Howcome you dont have to cover with water? From my understanding, ferments grow bad bacteria when oxygen is present. But no one on youtube makes kimchi and covers it w water and seems to work for them
I’m sorry but I don’t understand what you mean by “cover with water”. Do you mean liquid from kimchi?
@@SoraJoanna Water seal. There is a lady who pickles vegetables and uses a water seal to keep bad bacteria out.

Yes you can. I also use induction cooker with this.

How can i make this
I mixed cooked rice with sesame oil, seaweed flakes, sesame seeds. And made a ball out of rice using both hands.

I made kimchi for the first time, is it normal to be bitter?
Kimchi can’t be bitter unless you use the bitter vegetables on purpose. Check out my recipe ruclips.net/video/FBMahHCJFtE/видео.html
I didn't use bitter vedgetables, just the cinese cabbage, green onion, daikon, carrots, ginger, garlic and then the spices. It's not really bitter but it has a slight bitter aftertaste 😅 I'll try your recipe next time!
I searched it up on the internet, some say that adding too much garlic may make it a bit bitter or the bitter taste may come from freshly made kimchi (?) and to let it ferment a bit longer
