While it can basically be made anywhere, the roots of this cheese lie in the British county of Cheddar, from which it derives its name. So, what defines the original Cheddar?     Having grown up on North American cheddar, on a trip to Somerset I was astonished at how good and flavourful real farm house cheddar is.

    Extra mature cheddar cheese is my favourite. It’s my go to cheese when I’m making many different dishes and snacks that involves cheese. It melts and gets crispy and is full of flavour. 🧀

    I have not found a cheddar cheese made in the U.S. that comes even close to traditional British or Irish cheddar. The amazing grasses that the cows eat make a huge difference. I just cannot buy American cheddar for eating straight up after trying the British and Irish cheddars.
    In the U.S. it is mostly grain fed and does not have that smooth rich flavor. Maybe there is a good grass fed cheddar in the U.S. but i have not found it yet.

    Cheddar is wonderful. But I've never tasted Stilton. I smirk how the lady slams all other cheese makers around the world, as if Wisconsin USA is rubbish.

    Cheddar should be protected, some cheddars are awful.

      I agree, its just sad
      I'm french and I love english cheese also, especially blue cheese such as Stilton.
      Quality cheddar is fantastic, but when I went to study in Canada I was shocked to see what was sold as "cheddar" there, I'm glad mist french cheese are protected

      West Country Cheddar is protected by PDO status, so you can search for it and lookout for the red and gold PDO status seal.

      Like imagine if the other cheeses need to be like "North regional lancasterian farm cheese" to be protected

    I don't like any imported cheese that tastes like nuts. That's a European thing.

      Well good for you if you find a cheese that "tastes like nuts" don't bother eating it but when it comes to the complex flavours and aromas of excellent artisan cheese they are worth every penny. Also it's not a European thing to just literally say "it tastes like nuts" and leave it at that.
