    Fun fact: the process shown in the video is pretty similar to how Parmigiano Reggiano is made, but you can clearly see it @2:55 @3:48 @4:10 and @5:00 that it is in fact Grana Padano. This cheese is very similar, but not the same.

      It’s the same thing.. if a recipe ask for Parmesan and you only have grana padano you can substitute it for that cheese.. and they make the cheese the same way so basically it’s the same shit

      It's just a regional thing. Parmiggiano regiano is only from a certain region. Grana Padano can also be from other regions.

    I worked in a Regional Italian restaurant for years and Parmigiano Reggiano whole wheels where used. I can tell you certain dairy's where better than others. Some wheels had a saltiness to the cheese, where others had a more sweet pastoral overtone with no saltiness these IMHO!!! where beyond phenomenal.

    Paramesan cheese has certain bacteria on it that give it that smell.
    At times, your feet can smell like Paramesan cheese due to the same bacteria on your feet.

      The stomachs of unweaned calves produce rennet, which coagulates milk. There's more demand for rennet than there are calves, so vegetable rennet is also used.

      Unfortunately vegetable rennet is known to cause off flavors in cheeses with long ripening times like parmesan. So while many cheesemakers use it, anybody going for authenticity won't.

      depends on what kind of vegetarian you are. definitely not vegan. caesar dressing and pad thai are also not vegetarian since they contain fish but i see ignorant veg-heads order this stuff all the time. knowing whats in your food is important.

      Had to give more than a "thumbs up" here. Grana Padano is delicious, and, frankly, most of my Italian friends use it more than Parmesan "proper" just because it is cheaper. I have had, however, some Granas that were superior to Parmas (though it is not a given). Still, it stupidly annoys me that this video calls it Parmesan, when it is clearly marked otherwise. It is as though they assume that English speakers will think "Grana Padano" is a brand.

      Grana Padano it's a different but similiar kind of cheese produced in another area of Italy the Po Valley while like the name state Parmesan is produced in Parma which is in another region of Italy (Emiglia Romagna). So dude you can either pick Grana Padano and Parmesan. Generally speaking both are very good but Parmesan is of a higher quality and ofc more expensive

      Both Grana Padano and Parmigiano Reggiano have their origins in the middle ages, when a similar cheese was made throughout northern Italy, with different cities (Lodi, Piacenza, Mantova, Parma, Reggio Emilia....) producing basically the same cheese with little variations.
      The difference between Grana Padano and Parmigiano Reggiano was definitely fixed in 1951, when cheesemaker from all Europe met in Stresa (Italy) to regulate the different names and productions methods of the various cheese types.
      There are strict rules that the cheesemakers have to follow when producing these types of cheese: starting from cows' feeding to the cheeses' ageing.

      parmesan is a general name for more types.. they just differ in what the cows eat or in case of Gran Moravia if they use vegetable enzyme (said to be more stable and cheaper as its made on purpose) or the calf stomach enzyme as the old tradition says

    This is not real parmigiano reggiano. It's "Grana padano", which is another sort of parmesan cheese : It's cheaper than parmigiano reggiano (the real parmesan), matures for a shorter period of time, and is less tasty.

      it's also made from different cows from different pastures so the milk tastes different. It's cheaper because the region that is allowed to make it is much bigger than the region that can make Parmigiano. Excellent for more mild dishes where you don't want the cheese to overpower.

    The first cheese shown was Parmigiano Reggiano but the one at the end is a Grana Padano. Similar in size, shape and taste. But not the same thing.

    Parmesan cheese means that it is a shabby imitation. Parmigiano Reggiano is the name of the king of cheeses.
    Get to know the difference to avoid being ripped off.

      Cruse rennet. rennet. enzyme from the stomach of calves.
      has the purpose of curdling, ie separate the casein (an important milk protein) and fat in the form of soft dough from the remaining liquid part of said serum.

      Grana Padano is a DOP too.
      It is produced with a disciplinary though less severe than Parmigiano Reggiano.

    This is GRANA PADANO not PARMESAN or "Parmigiano Reggiano" It comes form different places. The REAL Parmesan "Parmigiano Reggiano" come from Parma and Reggio Emilia. THe GRANA PADANO ( that you see in the movie) comes from PIANURA PADANA. Are similar but not the same!!!!

    It wasn't even real parmigiano reggiano. It was grana padano?? I lived in Italy for a while and I know that grana and parmigiana are very different cheeses.

      +MrFrankylll ...There is also the Grana Padano with flavor "intense" as long as it matured. The Grana Padano and Parmigiano Reggiano are equivalently good. More months of seasoning, the more they cost! And good also "Trentingrana" (original Alpine Dolomites, Trentino, but is hard to find is not widespread) Bye

      Price is depending how long time cheese stay to rest in storage buildings. If you buy Parmigiano or Grana Padano with the same age there isn't too much price difference. Before to buy this kind of cheese you must read label how long time seasoned (months).

      do you know they wash their hands BEFORE with products that kill bacteria? cmmon! there are really strict rules of cleanliness for producing grana padano and parmigiano reggiano for companies, due the fact they are Dop ( protected denomination of origin, a high guarantee of quality), then italian rules are strictier than Eupean ones (for exemple in italy you cannot produce cheese with powdered milk) , and european rules strictier than US for producing food! if you buy really italian cheese and not the fake ones (and there are maaaany of them in supermarkets with italian flag and "parmesan" written on it but there is not the sign of DOP and they ARE NOT italian parmigiano reggiano or grana padano) you will be absolutely safe!

    I don't like how they put their hands in the food… I am pretty sure machines would do the job better. Humans should be cleaning and repairing machines, instead…
    The future is in us making machines that will make things better than we could ever do!

      I'm sure their hands are completely clean and it's not the milk you're getting as the result anyway, it's the cheese which is at the bottom. A machine can never do some things better than man, including art. Some consider cheese making an art.

    Not necessarily a lower grade cheese, but another type of Italian hard cheese. Both parmiggiano reggiano and grana padano have a DOP quality assurance (Denominazione de Origine Protetta), so they both pretty good.
