Turn your Chicken Ramen into Spicy Korean Ramen

  • * Note that the average Korean ramen weight is around 120g so I used Maggi Noodles Chicken Flavor "Big Size" which is 103g. It is 30% bigger than regular-size Maggi Noodles. Please check your ramen weight and adjust my recipe accordingly.
    More information about each ingredient (including substitution ingredients)
    1. Chili flakes: I intentionally use Domino's Chili flakes because I want to make this recipe "global standard". The qualities of chili flakes(chili powder/ red pepper powder) really differ. I tested this recipe with my own homemade chili flakes, store-bought chili flakes, and local finely grounded chili powder and each time result was too different. One sachet of Domino's chili flake is around 1 teaspoon. You can use any kind of chili flakes or powder and you can substitute this with Fresh chili or dried Chili.
    2. Shitake Mushroom slices: In Korean 표고버섯, Pyogo Mushroom. I prefer sliced ones because it takes longer time for whole ones. If you have a whole dried one you can crush it into small pieces to use. This ingredient is optional but if you like the taste of Shin ramyun then you need to use shitake.
    3. Konbu(Kombu): In Korean 다시마, Dashima. You can add a very small piece of it and it’ll enhance the flavor like msg(same with msg, too much will ruin the flavor). There are many kinds of seaweed in Korean cuisine so don’t get confused and use other kinds of seaweed.
    4. Gochujang(Korean chili paste): you can substitute this with 1 more teaspoon of finely ground chili powder and some salt. But as I mentioned in 1. The result depends on the taste of each chili powder/flakes you use.
    5. Fresh vegetables: Garlic is quite crucial but carrot and green onion can be substituted with any vegetable of your choice.
    6. Black pepper ground: For a similar soup texture you better use finely grounded black pepper. However, any black pepper can substitute. I chose this brand simply because it can be found in any place in the world.
    7. Olive oil(cooking oil): Average Korean ramen has some oil in the soup because its noodles are deep-fried and then dried. This Maggi noodle has almost no oil so I add some oil. In case your ramen already has oily ingredients you don’t need to add this ingredient.
    8. Vinegar: Any average vinegar without a strong smell or flavor will do. Vinegar will work as a flavor enhancer but crucial part of this ingredient is how much. 2-3 drops (⅓ teaspoon) will work like magic but more than that will ruin the whole flavor. BE CAREFUL not to use too much.

    excuse me, do you know how to copy Nongshim AnSungTangMyun's spice mix?

      Did you watch how to copy my basic Korean ramen ruclips.net/video/9sSjzOy-KUY/видео.html ? I guess you can use one teaspoon less than this recipe and add Korean soybean paste (Doenjang) for Ansungtangmyun. Or use no soysauce at all and substitute it with soybean paste. Hope you will get what you're looking for 😇
