Just finished making Spaghetti alla Carbonara with this cheese. Added eggs, pancetta and pepper. Suddenly I am back in Rome at the Campo de Fiori. Eating where else? The Carbonara restaurant, of course. // I love the way that Italians know that there is right way to do things -- and they stick to it, in the worlds of art, music, architecture, fashion, industrial design and food.
