    Yellow Onions 2 chopped
    Jalapeños 5 cored, chopped
    Zucchini 2 large, chopped
    Roma Tomatoes 5 cored, diced
    Salt Free Tomato Paste 6 oz
    Cumin 2 tbsp
    Oregano 1 tbsp
    Limes 3 juiced
    Cilantro 2 bunches chopped
    1. Chop onions, jalapeños and sautee.
    2. Chop zuchinnis and add to sautéing onions & jalapeños.
    3. Core and chop Roma tomatoes and add to sautéing veg. Don’t sauté tomatoes too long.
    4. Add tomato paste to the mix.
    5. Add spices. Add some water if you need to to break up the tomato paste. Stir.
    6. Turn off heat.
    7. Add veggies to a big bowl.
    8. Add juice from 3 limes and chopped cilantro.
    9. Add pre-cooked brown rice and mix.

    First of all, I am so grateful to you for the work you do! I absolutely love your channel. You inspire me to cook, eat and live well. Second, in your interview with Dr. Furhman, I was impressed by you allowing him to speak without interjecting every 30 seconds with your thoughts. It was a very informative interview and helped me immensely. Third, I made this Mexican rice last night. I didn’t think it would be very “wow” due to the humbleness of ingredients, BUT WOW! It is so freagin’ delicious! I cut your recipe in half and definitely cut back on jalapeños. As a Texan, I was impressed by how many you used. You are right about the zucchini. It adds a nice crunch to softer rice. I also added half bunch of chopped kale because I ran out of zucchini. I addd a can of pinto beans like you suggested. I topped mine with your cheese sauce which is a monument to itself. This Mexican rice is so good I had it for breakfast.

    I love your videos and recipes: TIP: you can deseed jalapenos much faster with a spoon. After you cut them in half just take the end of the spoon (the spoon end) and scoop them out in one motion

    Hi, I tried your Oat Clusters for ONE Banana. I added 2 Tbls. of unsweetened cocoa and 2 Tbls. of Jiffy Peanut Butter.. They came out beautiful and very tasty. I will make them again.

    Gosh, I know what you mean! I kept trying to make Spanish rice with brown rice and just couldn't get all the rice cooked well enough or dry enough. Was SUPER happy to learn that boiling your rice "like pasta" removes up to 60% of the arsenic that may be in the rice. I hear that two kinds of white rice with the lowest amount of arsenic are basmati rice from India and (white) jasmine rice from Thailand. I prefer brown, but it doesn't keep as well for long-term storage. If I need to eat something like white rice it helps me a LOT if I will first stir a couple spoons of psyllium husks into a full glass of water and drink it before eating the rice or other food without enough fiber (or even just after eating it, though that is less preferable especially since you have GOT to drink plenty of water when you take it or the whole idea will backfire).

    Hi, I lived in Tucson for 30 years so I've been trying to come up with Mexican style recipes since I started eating a plant based diet last year. I make your pico and this looks amazing. I swear I could smell it through the computer so, it's tomorrow's dinner. Thanks so much.

    I just made this and I LOVE IT!!! YES! The zucchini is so good in bigger chunks and make sure you don't overcook it. Absolutely delicious

    So glad I found your channel and this recipe :) Literally, I was going to try to make Spanish-style rice on my own today (I used to make the boxed one, but I started eating no SOS-style diet 2 weeks ago). Amazing to discover how much sugar and salt are added to our food. Breaking the vegan junk food habit was much easier then I thought. Also, thank you for the canning videos; I am now making my own broths and canning salt-free tomatoes :):):) I am driving my husband crazy, but he'll get over it :) with love and much gratitude, Renee :)

    I love that, whatever this is a new game! You got to do things differently when you want to use brown rice. It's better for you so it's worth it.

    It took me a year to figure out how to get brown rice to turn out well in the instant pot. It was either waaaay too firm or mush. So happy to have rice back in my life!

    I love it. Do the same, but I often splurge and use black rice (the so-called "forbidden rice). Tasty, healthy and allegedly lower in arsenic.

      rainguynw Yes, that's why I started purchasing only the rice from Lotus Foods. I get there Forbidden and Red rice. They're excellent. I believe their rice has no or a trace amount.

    I freeze extra rice. A sandwich bag holds one cup nicely. I put the bags into a freezer bag.

      i like to buy a small bottle of the fancy wild rice blends and mix it into 2 lbs of brown rice so the whole 2lbs of brown rice taste fancy! LOL

      The way I make brown rice (or any kind of rice) is I throw all the ingredients together in the rice cooker, including red bell peppers, cilantro, onions and spices. It turns out great every time, too. :)

    2 yellow onions, 4 cups of brown rice (dry?/cooked?), 3 or 4 jalapeños -seeds removed, 1 "monster" zucchini, 1-2 cups of diced tomatoes, 6oz tomato paste, 2 tsp cumin, 2 tsp oregano, 2 limes, 2 bunches cilantro . top with pico

    Thats amazing recipe. I tried making with brown rice and it was so miserable. I am sure making tomorrow and i will add zukkini too with onions and bellpeppers. Can you also share the chopping board that u use for chopping. Thanks

    I'm not too familiar with brown rice. Does it get hard after being refrigerated like white rice does? If so, how do you handle that without the use of a microwave? Also, I love your videos/channel!!!!

      Thank you! Give brown a shot. I can’t say for sure but I think that hardness thing is less of an issue with brown. I don’t recall mine ever getting hard but I’ll pay better attention next time.

      If you can find brown basmati rice, as we were able to, go for it! It smells and tastes nutty and stores very well.

    This is a great recipe! We made it tonight and were inspired to take 4 containersful to our Scrabble club as some counterbalance the unhealthy snacks we knew they'd be nibbling all evening... with the caveat they'd probably want to add salt. So, in a nutshell, we chose your dish to influence our friends.
    We're on fire with our desire to save everybody-- and have actually gotten a few motivated, some to go plant based, some to investigate. We roll contrary to the usual advice for people in our stage of development.

    hun you at your normal speed are PERFECT, for someone like me with short attention speed. but at this extra speed, man i just wanna see you come clean my house! lol
