simple is the best! Try the ramen noodles I used for this video. It is Ottogi (Korean brand). And without powder, it is considerably cheap but I love this ramen noodles the most among all Korean brands. Dasida is a game changer for this recipe 😋

I moved to Mexico, and cannot get my favorite Korean Foods like ramen so I’ve had to learn to make it myself which I don’t mind bc I love cooking! I’m soo excited to try this bc I really wanna be more in control of what I eat

I was skeptical of this recipe because I generally pretty heavily season food so I thought it would be flavorful, I had to use beef stock because I didn't have dried beef powder but it tastes AMAZING and super close to the noodles it's based on!

WOW! I MUST try doing this flavouring!!! It looks delicious... and with the Dashida, maybe closer to the Shin Black (my favourite)? And... is there ANYTHING Dashida can't make better? I go through it like crazy - something is meh tasting? A sprinkling of Dashida and it POPS. Great video, I'll be making this SOON!
This recipe allows you to make a typical Korean ramen broth. For Shin Ramyun Black, you might need to add mushroom powder or bone broth (possibly even milk?) additionally. With a little more modification to this recipe, you can create your own ramen. I hope you succeed. 😘

I know this vid is a little old, but found this recipe recently !! I have a soy allergy and gluten sensitivity that I found out about this year and the number one thing I've been craving and missing is ramen, specifically shin ramyun, though. I had to alter this a bit due to those allergies, and instead of the dashida I used hondashi, and instead of soy sauce I used coconut amino and I added salt since the coconut amino is not salty like soy sauce. I then found ramen noodles made with millet instead of wheat. When I tell you I went to heaven on the first bite OMG. It wasn't EXACTLY like shin ramyun but man oh man it was close enough dare I say better! Hubby is not really into ramen and tried it and wanted the whole bowl!!! Thank you for this recipe,even though I had to alter it a bit, it served as an amazing blueprint. it has been a life saver and sooo delish!!!

I do something similar, I’m allergic to soy sauce so I skip that. I use gochujang instead, and add Japanese garlic powder. It’s pretty much exactly like Shin Ramyun!
@@lolasaysyesyes! I use the Korean fried chili powder bc I can't have gochujong either since it has soy in it as well (I really miss it too!!) Eating the ramens this way makes it sooo guilt free with the simple and cleaner ingredients and comes together almost as fast!! I've taught my version to family now and they make there's from scratch sometimes too!!
It would be an absolutely dream to never have to buy ramen packets but be able to make them all the time. My second fav is neoguri spicy seafood if you can please let us know the seasoning for that is? I feel like I could get, if I don’t already have all the ingredients!! 💖💖 thank you so much already

Can i replace dasida or other stock with MSG? I have msg, chilli powder, black peppers, and soy sauce. I can go out and get chicken stock but i prefer staying at home because my country is currently in Lockdown..

should i find some kind of substitute for spice (does the overall flavor dependent on it) or can i just skip it if i can't handle it? :)

Ever since I saw this recipe I make my ramen like this but to upgrade this ramen to another level add 3 cloves garlic , half tsp sugar and I prefer chicken powder it’s delicious try and then reply!

@@SoraJoanna I think you recipe is still going to have less salt then those little packets and you can adjust how much you use. Either way, yours is so much better:)
Can I use Hondashi instead of the beef base?
You can try but I can’t guarantee the result. I tested this recipe only with dasida, knorr chicken powder and my homemade vegetable powder
I use chili powder, dasida, and gochujang as I don’t eat soy sauce, and add some Japanese garlic powder instead of black pepper.

Where do I get the spices from?
What spice you're asking? Most of the ingredients you can find in Korean grocers. But in case it's hard for you, use any local ones and I shared the tips in the video... 😅 I tried to include many options for people who don't have access to Korean grocers.
Can I use beef bouillon?
Yes but you may need more salt and/or soy sauce. With Daisida I can guarantee the taste but without it I can’t guarantee. Sorry.
Can i use homemade dried beef powder ?
Sure why not? Maybe you need to add more salt/soy sauce to season. Good luck 🍀

I used the Korean chili powder and I explained some details in this video at 3:40. I sometimes use any chili powder if it’s handy and it works fine too though Korean chili powder is the best for this recipe.
