  • Stuffed Mushrooms
    A great low carb hors d'oeuvre and always the first to go at a party.
    Ingredients:
    8 ounces XL large white mushrooms
    2 TBSP butter
    1 TBSP onion minced
    1 clove garlic minced
    3 strips cooked bacon finely chopped
    1 TBSP crushed pork rinds
    2 TBSP parmesan cheese grated
    Directions:
    Preheat the oven to 350°
    Stem and core the mushrooms leaving hollowed out mushroom caps.
    Chop the stems into very small pieces.
    Saute the onion, garlic and mushroom pieces in butter.
    Stir in the bacon and pork rinds.
    Place the mushroom caps on a parchment paper lined baking tray.
    Stuff/heap the mushroom caps with the mixture.
    Mound the top with parmesan cheese.
    Add a fresh grind of pepper to taste.
    Bake on a tray until cooked, about 15 minutes.
    Cool for a couple of minutes before serving. The cheese will set up.
    Notes:
    Cremini mushrooms are a tasty mushroom if you can find them large enough.
