Interesting! For me it's been a years-long research program to try and eat better, more healthy, more sustainably, while still making it enjoyable. I also learned that everything I was taught about diet and nutrition when I was young is wrong 😄

In a chilli or a stew it can make most veg dishes taste meaty an savoury. I don't eat a lot of meat so its handy to have if you want the taste. Hope you get well.

Oh, cream cheese. Dairy is highly inflammatory and they say 95% of the Asian population is lactose-intolerant, and you are Asian, prof, and more than likely lactose-intolerant. I was in denial about my lactose-intolerance until I decided to go vegan last Veganuary, and since, my terrible muscle pain, tightness and inflammation in my neck, back and shoulder area, that I’ve suffered for thirty years, is 95% GONE. And my chronic, inflamed, painful, bleeding hemorrhoids haven’t flared up since. I’m pretty sure it was the dairy. That half and half I’d have with my coffee twice a day was wreaking havoc on my health. I feel awesome and normal now and will never, ever go back to eating animal products again, if I can help it.
Perhaps you should look into a plant-based diet. At least cut-out the dairy, which is full of hormones from the momma cows and is linked to prostate cancer, breast cancer, allergies, asthma, etc. Food is medicine. Best wishes!
