We are kicking it off with Restaurant Style Mexican Rice and we are making it taste just as good as you get at the Mexican restaurant, but ours will be oil-free. I just left your area after helping my son and his family move there, the weather was great, I can't wait to get home and back on track, I did great at my son's house but the car ride through some out of the way areas has been a challenge. Just want you to know I love this recipe I have used it multiple times now whenever I make rice I use this and then when I make veggie burgers or lentil loaf or anything that I use rice in I use this recipe thank you so much

This reminds me of the rice my grandmother made in her cast iron pan. Her seasoning a bit different but browning the rice is delish! Difference is, yes, sage, onion, pepper and crushed tomato. BTW, I was raised vegetarian and am 70+!😎

Loving your Spanish Mexican rice here great idea of toasting the rice in the pan give it some flavor and color loved all the ingredients from the tomato paste to the garlic to the vegan chicken bullion that probably gave some amazing flavors delicious rice
I love Mexican rice. I recently discovered the refried beans and Mexican rice packs at Costco and it’s so quick and easy. However, yesterday I made Refried beans from scratch, my first ever attempt and now I can make my own. Now to give Mexican rice a try. 🌟
Giselle, the rice at home is amazing. We make refried beans for my son every Sunday and he eats them all week. He can live on refried bean and cashew cheese burritos. Thanks so much for watching
Wow you've lost 35 lbs?!? That's so amazing!!! Interesting way to get the oil golden brown. Great idea to basically have the rice absorb the tomato sauce rather than just water. That sounds super tasty and soo awesome it's oil free too. This is a great base recipe, but do like Tim's idea of adding peppers, tomatoes, or whatever. You can totally customize it. Looks super flavourful though.

Those water bottles are NO JOKE! You could do some squats and bicep curls with those bad boys, lol! I LOVE Mexican rice but have never attempted to make it at home. I am definitely going to give this a try. It looks so darn easy!!
I bought seaweed sheets at the Asian market. They are high in iodine and b12! Who knew? I’ve always eaten seaweed since I was little so I don’t mind chopping on one a day 😅
YES!!! But Oil Free is what I've been telling my partner. He thinks oil has to be used when cooking. I tell him, please do not use oil, and he complies, but I do most of the cooking now. He still thinks olive oil is a good way to get fats in the diet. He gets most of his oil in peanuts, versus oil I. I'm looking forward to 1- making this Spanish rice in my new Aroma multicooker (the second half of cooking) and 2- to more "But Oil Free' content. Thanks! Linda
Most of the world thinks olive oil is a healthy fat. Its crazy. Olives are a healthy fat. Olive all is all processed and 100% saturated fat. The fiber has been removed. Nothing healthy about it as you and I already know. Thanks so much for watching.
Love that you toasted it, makes the rice much more fluffy. Traditional Mexican rice is fried in oil, but you get the same results just toasting without the oil. Love your recipes ♥️

Hi Mary. I avoided the rice at Chilis for years because I assumed it have chicken stock in it. Then someone in one of the comments told me it was vegan. I went on Chilis website and sure enough, it says right on the website that its not made with animal products. Of course I am sure it made with oil, but you have to take a win where you can get it, right? HA! So this version of it is really nice since its oil free. Thanks so much for watching.

Sherri, I rinsed my rice also in the video, so my rice was wet when it hit the pan. It will dry out and toast in that skillet. Thanks so much for watching.

This looks good but I’m with Tim I like the extras in my rice. However, I’m going to try this recipe. The rice at Arribas is my absolute favorite though.

I dont know if brown rice would toast, but for brown rice use 2 cups of water for every 1 cup of rice. bring to boil and then simmer for 45 minutes. Thanks so much for watching.

I used to work at Chili's! I never knew their rice was vegan, that is definitely good to know! Love how you toasted the rice for that nutty flavor. Seems like you won't miss the oil with this flavorful side dish!
I will definitely be making this soon. You know what I would like to see you try and make vegan/oil-free? A dish from Ruby Tuesday's called "Sonora Pasta" OMG, it is SOOOO good! Weird though, they took it off the menu many years ago but if you are lucky enough to get an older chef that knows the dish, they can still make it for you. I won't ask for it now though as I basically make my own food at home. I hope to see you try this for us... Lee

@@PlantBasedDads Awesome! I have the ingredients already, I am just worried about the cheeses and the sausage. I have a decent vegan sausage recipe but not sweet Italian sausage. Plus they àlso seem to fall apart and be more like hamburger than a tightly packed tubular shaped sausage. Oh, and usually a little dry. Also, another famous Italian dish I'd like to see is a Rigatoni Abruzzi, mmmmm, sooo good!.
If you want a pretty good quick Mexican Rice, just add Pace Picante (1 Cup?) to Trader Joe's Frozen 3-Minute Microwave White Jasmine Rice. (or whatever rice) You can also add some Onion and Garlic powder. Maybe some dried onion flakes. Nutritional Yeast? I like to add sliced or chopped black olives, too. If you add just a pinch of Cayenne Pepper to your cooking food it really brings out the flavors in your food. It shouldn't make it spicy hot or be able to taste it.
Hello. That sounds good. I wanted this rice recipe to be a replica of Restaurant Style Mexican Rice so this is more of a traditional recipe, with the toasting of the rice and all that. i've never had chili's..but this rice looks good! can you do a brown rice version in the instant pot? I've been trying to do a spanish brown rice with no success on the water ratio..help? lol
I just made a Spanish brown rice in the IP tonight. I have a recipe for it in the filed section on the FB group. I changed it up a little bit. If you are in the FB group, PM me and ill message you the recipe for the IP Spanish rice with the changes I just tried tonight. It was really yummy.
You could do that for sure, but the bullion cant be replaced with veggie stock, because it wont taste the same. You can probably replace the bouillon with "Better than Bouillon" but not sure how the sodium content is on that. Thanks so much for watching.
This looks like a terrific recipe but the sodium is off the chart, I'm afraid. That Not Chick'n bouillon is 1600 mg of sodium per cube! I'll have to look for one with lower sodium. Update: Edwards and Sons does make a low sodium Not Chick'n bouillon that is only 250 mg of sodium per cube! Now I can try this recipe!
Anyone else tried this and found the rice just not quite done? I dont know if i simply need to increase the cooking liquid or did I do something else wrong? I never lifted the lid to stir for the entire 20 minutes.
Yes it did absorb. I thought it looked just perfect, but when I tasted it, I realized the problem. I will give it another try. Really want this to work! Thank you so much for your reply!
Your altitude may be different than mine. If all the water absorbed and it was still not soft, then add more water to it. Even if its too much water, you can always strain it out before you eat it. Let me know what happens.
Hey Joey! Super excited to report that I remade the recipe tonight and it worked out perfectly. Exact same procedure and measurements. I know what the problem was. The rice I used the first time was just plain old long grain white rice I had on hand. I went and bought a new bag of basmati rice and that was the ticket. Maybe others will be like, "well duh!" I don't know, but I thought rice was rice. Thank you for the recipe!
Nurse practitioner here- thank you for not recommending tons of vitamins and supplements. Such a fraud! In a plant based diet you get all the vitamins and minerals you need except B12 which absolutely should be supplemented or taken in by fortified foods such as fortified nutritional yeast. Don’t waste money on supplements!

Lots of restaurants add peas and carrots too. Just toss in a hand full from the freezer during the last 10 minute steam!

Iodine comes from ocean plants and many of us have no idea. I didn't know that until about a year ago.

I dont know if brown rice would toast, but for brown rice use 2 cups of water for every 1 cup of rice. bring to boil and then simmer for 45 minutes. Thanks so much for watching.

I will definitely be making this soon. You know what I would like to see you try and make vegan/oil-free? A dish from Ruby Tuesday's called "Sonora Pasta" OMG, it is SOOOO good! Weird though, they took it off the menu many years ago but if you are lucky enough to get an older chef that knows the dish, they can still make it for you. I won't ask for it now though as I basically make my own food at home. I hope to see you try this for us...

@@PlantBasedDads Awesome! I have the ingredients already, I am just worried about the cheeses and the sausage. I have a decent vegan sausage recipe but not sweet Italian sausage. Plus they àlso seem to fall apart and be more like hamburger than a tightly packed tubular shaped sausage. Oh, and usually a little dry.
Also, another famous Italian dish I'd like to see is a Rigatoni Abruzzi, mmmmm, sooo good!.
Is it possible to make this with brown rice…difference in time cooking, like your different timing between white rice vs brown rice in the InstantPot?
Yes brown rice is fine. Brown rice in the IP is 22 minutes on manual HP where as white rice is 3 minutes so adjust the cooking time for sure.

If you want a pretty good quick Mexican Rice, just add Pace Picante (1 Cup?) to Trader Joe's Frozen 3-Minute Microwave White Jasmine Rice. (or whatever rice)
You can also add some Onion and Garlic powder. Maybe some dried onion flakes. Nutritional Yeast? I like to add sliced or chopped black olives, too.
If you add just a pinch of Cayenne Pepper to your cooking food it really brings out the flavors in your food. It shouldn't make it spicy hot or be able to taste it.
Hello. That sounds good. I wanted this rice recipe to be a replica of Restaurant Style Mexican Rice so this is more of a traditional recipe, with the toasting of the rice and all that. But really, any rice is good rice as far as I am concerned. I love it however it is cooked. Thanks so much for watching.

It should work with Better than Bullion. Anything with some substance should be fine. It just wont work with liquid veggie broth

How much sodium is in the bouillon?. My husband is on a low sodium diet.
You could replace the water with unsalted vegetable broth/stock. I think the brand Kitchen Basics has unsalted veg stock sold in 32 oz cartons.
You could do that for sure, but the bullion cant be replaced with veggie stock, because it wont taste the same. You can probably replace the bouillon with "Better than Bouillon" but not sure how the sodium content is on that. Thanks so much for watching.

This looks like a terrific recipe but the sodium is off the chart, I'm afraid. That Not Chick'n bouillon is 1600 mg of sodium per cube! I'll have to look for one with lower sodium. Update: Edwards and Sons does make a low sodium Not Chick'n bouillon that is only 250 mg of sodium per cube! Now I can try this recipe!
Patti, Someone tried it with Better Than Bouillon too and said it was good.
Anyone else tried this and found the rice just not quite done? I dont know if i simply need to increase the cooking liquid or did I do something else wrong? I never lifted the lid to stir for the entire 20 minutes.

Yes it did absorb. I thought it looked just perfect, but when I tasted it, I realized the problem. I will give it another try. Really want this to work! Thank you so much for your reply!
Your altitude may be different than mine. If all the water absorbed and it was still not soft, then add more water to it. Even if its too much water, you can always strain it out before you eat it. Let me know what happens.
Hey Joey! Super excited to report that I remade the recipe tonight and it worked out perfectly. Exact same procedure and measurements. I know what the problem was. The rice I used the first time was just plain old long grain white rice I had on hand. I went and bought a new bag of basmati rice and that was the ticket. Maybe others will be like, "well duh!" I don't know, but I thought rice was rice.

Nurse practitioner here- thank you for not recommending tons of vitamins and supplements. Such a fraud! In a plant based diet you get all the vitamins and minerals you need except B12 which absolutely should be supplemented or taken in by fortified foods such as fortified nutritional yeast. Don’t waste money on supplements!
