Actually you're exactly right because I did a journalism video project when I was at university and we interviewed dairy farmers and they hated cheese haha. They only really ate it to test quality.

I doubt anyone gets to smell any ripened cheese in that factory for any prolonged period of time. They mainly get exposed to milk and curds which have a faint pleasant smell.

I save articles on all sorts of subjects, but I was unable to find it that way either. All I have is a memory, at the moment. Thinking back, I have to ask if I misread it, but I distinctly remember having to reread the article because I thought vocal fry is so annoying....sooo yeah.

having made cheese by hand in the 70's here in nz, i can attest to the physicality of the process. we had three 1000 gallon baths which produced 3000lb of cheese. 80% of people who started working with us quit within a week, as it was to much for them. but hand made cheese is so much better than factory cheese as each step only progresses when its ready rather than not letting it hold up the assembly line.

I've been to the Wensleydale cheese factory, I went there in the 90s and had a really good time. They have a shop that sells some of their cheeses, it was really interesting to see the manufacture process through the glass wall. I quite like eating blue cheese!
The way they make cheese is simple. I love it.

For all who want to know how cheese is made...
Heat milk(not upto boiling point)...mix some water and lemon juice(or vinegar+water) and add it into boiling milk....within a minute milk will start crumbling keep on heating until water and cheese gets seperated...immediately strain it and pour some cold icy water to cool it down and wash the lemony flavour keep the cheese in strainer for atleast 30 minutes....
And your cheese is ready😋😋
It is basically called cottage cheese. In India we call it paneer. Please try a recipe of shahi paneer once (search shahi paneer recipe on youtube). You will love it....Shahi paneer is favorite dish of each and every person of India...we love it and you will too.

Sandra Qwer trust me, she’d definitely know if she was lactose intolerant. It doesn’t just show up undetected. And also doesn’t just randomly happen, you’d have it since being a baby.
Also, depending on pasteurizing processes, a lot of cheeses don’t have enough lactose to give you a reaction. True cheddar cheese is actually naturally lactose free. Creamier cheeses tend to contain a higher lactose index, but won’t give you as back of a reaction that milk or ice cream would give.
I’ve been lactose intolerant obviously my whole life. I was even intolerant to my mothers milk. I can still have cheese with little to no issues. Now being allergic to dairy, is a completely different story. My sister is allergic to dairy, which means absolutely nothing that contains milk, lactose free or not.
unr1 there are some cases, yes. But in most cases it happens at a young age, and you end up growing out of it. Of course it is different for everyone. But you wouldn’t go to the doctor with no symptoms, and get diagnosed. You’d definitely know something isn’t right.
She'll keep some lactaid pills on her and she'll be good. No one with lactose intolerance actually gives up cheese. We just work around it or accept the consequences.

Story time: so i live in washington (born and raised) and beechers Mac and cheese is probably my favorite thing ever. Going down to pike place and getting a cup of Mac and cheese from beechers is awesome!
