Mutton Masala Karahi / Mutton Curry INGREDIENTS:
1 KG Mutton on the bone
5 small/medium onions finely sliced
1 can of chopped tinned tomatoes
5 Tablespoons oil
1 jug of water
1 Teaspoon each of:
salt
chilli powder
turmeric powder
coriander powder
garam masala
1 frozen piece of garlic
1 frozen piece ginger
1 Black cardamom
3 Green cardamom
2 thumb sized sticks of cinnamon
Freshly chopped coriander
4 green bullet chillies (optional)

Always preferred mutton to lamb, as by the time the meat is cooked the whole dish has had plenty of time for the flavours to penetrate the meat. Love this recipe. It would be interesting to see how you prepare your frozen ginger/garlic cubes.
Exactly George, it just has a lot longer for the flavours to develop. I'm afraid I use supermarket bought frozen ginger/garlic cubes to make my life a lil less hectic than it already is with a toddler! 🤷♀️

You can leave the green cardamoms out of you wish. Oh and the pot is brilliant. Cast iron, heavy as well but really roomy especially for those who have ceramic hobs as I cant find large enough pots to cook in! Go treat yourself! 🤗😀

I would recommend the lamb Chop Karahi first purely as it takes less time to cook than the mutton one but both taste amazing. 😊

Also, I cooked the sweet rice on Friday which was absolutely delicious, I don't normally like asian sweet dishes so halved the quantity, silly me it was amazing and regretted halving it!!! ❤️ My hubby got emotional as it was just like how his mum used to make it! Salaam , which part of mutton do you buy ? I bought leg and it takes ages to tenderize in a pan, sometimes the meat doesn't even soften . Is shoulder best ?
No this was leg meat. Mutton leg or shoulder will always take long to cook but the flavour will be awesome.
Can i just use lamb instead as mutton takes far too long. Plus no pressure cooker

How much oil do you use ??? And what type of oil do you recommend
Around 5/6 tablespoons of oil was used and any oil will work well other than extra Virgin olive oil. Rapeseed oil works well too. Avoid strongly flavoured oils like mustard etc
Does this method work for lamb but just less cooking time?
I was going to ask the same, I would rather use lamb so wanted to know how this would work. Looks so nice 👍
Hi there Zara, thanks for your comment! Absolutely! Although I do have a Lamb Chop Karahi Recipe which may be of interest to you as the cooking times vary as you already are aware. You can use pretty much any cut of meat, so long as they're all the same size peices (for even cooking)

I have tried this for the second time, iwas just thinking about it, there is no ground Cumin in the recipe which go so nice with lamb/mutton.
Would this make it Even Tastier indeed 😘😋😋😋😋😋😋
So Rodney, the reason why I didn't add ground cumin powder is because my garam masala that I add right at the end to finish the dish off is heavy cumin based. So it doesn't need additional cumin powder. I hope that helps.

Halve all the quantity of ingredients lovely. Otherwise you'll end up with lots of meat and hardly any masala.

Onions first - then remove
Fry Whole spices (in remaining oil)
Brown meat with G&G
Add back in the onions
Then carry on ?
My curry journey and other recipes seem to add in multiple stages of ingredients and cooking them off separately. BTW I prefer yours as it’s much much easier!!!
Thanks Graeme, glad your finding the videos easy to follow. In my opinion, the end products taste would still be the same regardless! There's different methods and techniques people use which are neither right nor wrong. They've seen people around them do it and have picked up on that. I've always seen my mum and grandmother cook like this, so this is how I cook! I think as long as the end product tastes good, it really doesn't matter what method was used to create it I try to make things easy as possible were I can. Hope that helps! 😊
Hi - going to cook this tonight for tomorrow. Would you recommend cooking until the bhuna stage then cooling / fridge- then doing the rest tomorrow. Just thought it could be too dry when heating back up,sticking/ burning etc?
Hi Graeme, you could absolutely cook it to the bhuna stage which will mean you've less work to do on it tomorrow by adding more water to it but I normally cook my dishes only halfway if I'm going to be finishing it off the next day, to be precise it would be @5.30seconds into the video which will cook the meat down enough for it not to go off sitting in the fridge as that's mainly my concern and also will give you enough time for it to cool down to refrigerate. Hope that helps! 😊
Absolutely perfect timing - literally just added the water and the rest of the ingredients to the first 20min stage. Where you said 5:30 that was exactly where I was going to cook to. Well it was really delicious - I didn’t have large chunks of lamb or mutton as was supermarket bought so mutton on the bone will be on the shopping list for next week.
I could taste all the spices and it was balanced lovely. Thanks again for the notes and comments and the recipe! I do cook a lot of BIR with a base sauce and mixed spices etc. Which I really enjoy but this is so much easier and has all the flavour. Thanks again 😀

Hey can I boil the mutton first and then start the cooking process? Will it make the process quicker? ( will it taste any different) xx
You could if you wanted too but I wouldn't recommend as you'd lose all the flavour that would otherwise go into the end product! It won't make the cooking times any quicker as mutton still requires time to cook unless you're using a pressure cooker! Hope that helps! 😊

Hi, I find boiling meat first then bhooning, leaves a funny smell to the meat. Shamza's way is better, hence frying onions first etc. Only thing I prefer to do is after frying onions, I add ginger garlic and fry it with the meat for a few mins before adding other ingredients .
Can I make this with lamb shoulder pieces instead??
Hi Ros A, yes absolutely. Just remember lamb cooking times will differ from mutton. It needs less time cooking but other than that everything remains the same.
Throughout cooking what satting was the gas cooker(hob)
Hi Sums Ragu, thank you for your comment. My hob is a ceramic hob not gas so it was on a medium heat setting of 6! So for a gas hob it would be a moderate gas flame halfway. Hope that helps! 😊
Shamza I found this amazing spice brand called Fudco in Sainsburys. Their kashmiri chilli powder gives the most amazing deep red colour to curries. I have tried a few brands that have the kashmiri powder but this is the best in my opinion. I know some people like to know how to get that lovely deep red colour in curries. It was recommended and used by a lady on instagram. Also I got the kasauri methi by the same brand and you can tell the difference in quality ( has none of those annoying little hard sticks in ) also the smell is nicer. Sorry if im raving about it, but thought id mention as i like to share my tips xxx
Ahh thanks for the tip Shazi, I shall see if I can get my hands on the Kashmiri chilli powder, although I normally get a nice colour to my curries anyway as I tend to use tinned tomatoes rather than fresh. Regarding kasoori meethi, for me nothing comes close to Supremes Kasoori Meethi, been using that for years and it smells lovely! I've tried other brands in between, but that's always been a winner.
