How to Make Parmesan Cheese (Italian Hard Cheese) at Home

- Опубликовано: 17 сен 2017
- The Parmigiano Reggiano or Parmesan cheese as it is called in English is considered to be among the top cheeses by cheese connoisseurs. It is usually made using skimmed or partially skimmed unpasteurised milk however in this instance, I have used partially skimmed pasteurised/homogenised milk as that was all I had available.
Cheeses imitating Parmigiano Reggiano (like this version I've made) are called as Parmesan or Italian hard cheese by producers to avoid legal issues. Parmigiano Reggiano cheese is named after the provinces in which it is made, namely Provinces of Parma, Reggio Emilia, Modena, Bologna and Mantua.
Ingredients
14 L (14 qts) Partially Skimmed Cows Milk 2% fat
3/8th teaspoon Thermophilic Culture
1/8th teaspoon Lipase in 2 Tbspn water
3.75 ml (3/4 tspn) Calcium Chloride in 1/4 cup water
3.75 ml (3/4 tspn) Liquid Rennet in 1/4 cup water

here are some angry Italian comments I found, in case anyone else is looking for them. i only included the ones that seemed legit, some seemed fake.
"wrong and disrespectful to 🇮🇹!"
"go on making "parmesan" but, trust me, you are farest from PARMIGIANO and trust me once more, parmesan and parmigiano are absolutely not the same thing"
"Quella e una caciotta no parmigiano!!!! Datti all ippica 😂😂😂"
"Formaggio forse lo è, ma parmigiano no 😂"
"I am here for the meme but first 30 seconds already wrong region. Parmigiano reggiano is from emilia-romagna, not Lombardia. Now I am pissed and my day is ruined"
"It is not from LOMBARDIA area! The name show that come from Parma and Reggio that is in another region! For this reason only the product coming from that area could use the name Parmigiano, because what the cows are eating, the air, and other things make the difference"
"NO NO NO NO NO !!!cos'è questo ??? pensi di poter fare la parmigiana?? il parmezan è prodotto solo in italia e solo in regioni molto specifiche che sono strettamente controllate e sì, sono qui anche a causa del meme e sì, sono anche arrabbiato ora che ho trovato questo vergognoso formaggio finto"
""Parmigiano REGGIANO is from LOMBARDY" ma cosa sta dicendo questo trappolaio? 😂"
"Sir, parmigiano reggiano is not from lombardy but, as the name says from reggio Emilia, located in Emilia romagna. From lombardy comes the grana padano. Big difference in price, flavour, and of course price."
"Non è così che si fa il vero parmigiano! Cavernicolo Australiano!"
"I’m Italian and I have did a lot of cheese at home, your method it’s a little bit “creative” … also it’s a kind of “crime” to discard the siero which is the sort of water that results of the formation of the cagliata, it is because you can use it to do the ricotta "
"Sono effettivamente italiano e sono arrabbiato!"
another guy claimed to have found these:
"Obviously you dont know much about making pesto either.........you really do not know much about the Italian culinary culture if you think pesto is made with parmesan cheese....look up the real recipe on how to make pesto......."
"As the name says Parmigiano Reggiano is from the area around Parma and Reggio Emilia that ARE NOT in Lombardi region. The Region name is Emilia Romagna and Lombardi doesn't mean anythig the Region name is Lombardia and they don't make Parmigiano Reggiano. I'm from Reggio Emilia BTW"
"You can only call it genuine if it comes from the certain area in Italy!"
"this is fake. is impossible make """""parmesan""""" like italian . only in Emilia Romagna there are right becteria"
"Tra l altro cazzo vuol dire parmesan?!"
"The parmesan is plastic shit"
also on archived versions of the page i found:
"That's not parnesan!!!NON É PARMIGIANO CAZZO!"
"my grandmother left to find you and when it does, she will grate your unfaithful soul"
""Parmigiano reggiano from lombardia area" absolutely wrong and The neapolitan tarantella in background comfirms this guy does not know what he talking about. Don't you dare call that thing "PARMIGIANO". Next video how to build a Ferrari with parts of an old Ford and still call it "Ferrari"."

I was promised angry Italians but found a kind of Bob Ross of cheese. This is so relaxing, thank you
You're welcome
Simply because he delete all the message...
@@sivaavantidigrandiswitch-- He has NOT deleted those messages! Find the comment under this video from five years ago by @MoeBran, which at this point has almost 300 replies. There are at least a couple of angry Italians in that subthread who have made multiple comments, protesting the fact this cheese wasn't made in that specific region of Italy. None of them seem to have noticed that he is calling this "Parmesan style" cheese and that he has NOT claimed that it is authentic Parmesan from Italy.
@@TakenTook PDOs are a legal fiction anyway. A cheese made with the same ingredients and techniques will be identical regardless of where it is made. If they were aging them in some specific cave with a unique and hard to replicate combination of microflora, then a regional designation would have some merit. But that's not the case for parmesan.
@@Kidneyjoe42 -- Agreed overall, although sometimes the specific strain(s) of microorganisms used to create certain kinds of cheese can vary a bit from region to region, and have a little bit of an effect on the taste. But overall, it's just marketing gimmicks and protection of one's "turf" for financial reasons. Kind of like the French claiming they're the only ones who can make champagne

I know we’re all here from the meme, but this man has gone under the radar as an incredible educator for 12 years. Let’s get his channel to 1 million subs
What meme? I'm here because I love cheese, G
@@ganggang363It was a tweet. Someone had tweeted that Corona (idk if they were talking about the beer or the virus) led them down a RUclips rabbit hole where they eventually found this guy making parmesan and they said all the comments were angry Italians telling him to go fuck himself
@@ganggang363 There was a meme about angry italiens insulting Gavin in the comments, because strict italiens can't stand when "true Parmesan" isn't made in italy
Yes!! This guy is so underrated
As an Italian, there is nothing here to be angry about: he doesn't pretend to reproduce in his home the authentic Parmigiano as it's made in Italy, but "only" a "parmesan style cheese".
So maximum respect for him, who manages to produce homemade cheeses: a very difficult skill that requires a lot of precision.
Of course, I appreciate his job
Gavin Webber, I'm italian and jealous of the traditions, but i appreciate your work, really. ☺️
Exactly! It's a fromage homage, not a quasi queso.
Hdnd
The only minor comment I would make is that Parmigiano doesn't come from Lombardy but Emilia-Romagna (around Parma, as the name would suggest)
And this is why RUclips needs an "oldest first" comment option
If I remember correctly, they DID have that option but removed it
@@firstoffproductions1462 correct. They used to have her option. Nothing good ever lasts.

Hi, Gavin, beside being Italian I am also from the Parma region, and as a young boy I’ve help in a Parmigiano cheese factory. I am very impress with the cheese making process you have shown in the video. In a small scale it represents, right down to the temperatures used, on what is happening in the factory. I cannot understand some of the negative comments you received, some individuals are just idiots. Of course, yours is not THE Parmigiano Reggiano, but so what? You have made a cheese that resembles the original and I am also sure it tastes good. On being precise, the making of Parmigiano cheese is controlled all the way to the actual feed the cattle get and with favoring the evening milking vs morning milking. So again, good job on what you have done, and opinionated people....shame on you.
Finally, a voice of reason! Thank you, Mauricio, I appreciate your kind and wise words.
I am also from Parma and i completely agree with Mauricio.
Keep IT up the good work and do not listen to bad people!!!
Mauricio: Thank you for your comments. It is interesting that the feed and milking time is so carefully controlled. Small details make big differences in cheese flavor and quality!!
Thank you for your words of wisdom.
parma.....
I'm not Italian, but I made spaghetti last week and I approve of this video.
I think that qualifies you as being at least 90% Italian.
I eatza the pizza 🤌🏼
as a non Italian who has Italian friends i can say that it doesnt make you italian but you are allowed to pass judgement on others pasta
It's amazing to me that we all did the same thing. We saw the post, thought to ourselves "well I have to see this for myself," and got here only to realize any angry Italians that are here are completely drowned out by people looking for angry Italians.

He had so many foreign haters that he got popular off people trying to find said haters. Amazing.

I am Italian and I've been angry since the last 3 years. Glad to see new people here 😊
LOL
I don't think people realize, the more comments complaining about the lack of angry Italian comments, the algorithm just shows you more comments complaining about the lack of Italians.
Just for those who may wonder, the reason for the lower fat content in the milk is because the cheese is matured for a long time. If the milk is too high in fat the fat will become rancid during the maturation process.
A majority of us came here for angry Italians
Is there a version with higher fat that is matured for less time?
Good parmesan is also lactose free.
That meme is the most effective ad I've seen in a while, haha
Fr
Am lactose intolerant but came here to be called a curd nerd, was not disappointed. 10/10 experience. Would recommend.
I'm lactoseintolerant as well. You can eat parmesan. Basically everything that is buttercheese/young gouda or older is safe to eat 👍
Gavin you're about to get a sudden spike in comments and subscribers for being a wholesome distraction in a time of crisis. Also people looking for angry Italian comments.
Did not the need the personal attack at the end lmfao I subscribed too this must be fun to watch
Look I'm Italian and I wanted to leave an angry comment just for the sake of the meme, but this man is so wholesome I cannot bring myself to do it. Also, even if Parmigiano Reggiano is unique and irreplaceable, this man is trying to replicate it at home, I believe this not only takes skills but also knowledge.
But if you buy cheese, make sure to buy Parmigiano Reggiano and not "parmesan cheese" to support an endangered industry that produces one of the most amazing cheeses in the world.
Ottimo lavoro bel, continua così, un bacio dall'Italia!
Is parmigiano reggiano actually an endangered product?
I wasn't aware of that. I thought it's doing quite well despite all the knock offs.
@@hogasandrei2631 can you explain to me how it is endangered?
From my understanding the fact that there are a lot of fakes of something doesn't make it endangered.
There are a lot of fake Gucci belts, sunglasses and purses but Gucci is not an endangered brand.
Are there actually dairies producing parmigiano regiano that had to shut down production or are close to shutting down, because they can't compete with the fakes?
Or am I misunderstanding the word endangered? Do you have a different definition?
I understand there are some elaborate fakes that try to imitate DOP parmigiano reggiano and even fake the logos and the identification on the rinds of the cheese, and I can see how this is taking a cut out of the margins of the industry.
But I feel like the majority of fake "parmesan" doesnt even compete in the same market. Somebody who buys some inexpensive hard cheese to sprinkle over their pasta is probably not going to buy a +30€ DOP cheese instead for his pasta if the fakes are gone. They'll just use a different cheese. Same for restaurants and frozen food etc. Companies using a cheap cheese instead of a quality one will pick a different cheap cheese if no fakes are available. They are not suddenly going to make their cheap products much more expensive by using an authentic cheese.
Maybe I'm wrong. It like to know more about it.
@@SamsonGuest I think it's probably because more people see the cheaper, more low quality option and nobody wants to spend more on a cheese when they can get the "same" product for less
This is wholesome
So what you meant to say is "i know what i have to do,but i dont know if i have the strength to do it"

Here you have my comment: Parmesan cheese is not Parmigiano Reggiano. I know you cannot have the real thing so you resort to diy. I pity you but I understand. Just don’t say it’s the same thing. Or else... remember the horse head scene in The Godfather 😂😂😂
Plot twist: he created himself that post and got us all in his plan 🗿
He got me
Came as an angry Italian, stayed as a hungry Italian.
Da vero
Can you please explain the meme to me, why are the Italians angry?
@@saipulivarthi every time there are videos about making italian food some italians get angry and tell you how exactly you did it wrong compared to their mum. Idk why but it almost seems to be a national sport, they are really passionate about it
@@5head860hahaha got it, you explained it very well.. Are you a teacher by profession?
@@saipulivarthiit’s not just that. The real reason is some guy tweeted about his Corona rabbit hole, curd nerds, and angry Italians and it went viral
I, for one, didn't come for angry Italians in the comments. I came to hear him say "G'day curd nerds" and I was NOT disappointed. Subscribed so fast, I want to keep hearing that in the future.
I came here from the youtube rabbit hole meme. The one about an Australian calling us curds and the Italians bitching. Bravo my friend. You get a sub
FUCK YES!!!!!!! This quarentine is turning up to be educational as fuck
I too, came here because of that meme...only to find I've watched this and a few other videos before. Gavin is my cheese man, lol
As Batman once said, “Where are theyyy?”
for all yall wondering.. between the 5years ago mark and towards the first comment 6 years ago there are some italian comments bitching about him "making it wrong" and also for calling it the italian name. but its ok. mans good with his content. i likw it
We'd find the angry Italians easier if you people stopped commenting telling people to stop commenting about how they can't find the angry Italians.
Ironic that you’re commenting to stop people from commenting that people who tell others to stop commenting about how other people are commenting about angry Italians
Took a dna test, found out I’m Italian. I’m here to be angry. Very satisfying video.
Where are my promised italians
Ah yes, glad to see my fellow brethren gathered around after reading the same post
Thanks!
Thank you so much!
That quite a process it worth in the end
