  • Shin Ramyun is the Best, but not so healthy...so let's make our own! Healthy Panda Express Orange Chicken: • Homemade vs Panda Expr...
Healthy Chick-Fil-A Chicken Sandwich: • Homemade vs Chick-Fil-...
    Homemade Shin Ramyun Recipe:
    1/4 cup ground beef
    1 carrot, sliced
    2 green onions, chopped
    2 teaspoons mushroom powder
    1 teaspoon fish sauce
    3 cups beef broth
pinch of dried wakame / seaweed
    bok choy
    mushrooms
    Spicy Sauce:
    1 tablespoon gochujang
    1/2 teaspoon gochugaru
    1 teaspoon chili sesame oil
    1 garlic clove, minced
    2 teaspoons honey
In a bowl, mix the gochujang, gochugaru, sesame oil, garlic, and honey. Set aside.
In a heavy bottom pot, add the ground beef and break it up to cook through. It'll start to render and brown. Add the mushroom powder and then the green onion (white part only), and carrots. Saute for a minute or two in the beef fat and then add the beef broth, fish sauce, and the pinch of wakame seaweed. Put in the preferred amount of spicy paste and let it come to a boil for 5 minutes.
Add the ramen noodles in and cook for 3-4 minutes, then a minute before it's finished cooking, add the bok choy and mushrooms.
Pour everything into a bowl and enjoy!

As a Korean, I have almost all these ingredients already in my kitchen. The only thing I don't have is that umami mushroom powder. I want to try this because I've had to cut out so much of my comfort foods ever since one of my medications damaged my kidneys. Now I have to eat a low sodium diet, and that pretty much cuts out everything I used to eat. It would be nice to find ways to bring back the flavors I grew up on.

We love the black package! Great for warming up during the winter months. We always add sautéed mushrooms, bok choy, green onions, and sometimes sautéed chicken to bump up the nutrients/satiety.

I would eat both the instant version and the healthier at-home one. If I want a quick snack the instant one is good, but for more of a meal, the homemade one is much better.
My favorite Ramen is Indomie Mi Goreng Hot & Spicy, I would love to learn how to make a healthier at-home version.

It's funny. I'm starting a healthy ramen channel and saw this video pop up haha. As a chef, I've always wanted to redo the traditional recipes and make them healthy. Good job! I filmed my first episode and used exactly the same noodles. They have the lowest sodium I could find on Amazon. The fish sauce was a nice touch.

0:57 That's why when it comes to instant ramen, I only prepare and consume HALF a pack at a time, but use the same amount of water as though I'm cooking the whole pack. I not only add a slice of cheese to enhance the flavor of the broth (such a clever way of seasoning!), but also go crazy on the vegetables like bok choy, kimchi, scallion, bean sprouts, corn, in addition to proteins like tofu, chicken, or thinly-sliced beef. Definitely feels like eating a gourmet meal every time!
